Turkey cutlets are very tasty and dietary. They are prepared quite quickly, and the addition of cheese and mushrooms gives them a delicious taste. You can use any topping. A wonderful dinner for a casual table, served with a variety of side dishes and vegetables.

Ingredients

To prepare turkey cutlets with mushrooms you will need:

minced turkey - 700 g;

egg - 1 pc.;

mushrooms (I have champignons) - 300 g;

cheese - 100 g;

bun - 2 small pieces;

onion - 2 pcs. (1 onion for filling);

salt and pepper - to taste;

mayonnaise - 1 tbsp. l.;

breadcrumbs - 6 tbsp. l.;

vegetable oil for frying.

Cooking steps

Finely chop one peeled onion and add to the minced turkey together with the egg.

Soak the crumb of the roll in water (in milk), squeeze out excess liquid and add to the minced meat along with mayonnaise, salt and black pepper. Mix well.

To prepare the filling, chop the peeled onion and clean mushrooms very finely. Fry in vegetable oil until cooked through for 15 minutes or more. Cool the finished filling.

From minced turkey, make small cakes the size of a palm, put a little mushroom stuffing and a small piece of cheese in the center. Pinch the edges and form into small patties.

Roll the turkey cutlets in breadcrumbs and fry on both sides in vegetable oil until golden brown.

To prepare such cutlets, we take the following products: minced turkey, dill, champignons (I have sterilized), white loaf (bread), garlic, salt, pepper and refined sunflower oil for frying.

Put the minced turkey in a bowl.

Soak the white loaf in cold water or milk. Squeeze and put in minced meat.

We clean the garlic, wash it and grate it with small holes. Add to minced meat and loaf.

Season with salt and pepper. You can add any dry herbs. Beat the minced meat with a blender until smooth or pass through a meat grinder.

Chop the mushrooms very finely. I had canned ones. Fresh ones need to be cut and lightly fried so that there is no excess liquid in the minced meat.

Add chopped dill.

Mix all mince ingredients thoroughly.

We form cutlets from minced meat and fry in a pan with sunflower oil on both sides.

  • turkey fillet - 600 g;
  • onion - 1 pc.;
  • natural yogurt - 3 tbsp. spoons;
  • flour - 2 tbsp. spoon;
  • eggs - 2 pcs.;
  • breadcrumbs, salt, pepper.

Cooking

Finely chop the turkey fillet with a knife and mix with finely chopped onions. Add yogurt, one egg, flour, salt and pepper. From the finished, chopped minced meat, we form cutlets 1.5-2 centimeters thick with our hands. In a separate bowl, beat the remaining egg, dip the cutlet in it, and then sprinkle it with breadcrumbs. Fry breaded cutlets in a large amount of vegetable oil until golden brown. Serve with sour cream sauce or ketchup.

Turkey cutlets with cheese and mushrooms

Bored classic cutlets can be diversified by adding stuffing. This recipe combines tender turkey cutlets with mushrooms and cheese.

Ingredients:

  • minced turkey fillet - 600 g;
  • champignons - 150 g;
  • hard cheese - 150 g;
  • white bread - 2 slices;
  • cream - 150 ml;
  • egg - 1 pc.;
  • dill - 1 bunch;
  • salt, pepper, breadcrumbs.

Cooking

First, finely chop the mushrooms and fry them in vegetable oil until tender, seasoning with salt and pepper. Mix the cooled mushrooms with grated cheese and chopped dill. Soften the pulp of white bread in cream and add to minced meat. We also drive in an egg there and flavor our minced meat with a good pinch of salt. Now we get to the fun part - knocking out the minced meat. We beat the minced meat with our fists, throw it on the table or in a bowl, in a word, we do anything to soften the minced meat itself and, consequently, future cutlets. It is best to do this by first dividing the minced meat into portions, so as not to stain yourself or the entire kitchen space. We knead a portion of the beaten minced meat into a cake, put the filling in the center and form a cutlet. According to the worked out scheme, we coat the cutlets in egg and breadcrumbs, and then fry until golden brown in vegetable oil. Turkey fillet cutlets go well with stewed vegetables or mashed potatoes.

Ingredients:

  • Turkey meat (I have a thigh) - 500g
  • Oyster mushrooms - 300 g
  • Bulb - 1 pc.
  • Chicken egg - 1 pc.
  • Cream 33-35% - 50 ml
  • White bread - 3 slices (I have a baguette)
  • Grated nutmeg - pinch
  • Basil - 2 sprigs
  • Olive oil (can be vegetable)
  • Butter - a small piece
  • Breadcrumbs
  • Freshly ground pepper

Cooking method:

1. Mix the egg with the cream, lightly beat with a fork and soak the white bread.

2. Wash the oyster mushrooms and cut into cubes with a side of 0.5-0.7 cm. Do not chop the mushrooms too much, they should be felt in cutlets. Cut the onion as small as possible and fry over medium heat until golden brown.

3. Add chopped mushrooms to the onion. On high heat, wait until the mushroom liquid has completely evaporated, then remove the fire to medium, or below medium, add a piece of butter and, stirring, fry the onion with mushrooms for about 5 minutes. Remove from heat, add nutmeg, salt and freshly ground pepper to taste.

4. Scroll the turkey meat and the bread soaked in the egg-cream mixture in a meat grinder. Knead the minced meat until smooth. Don't forget the salt and pepper. Add cooled mushrooms and chopped basil leaves. Stir the mince again. At this stage, the minced meat can be tightened with cling film and put in the refrigerator until cooked.

5. Form small cutlets (I like in the form of round washers) and roll in breadcrumbs. Fry in vegetable oil, medium heat (you can not completely cover the pan with a lid) until golden brown. Then turn over and fry on the other side.

6. Cutlets can be frozen miraculously - this will save you a lot in the near future, when there is no time, but you need to feed your family with something) To do this, sprinkle the board with breadcrumbs, lay out the raw cutlets and put them in the freezer.
