Cooking steps

    First you need to thoroughly clean and wash fresh nettles, then dry well. After that it needs to be finely chopped. using a knife or blender.

    Then you need to wash and finely chop the onion. Next, put chopped onion in a well-heated pan and a little fry it for a few minutes. Then add the prepared nettle to the onion and continue cook over low heat for 7-10 minutes.

    Now put the mixture of nettle and onion in a separate container and, when the filling has cooled, break the egg into it. It will also need to be all a little salt and pepper.

    After that, you need to cook or buy in advance an ordinary unleavened dough, which you need roll thin enough and use a cup to divide it into circles.

    Add quite a lot of filling to the resulting mugs and tightly close the edges of each kurze in the form of a pigtail.

    Then we put a pot of salted water to heat up and, bringing the water to a boil, throw our kurze into the pan. Stir them immediately so that they do not stick together, and when they float to the top, cook for 7-10 minutes.

    Ready kurze with nettles is usually served with walnut sauce ( mixture of walnuts with a little vegetable oil) or with ordinary sour cream.

Ingredients

For cooking, we will need the following products:

  • Dumpling dough - 300-400 gr;
  • Nettle - 10-12 young branches, 25-30 cm long;
  • Onion - 2 pcs. medium size;
  • Sunflower oil - for frying onions;
  • Minced meat - 100 gr;
  • Salt, pepper - to taste;
  • Flour for making dumplings.

Cooking

I made 2 types of dumplings - one with meat, the other vegetarian, just with nettles.

  1. Pour boiling water over the nettle so that the branches do not burn your hands, close the container with grass with a lid and leave for 15 minutes.
  2. We cut the nettle branches into small pieces. Then boil them in salted water for about 10-12 minutes and recline the colander so that the water is completely glass.
  3. Cut the onion into cubes and fry it in vegetable oil until golden brown.
  4. Mix nettle and fried onion, divide into 2 parts and add minced meat to one of the parts. Salt and pepper the filling to taste.
  5. We sculpt our dumplings and boil them for 7-15 minutes until cooked in boiling water.

When the dumplings are ready, you need to get them with a slotted spoon and decant the water. Add a little butter and mix everything well. You don't have to add butter, but I think it makes the dish tastier.

I also make garlic sauce for this dish. I mix 2 tbsp. sour cream and mayonnaise, add a small finely chopped clove of garlic.

Allergy sufferers and people who have diseases in which the use of nettle is contraindicated should be careful with this dish.

Boil 150 g of washed nettle in boiling salted water and put it on a sieve to make the water glass. Grind 50 g of walnuts, crush them with salt, add finely chopped onion and chopped greens (do not forget about cilantro, which is beloved by Georgian cuisine). Now all that remains is to mix it well, salt, pepper.

Put 200 g of washed young nettles in boiling water for 2-3 minutes, then put them on a sieve or colander to drain the water. Pass through a meat grinder, add 1-2 tbsp. l. fat and simmer for 10-15 minutes. Cut the carrot into cubes, chop the onion and also stew in fat, adding finely chopped green onions. In a boiling broth or water (about 2-2.5 liters), put the prepared nettles, browned vegetables and cook for 20-25 minutes. 10 minutes before the end of cooking, add 50 g of chopped leaves of fresh or canned sorrel, bay leaf, pepper and white sauce - from flour fried in butter, diluted with sour cream or milk. Such cabbage soup can be seasoned with lemon juice or citric acid. And it is customary to serve these cabbage soup with a hard-boiled egg, sour cream and herbs.

In a boiling broth (2 l), put 25 g of finely chopped and fried onions, 1 tbsp. l. pre-cooked rice (washed and boiled for 2-3 minutes). Bring the broth to a boil and add a couple of coarsely chopped potatoes. 15 minutes before the end of cooking, put well-washed and chopped young nettles. And when serving, sprinkle the soup with parsley.

Dagestan style dumplings with nettle

Knead the dough for dumplings as usual and let it lie for 30-40 minutes, then roll it into a thin layer 1-2 mm thick. Mix 300 g of finely chopped young nettle leaves and 50 g of chopped onion and fry for 1-2 tbsp. l. oils. Blind dumplings and cook as usual. Serve with butter or sour cream.

Georgian scrambled eggs with nettle

Boil 150 g of nettle in boiling salted water, set aside so that the water is glass. In a preheated frying pan, sauté a little, 30 grams, onions in oil and put boiled nettles on it. Add finely chopped cilantro, salt, mix well and simmer. Then pour in 2 eggs, lightly fry, and bring to readiness in the oven.

Drink from carrot, tomato and nettle juice with milk.

Beat half a glass of tomato, a glass of carrot and a tablespoon of nettle juice, gradually adding 4-5 tbsp. fresh milk or curdled milk. Add salt and pepper to taste. Serve chilled.

3 art. l. finely chopped greens (nettle, parsley, dill, dandelion, blackcurrant and barberry leaves, green onions) mix with 4 cups of kefir or yogurt and beat well. Salt to taste. Drink cold.
