Of course, many will say that this is very harmful - after all, cooking potato pie involves a large amount of oil. I won't argue, it's harmful. But I don’t encourage you to cook it several times every day. And sometimes you really want something just like that – fried and unhealthy! So why not treat yourself occasionally? Moreover, the family will definitely not mind: children will like potato pie as an addition to homemade hamburgers, and the stronger half of humanity will see it as an excellent snack for beer.

So take my recipe, in which I will tell you how to cut potato pie, and how much oil is needed for it, and what is the best way to fry it, and at what stage to add spices - in general, all the subtleties and secrets of preparing this delicious dish .

Ingredients:

  • potatoes – 3-4 pcs;

How to cook potato pie:

We peel the potatoes.

Now we need to either slice the potatoes very, very, very thinly or grate them for Korean carrots. You can also use a food processor - as a rule, they have a suitable attachment.

We wash the chopped potatoes several times to get rid of starch.

Blot with a paper towel to remove moisture.

To prepare potato pie, it is best to use a small saucepan rather than a frying pan. The fact is that potatoes must be fried completely in oil, and frying pans, as a rule, are quite large in diameter, so the oil consumption will be too high. But if you have a fairly large volume of potatoes, then, of course, you can fry the potato pie in a frying pan. Pour the oil so that its height is 2-3 cm. Heat the oil well over high heat and only then put the potatoes into it. Do not add too much at once; it is better to fry the potatoes in several batches.

Do not reduce the heat, stir the potatoes periodically. At first she will behave a little strangely - it will seem that she is becoming soft. Don't be afraid, this is normal. Within a couple of minutes it will begin to brown and become hard. This is where you need to be very careful and make sure that the potatoes don’t burn. After all, it will take you three minutes to prepare, maximum four.

It is very convenient to remove the potatoes with a slotted spoon so as not to pour out excess oil.

Place the potatoes again on paper towels to remove the oil.

And only after that we salt and pepper the potato pie. I also like to add sweet paprika to it, but this is a matter of taste. You can sprinkle with basil, Provençal herbs, dried garlic - basically, whatever you want.

The homeland of potatoes is distant South America, where you can still easily find wild plants of this crop. The introduction of potatoes into cultivation (first through the exploitation of wild plants) began approximately 9-7 thousand years ago in the territory of present-day Bolivia. The Indians not only ate potatoes, but also worshiped them, considering them to be quite animate creatures.

Potatoes came to Europe in the second half of the 16th century, but at first they were mistaken for an ornamental plant, and a poisonous one at that. An agronomist from France, Antoine-Auguste Parmentier, irrevocably and forever proved that potatoes have good taste and nutritional properties. It was thanks to him that the penetration of potatoes into the French provinces, and then into other regions, began. Even during the life of the agronomist Parmentier, this made it possible to overcome the frequent famine in France and even eliminate scurvy. That is why grateful descendants named several dishes in honor of Parmentier, naturally made from potatoes.

However, potato pie does not belong to these dishes. This recipe is considered American, but nothing is really known about the history of its origin. But potato pie is mentioned in the old Soviet film “Girls” - remember, Tosya listed the dishes that can be prepared from potatoes? She didn’t forget about the potato pie! However, let's return to the history of the vegetable itself. The first constant mention of potatoes is found in Spanish documents that described the conquest of the territories of South America. Legend has it that the founder of domestic potato growing was Abram Hannibal, who began growing potatoes in beds, and not in flower beds, like most.

Another candidate for this title is Andrei Bolotov, who noted that even in the worst years “I received 3-4 quarters from each quad.” For the first time, measures to actively popularize potatoes at the state level were taken under Empress Catherine II.   1. Each potato must be thoroughly washed and peeled. It is better to take large potatoes.
  2. This is our potato. It should be large because we will have to cut it very thin on a special grater - in this case it is not very convenient with small potatoes.

  3. Here, in fact, is the grater on which we will grate the potatoes for today’s dish. If you don’t have such a unit, a grater for Korean carrots is quite suitable. But if there is none, then you will have to cut thin slices of potatoes (the thickness of a matchstick) using a knife. The main thing is that the knife is sharp.

  4. This is what grated potatoes look like. If desired, you can transfer it to kitchen paper towels and dry it, but this is not particularly necessary. Moreover, peeled and cut potatoes can quickly turn brown.

We cut the potatoes into very thin strips; a Korean grater is ideal for this. The result is long and thin chips. This is what we need. Wash potato chips to remove excess starch. Drain the water and cover with napkins so that drops of water are absorbed into the paper.




Season the potatoes with spices, salt and add paprika and various types of pepper. You will get very aromatic and tasty potatoes.
