How did the cutlets appear?

It is believed that cutlets were first prepared in France. The first cutlets were not at all similar to their successors and were simply meat baked on the bone. Over time, they began to separate the bone from the fillet and fry it in breading. Then they began to chop the fillets into pieces and make meat balls from this kind of minced meat. And only in Russia, just over a century ago, they began to prepare cutlets in the form in which we are accustomed to seeing them on our tables. Many culinary specialists are inclined to believe that the birthplace of cutlets is the countries of East Asia, which prepared minced meat in their various interpretations. Nevertheless, every housewife needs to learn how to cook cutlets.

Delicious cutlets recipe

The difference between cutlets and other similar dishes is the white bread included in the minced meat. To make the cutlets fluffy and satisfying, you need to take minced meat and bread in equal proportions.

The tenderness of the finished dish is ensured, and for this the finished minced meat must be well “beaten”, i.e. pick it up with your hand and throw it into a bowl for kneading the minced meat.

Ingredients:

  • 600 g pork meat
  • 0.5 white loaf
  • 1 large onion
  • 1 egg
  • 1 glass of milk
  • vegetable oil for greasing the pan
  • pepper and salt to taste
  • clove of garlic optional.

Cooking method:

1. Soak the loaf in warm milk until completely softened.

2. Cut the meat into portions.

3. Meat, loaf, peeled onion and, if desired, garlic through a meat grinder. Add salt and pepper, add the egg and knead everything thoroughly until a homogeneous consistency is formed.

4. Make small cutlets of the desired shape from the prepared minced meat - oblong or round. Place these unique meat pies on a baking sheet, previously greased with a small amount of vegetable oil.

5. The cutlets are baked in the oven at 220 degrees for about 40 minutes (you can turn them over for 20 minutes on each side).

Another way to cook cutlets in the oven is to fry them lightly in a frying pan so that the minced meat does not fall apart, and then put the cutlets in a cauldron and add a small amount of water. Cover with a lid and simmer in the oven for about 20 minutes. After this, pour sour cream over the cutlets in the cauldron and simmer them under it for another 20 minutes. This will give the cutlets additional softness and tenderness. But you need to eat such cutlets within 24 hours so that the dish does not turn sour under the influence of lactic acid.

When serving, cutlets are often sprinkled with chopped herbs. For the sake of experimentation, chopped herbs can be added to the minced meat before starting to cook the cutlets. The result is a very unusual dish, but extremely aromatic.

Preparing minced meat for cutlets

We start preparing the cutlets by preparing the minced meat. Just don’t use store-bought stuff; it’s better to make minced meat yourself, with your own hands.

To prepare minced meat you need:

  1. Grind the meat in a meat grinder;
  2. Prepare the stuffing for the minced meat.

Stuffing for minced meat

  • Grind the potatoes using a grater or a knife.
  • Press the garlic through a press (you can also use a garlic press).
  • Finely chop the onion.
  • Briefly soak the bread crumb in milk. After a while, squeeze out the bread and put it in the minced meat.
  • Mix the chopped products with twisted meat. Add 4 tbsp to it. mayonnaise, as well as pepper and salt to taste.

Mix the meat and filling thoroughly by hand.

When the minced meat is ready, we begin sculpting. First, we wet our hands in water, after which we take the minced meat with our hands and make cutlets from it.

Roll the formed circles in breadcrumbs, then transfer them to a baking sheet.

How to cook cutlets in the oven

Before placing the baking sheet with meat cutlets in the oven, preheat it. After this, place the baking sheet in the oven and let the meat bake thoroughly.

As soon as the cutlets are ready, they can be served as an additional dish to any side dish. But the combination of baked cutlets with potatoes and raw vegetables is especially tasty.

As you can see, baking cutlets does not involve any complicated steps. But if you do not yet consider yourself an experienced cook, then use the video recipe, which shows all the stages of preparing the dish.

How to make cutlets juicy in the oven

It is not always possible to make the cutlets juicy, even if you strictly adhere to the recipe technology. Such small failures are not caused by a lack of culinary skills, but by ignorance of the simple but important nuances of preparing minced meat.

Rule No. 1: combine several types of meat in minced meat

In fact, much of the success of a meat dish depends on the correct selection and preparation of minced meat. For example, if you choose only minced beef for homemade cutlets, you risk preparing dry meat, and by focusing on pork, you can create a dish that is too fatty.

Therefore, it is best to combine 2 of the above-mentioned meat varieties in one minced meat. Then the chances of preparing juicy, tender cutlets increase significantly.

Sometimes housewives replace beef with chicken. This makes it possible to get an even more delicate product that will literally melt in your mouth. The ideal ratio of proportions is 50:50, i.e. one half of the minced meat must be beef (or chicken), and the other half must be pork.

Rule No. 2: thoroughly beat the minced meat with your hands

The finished cutlets cannot turn out soft if the minced meat itself is not “flexible” and pliable enough. There is an opinion among culinary experts that good minced meat can only be obtained when it is well kneaded by hand.

Making a “knead” is simple; there are several simple methods for this, the implementation of which does not require long explanations, in the form of a step-by-step recipe with photos.

Method one: double twisting

If you don’t want to knead the meat with your hands, you can simply twist it twice. This way we can quickly and easily achieve a soft minced meat consistency.

Method two: hand squeeze

It is best to process meat by hand. For example, you can pass the minced meat through your fingers several times, or you can simply throw it forcefully onto a wooden board for several minutes.

Rule No. 3: dilute minced meat with water

To prevent the cutlets from being dry, be sure to add a little hot water (or milk) to the minced meat. 2-3 tablespoons will be enough, the main thing is that the minced meat ends up being moderately watery.

This will give the finished cutlets juiciness.

How to make fluffy cutlets

When the cutlets are juicy and plump, you immediately want to throw them into your mouth. They are so attractive with their shapes and aromas. But it’s not easy to make cutlets so appetizing.

In order for the cutlets to turn out really fluffy, it is important not only to knead the minced meat correctly, but you also need to add special ingredients that are directly responsible for the fluffiness. These special products include white bread and buns. Mostly crumb is used, but you can also add bread crust, if it is, of course, not too stale.

The amount of baked goods that are placed in the minced meat is taken at the rate of 1/3 of the bread from the total amount of meat. So, for example, if 1 kg of meat is used for cooking, then there should be approximately 300 grams of bread in the minced meat.

Before placing the bread, be sure to soak it in milk (or water) for 15-20 minutes, after which we knead the crumb with our hands, or beat it with a blender.

How to get soft cutlets

Cutlets cannot be called very tasty if they turn out to be hard and “heavy”. To give the cutlets the desired softness and airiness, you need to put a simple product in the minced meat that is found in every home - an egg.

  • It is necessary to use only yolks (no more than 2-3 pieces per 1 kg of meat).
  • It is better not to use whites for making cutlets.
  • When the minced meat is completely ready, it must be put in the refrigerator for 10-15 minutes. This will turn the minced meat into pliable raw material, from which you can easily make soft, fluffy cutlets.

How to choose the optimal temperature for baking

The degree in the oven is another factor that decisively influences the final result of cooking. To get juicy, aromatic and incredibly tender cutlets, you need to set the oven to the correct temperature.

Cutlets should be cooked in the oven at 180-200°C. First, you need to bring the temperature in the oven to this level and only after that you can put a baking sheet with cutlets in it.

It is important not to make a mistake with the temperature. After all, at a high temperature the cutlets will simply fry, and at a low temperature they will remain raw. The middle of the cutlets always takes longer to bake than the edges, so if the temperature is insufficient, the dish will not be cooked enough.

How many minutes to bake cutlets in the oven

The entire process of preparing homemade cutlets takes about an hour. Of this time, baking takes 30 minutes. The first 15 are considered basic. They allow the meat to lightly bake and brown.

After 15 minutes, the baking sheet is removed from the oven and ½ cup of boiling water is poured onto it. If none of those who will eat your cutlets suffer from gastrointestinal diseases, then you can also add butter to the meat. To do this, put no more than ¼ tsp on each cutlet. oils

Place the pan back into the preheated oven for 15 minutes. During this time, the dish will be fully prepared and can be served.

Many people remember the mouth-watering and very tasty cutlets prepared by skilled chefs in Soviet canteens. Times have passed, but the nostalgia for tender, slightly browned cutlets in gravy remains.

If you really want to remember the old days and cook something similar at home, then in addition to the basic cooking tips, use additional culinary recommendations.

  1. When placing the cutlets on a baking sheet, do not forget to cover the bottom with paper so that the meat does not burn.
  2. You need to simmer the cutlets on the middle level of the oven. This is an ideal place for roasting meat.
  3. It is advisable to make meat circles of medium diameter, approximately 4-5 cm. This will allow them to bake well and look aesthetically beautiful when finished on a plate.

Is it possible to replace the ingredients in cutlets?

It doesn’t always happen that all the ingredients needed for cooking are at hand. Therefore, the question of replacing some ingredients often arises.

What can be replaced in a dish and with what:

  • The bread crumb can be easily replaced with croutons, crackers and croutons. If you soak them according to the same principle as white bread, then the cutlets will turn out no worse than usual;
  • You can dip formed cutlets not only in flour. Breadcrumbs and semolina are also suitable for this;
  • If you don’t have onions, use a bunch of regular green onions.

How many calories are in baked cutlets?

The advantage of eating oven-baked cutlets compared to fried ones is their lower calorie content. Considering that the meat is not fried in oil, it is less fatty, which means it contains fewer calories.

However, calories depend not only on the cooking method, but also on the meat from which the cutlets are prepared.

The calorie table below shows the most popular types of meat (from which homemade cutlets are most often made in the oven) with the number of calories they contain per 100 g of product.
