My dears, today I propose to prepare the fastest airy donuts that you - one hundred percent - have not tried yet. Their taste is simply amazing: soft, airy, with a delicate crispy crust - you won’t even notice how quickly and easily you prepare them. Some may argue that donuts are a hassle. But no! Because we will prepare our donuts with kefir, and not with yeast. Let's go to the kitchen!

Ingredients:

  • kefir 2.5% - 250 milliliters;
  • butter - 30 grams;
  • egg - 1 piece;
  • vegetable oil (refined) - 3-4 tablespoons;
  • sugar - 4-5 tablespoons;
  • flour - 390 grams;
  • salt - 1 pinch;
  • soda - 0.5 teaspoon;
  • powdered sugar.

The fastest airy donuts. Step by step recipe

  1. Break the egg into the bowl in which we will make the donut dough and beat with a whisk. You can also beat the egg with a mixer: as you wish.
  2. Add all the sugar at once and continue beating until smooth. The sugar in the egg will not completely dissolve, but will remain a thick mass. By the way, half of the sugar can be replaced with honey, taking two tablespoons of it - this is a matter of taste.
  3. Now it's time to add kefir. You don’t have to take fresh kefir: it’s very good if you keep the fermented milk product for 3-4 days.
  4. Pour in salt and soda. Mix everything.
  5. Melt the butter on the stove until liquid. Let it cool and only then add it to the dough. For example, I melt butter in the microwave. This is faster in terms of time, and it will not be as hot.
  6. Add the sifted flour to the dough a few spoons at a time, no need to pour it all at once. Flour is sold in different varieties and therefore some will require less according to the recipe, while others, on the contrary, will need more. Therefore, to make the donuts airy, it is better to add flour in portions.
  7. So, pour in flour and mix. Pour in again and mix the dough again. When you can no longer knead the dough with a whisk, pour a few tablespoons of flour onto the table and place the dough from the bowl on it.
  8. Knead the dough until smooth, but not too hard. Make a hole in the middle and add sunflower oil. Please note that we only use refined oil.
  9. Dip your hands into the oil and begin to stretch the dough around the edges and mix it in, then inside. A little secret: if we had added sunflower oil earlier, before adding flour, the dough would have been much denser and not so airy.
  10. When the dough stops sticking to your hands, and this will happen fairly quickly, it is ready. Using a knife, divide the dough into two equal parts. There is no need to sprinkle flour on the table for further preparation of donuts: otherwise the donuts will burn during frying.
  11. Roll out half the dough with a rolling pin: its width should not be more than one centimeter. You can cut out the donuts with a special mold, but if you don’t have one, then you can take an ordinary bowl and cut out the middle using a glass. The edges and middle of the mold that will come into contact with the dough must be greased with vegetable oil.
  12. We put the frying pan on the stove and pour sunflower oil into it: about a centimeter in height - and heat it up. Set the heat to below medium: at this temperature, the donuts will fry, not burn.
  13. Place the donuts in a frying pan and fry first on one side until golden brown, then on the other. You can turn them over using two forks: this will be more convenient.
  14. Let's prepare a large dish for the already prepared donuts and put several paper napkins on it so that after frying, the excess fat will be absorbed into the paper.
  15. We took the donuts out of the pan and started frying the next ones. Our amount of dough yielded 14 donuts, 8 cm in diameter.
  16. When the donuts are all fried, let them cool and then sprinkle with powdered sugar.

The delicious donuts that we prepared in almost 10 minutes are ready! You can serve these donuts with anything: tea, coffee, milk and even just soda - as you like and as you like. What we didn't know about donuts

Before you start making classic donuts, I suggest you read a few interesting facts about this delicacy.

  • The largest donut was created in the USA. The diameter of the donut was six meters, and the entire donut exceeded 3.5 tons. This culinary masterpiece was included in the Guinness Book of Records.
  • Donuts are so popular in New Zealand that they even erected a monument to this delicacy in this country. But not all local residents were delighted with this piece of architecture, believing that it spoils the landscape. And just two years later, the monument was burned by unknown vandals.
  • Donuts are considered an American delicacy, since it was the American company Dunkin’ Donat that created the international chain of coffee shops, which has spread to 33 countries around the world.

When I tried to make the world famous donuts myself, I was convinced that their recipe is really very simple. Now donuts are my family's favorite treat. I suggest you make sure of the simplicity of the recipe and try making fluffy donuts at home.

Recipe for making donuts at home

To make donuts airy and melted in your mouth, you need to properly prepare the yeast dough for donuts. You will succeed if you follow my recommendations. All tips are suggested by personal experience and tested in practice:

Like cooking anything, frying donuts requires some skill and experience. I'll give you some practical, useful tips that will help you make donuts the first time.

  • Ideally, donuts should be fried in a deep fryer. But if you don’t have one, a regular saucepan, saucepan or frying pan will do. with a thick bottom and high sides.
  • Be sure to heat the oil well, as if it is not cold enough, the donuts will absorb a lot of excess fat.
  • Don't skimp on vegetable oil. The liquid should completely cover the donuts so that they brown evenly.
  • Turn the donuts constantly while frying to ensure they turn smooth golden color.
  • If you don't have a paper towel in your kitchen, you can place the finished donuts in a sieve or colander. Excess fat must drain off.

How else to make donuts quickly and easily

The preparation of dough for donuts is practically the same in composition and quantity of ingredients. Options for preparing donuts differ only in the method of forming the donuts themselves.

Pour water into the milk and heat slightly. Pour sugar and yeast into a mixture of milk and water, stir, leave in a warm place for 15-20 minutes so that the yeast comes to life.

Then add eggs, salt, melted butter. Mix everything well. Add sifted flour in small portions and knead into a soft dough.

Sprinkle the work surface with flour, turn out the dough and knead it well, adding flour as necessary. The dough should be soft, elastic, but not too filled with flour. Cover the dough with a towel and leave for 1-2 hours, the dough should double in size.

Cover our future yeast donuts with a towel and leave for 30-40 minutes, they will increase in size.

Heat the vegetable oil well, dip the donuts into the deep fryer in small portions.

Remove the finished donuts with a slotted spoon and place on a paper towel to remove excess oil.

Cool the yeast donuts a little, then fill them with filling (I filled the donuts with filling using a pastry syringe).

Sprinkle with powdered sugar if desired. Airy, fluffy yeast donuts with filling will appeal to both children and adults. Very tasty!

In a slow cooker

Uniform heating of the oil can be ensured not only by a cast-iron frying pan inherited from your grandmother, but also by a modern kitchen assistant - a multicooker. Thus, this gadget becomes suitable for baking donuts.

Oil is poured into a multi-pan, following the same rules as when frying in a frying pan. The option that is suitable for this baking is “Roasting”. It is important to ensure that the oil has time to warm up sufficiently before adding the first portion.

In the oven

Although their oven-baked donuts are not as high in calories, most housewives prefer the first two baking methods, not knowing that these delicious rings can be prepared in the oven. To do this, the formed products are sent to bake at 180-200 degrees. Baking does not take long, 7-10 minutes, so as not to dry out the donuts.

For an authentic look, hot donuts are dipped in melted butter and rolled in powdered sugar. You can make donuts from any dough in the oven, but the tastiest are those baked with yeast.

Kefir recipe

Since the dough for kefir donuts is prepared very quickly, it is quite possible to enjoy the first portion of hot airy rings in powdered sugar within 15-20 minutes.

Products that will be needed:

  • 250 ml kefir of any fat content;
  • 1 selected chicken egg;
  • 100 g granulated sugar (or to taste);
  • 5 g soda;
  • 3 g salt;
  • 45 ml non-fragrance oil;
  • 400-450 g premium flour.

Steps for frying donuts:

  1. The combination of the dough components occurs in three stages and at each stage the mixture must be thoroughly mixed. First, put salt and sugar in a deep bowl (or pan), beat in an egg and pour in kefir.
  2. When the mass becomes homogeneous, it’s the turn of soda and vegetable oil. At the end the flour is sent. After kneading it, you will get a smooth, soft bun that sticks to your hands.
  3. Divide the dough into parts, roll out a flat cake from each one to one centimeter thick. Cut out rings of donut blanks. This can be done either with special cuttings or with improvised tools, for example, a glass or glass of a suitable size.
  4. Pour oil into a frying pan with a thick bottom until the level is approximately 1 cm and put on fire. When the oil is hot enough, fry the donuts on both sides. Serve sprinkled with powdered sugar.

With condensed milk

Delicious fluffy donuts are prepared from a minimum of ingredients using condensed milk, using:

  • 400 g condensed milk;
  • 4 chicken eggs;
  • 5 g soda;
  • 400 g flour.

Cooking method:

  1. Mix eggs with condensed milk, sift flour with soda. Then combine the dry and liquid ingredients. You should get a viscous mass, like thick sour cream.
  2. Using two teaspoons dipped in vegetable oil, scoop out the dough as for dumplings and place it in boiling vegetable oil. After frying, sprinkle the finished donuts on top with powdered sugar.

Curd donuts

For donuts made with cottage cheese dough you need to prepare:

  • 250 g cottage cheese;
  • 3 tablespoons eggs;
  • 100 g granulated sugar;
  • 250 g premium flour;
  • 4 g salt;
  • 5 g soda.

Work progress:

  1. Grind the cottage cheese through a sieve and mix with the remaining ingredients until smooth.
  2. Dust your hands with flour and form the resulting dough into balls. Their diameter should be equal to a walnut.
  3. Fry the curd donut balls in boiling vegetable oil. Decorate the baked goods with powdered sugar made from a mixture of vanilla and regular sugar.

Chocolate treat

Chocolate lovers will really like donuts according to the following recipe:

  • 300 ml natural yogurt without fillers;
  • 60 g butter;
  • 2 eggs and 1 yolk;
  • 180 g granulated sugar;
  • 50 g cocoa powder;
  • 4 g cinnamon;
  • 7 g baking powder;
  • 3 g salt;
  • 560 g wheat flour.

Sequence of actions:

  1. Mix all dry ingredients, except sugar, in a separate bowl. Beat the eggs and yolk into a fluffy mass along with sugar. Pour yogurt and melted butter alternately into the resulting eggnog.
  2. Next add the dry ingredient mixture. Wrap the well-kneaded dough in film and place in the refrigerator for one to two hours.
  3. Cut small pieces from the chilled dough. Roll each one to one centimeter thick and cut out donut rings. Fry them in hot vegetable oil on both sides.
  4. Place the finished products on parchment or paper towel, and after 1-2 minutes they can be dipped in a glaze of powdered sugar and water (milk or lemon juice) in a ratio of 8:1.

American style

Donuts can have different shapes (ball or flat cake), but American donuts are always made with a hole in the middle. The famous hole was cut out in 1847 with a pepper lid by sailor Hanson Gregory so that the dough would be well baked in the center.

For soft and long-lasting donuts you will need:

  • 250 ml milk;
  • 30 g pressed yeast;
  • 60 g sugar;
  • 5 g salt;
  • 2 yolks;
  • 40 g butter;
  • 10 g vanilla sugar;
  • 500 g flour.

How to make donuts the American way:

  1. We prepare the dough, but in a slightly unusual way. You need to immediately combine milk, sugar, salt, yolks, yeast and half the recipe amount of flour. Leave this mixture, covered with a damp towel, in a warm place until it doubles in volume.
  2. After this, knead the mass, pour melted butter into it, add vanilla sugar and the remaining flour. Mix well and let it double again.
  3. Form donuts from the ripened dough by cutting into circles 1-1.5 cm thick with a hole in the center. Let sit for 15-20 minutes in a warm place. And then everything is as usual - frying in vegetable oil.

Yeast donuts

No matter how many different dough recipes there are for donuts (with condensed milk, cottage cheese, kefir, etc.), baking with yeast will remain the most popular and favorite.

For which you will need:

  • 500 ml milk;
  • 100 ml of drinking water;
  • 11 g dry yeast;
  • 50 g sugar;
  • 125 g butter;
  • 2 eggs;
  • 5 g salt;
  • 800 g wheat flour.

Baking algorithm:

  1. Mix water and milk in one bowl. Heat the mixture a little and dissolve sugar and yeast in it. Leave for 15-20 minutes for the yeast to come to life and start working.
  2. After activating the yeast, add all the other ingredients to the dough and knead a soft dough, which is left to ripen in a warm place for 1-2 hours.
  3. Form circles 1 cm thick from the risen dough, cover them with a cotton towel and leave to proof for 40 minutes.
  4. Then fry the donuts in browned vegetable oil. Ready-made donuts can be filled with condensed milk, thick jam or cream using a pastry syringe.

The easiest and fastest recipe

Even when guests are on the doorstep and there is not a lot in the refrigerator, in this case you can prepare delicious donuts very quickly.

For them you need to take:

  • 2 eggs;
  • 60 ml sour cream;
  • 60 g sugar;
  • 5 g slaked soda;
  • flour.

Preparation:

  1. Mix all the ingredients and then add enough flour to bring the dough to the consistency of thick homemade sour cream.
  2. Scoop the dough with a tablespoon and place it in the boiling fryer. Fry, stirring to ensure even golden browning of the crust. The result will be perfectly round donuts.

From dough with milk

Those who have not managed to make friends with yeast dough can make delicious donuts from quick dough with milk.

The proportions of the ingredients will be as follows:

  • 150 ml milk;
  • 150 g sugar;
  • 2 eggs;
  • 30 g butter or vegetable oil;
  • 15 g baking powder for dough;
  • 5 g cinnamon optional;
  • 500 g flour.

Baking steps:

  1. Place all ingredients, except flour and baking powder, into a bowl for kneading the dough and mix, actively working with a whisk or turning on the mixer for a couple of minutes.
  2. After this, add the two remaining products and knead the dough, which sticks to your hands a little. Form it into donuts (rings with holes or just circles) and deep-fry.

Donut filling and glaze options

Although this pastry is good in itself, additional decoration makes it not only more beautiful, but also tastier, and many times more attractive in the eyes of those with a sweet tooth.

The easiest way to serve is to sprinkle the still hot products with powdered sugar. Why are they hot? This way the powder will melt a little and will stick better. To add flavor, you can mix the powder with vanilla or cinnamon, whichever you like best.

Donuts in the form of round balls or fluffy circles can be filled with various fillings, turning them into Berliners (filled donuts). As a filling, you can use ready-made products: chocolate-nut butter, boiled or regular condensed milk, all kinds of jams or marmalade. Or you can prepare the filling yourself using your favorite recipe for custard, lemon curd, cottage cheese or other cream.

Fill the finished products using a pastry syringe, or by making an incision on the side and filling the hole with the filling with a spoon.

Donut glaze is perhaps the most popular decoration that transforms baked goods into a truly festive treat. There are two popular ways to prepare it.

In the first case, powdered sugar is simply mixed with liquid. This can be regular drinking water, lemon milk or other juice. So, using beet or cherry juice you can prepare a beautiful pink glaze. To obtain a shiny and glossy finish, coat the donuts while they are hot.

For the second method, chocolate is used. It needs to be melted and diluted to the desired consistency with cream, milk or sour cream. Depending on what kind of chocolate is included in the glaze (black, milk or white), you can get a coating of different colors.

Glazed donuts can be additionally decorated with colorful sprinkles, sesame seeds or coconut flakes.

Donuts are baked goods that need to be eaten fresh, as over time they lose their taste. Store them for no more than a few days.


I’ve already made them 2 times - amazing! Soft, just airy, with a crispy crust! You can put any filling, I really liked it with fig jam, and it would also be delicious with fresh raspberries, grated with sugar, or with custard, like the author’s...

Dough:

  • Milk - 500 ml.
  • Eggs - 2 pcs.
  • Oil sl. or margarine - 125g.
  • Sugar - 2 tbsp. + 1 tsp.
  • Salt - 1.5 tsp.
  • Dry yeast - 11 gr. (bag)
  • Warm water - 0.5 tbsp.
  • Flour - so much so that the dough is not tight, but also does not stick to your hands.
(This quantity of products makes more than 40 donuts, I made half the norm)

Preparation: (I did this)

Mix milk and water, heat a little



Add all the sugar


...yeast



Stir and let the yeast come to life (15 minutes)


Now the yeast has “come to life”, that’s enough



Now add the egg



Butter (can be at room temperature, or melted)



Salt



Vanillin (it’s not in the recipe, but I like it better with it). Whisk everything thoroughly.



Now add flour gradually and mix with a spoon



Place the dough on the table and knead, knead, adding flour. The dough should not be very soft, but not clogged - medium. I used about 400 g of flour, as far as I remember, but I could be wrong...



Cover the dough with a towel and leave to rise for 1.5 hours until it doubles in size.



If it doubles in size after an hour, it’s enough and you can move on to making donuts.


Roll out the risen dough to a thickness of 1 cm.




cut out medium-sized circles (I made them with a glass and they turned out big, better than something like a shot glass...),



and let sit until they double in size.


Heat the vegetable oil well (so much so that the donuts float in the oil without touching the bottom) in a deep frying pan.




Fry them on both sides until golden brown.



Place finished donuts on napkins



While the next portion of donuts is being fried, fill the finished ones at the same time.
When fried, the donuts are left with a white stripe of dough that runs around the entire circumference. Make a cut on it with a sharp knife and put the filling

You don’t have to fill it, just sprinkle it with powdered sugar., it's delicious too
