  • 2 cups buckwheat;
  • 3 glasses of water;
  • two glasses of milk;
  • 200-300 grams of cottage cheese;
  • 4-5 tablespoons of sugar;
  • 4 eggs;
  • 4 tablespoons of ground wheat crumbs or breadcrumbs;
  • 4 tablespoons of sour cream;
  • 4 tablespoons butter;
  • salt to taste.

Cooking method:

  1. Buckwheat must be thoroughly washed so that no debris remains.
  2. Now pour the buckwheat into a saucepan and fill it with water.
  3. Place the pan on the fire, and when the water boils, turn it down. Cook the cereal for about 15 minutes, then pour in the milk and simmer the porridge for about another 10 minutes.
  4. Now remove the pan from the heat and cool the cooked buckwheat a little.
  5. While the porridge is cooling, grind the cottage cheese with sugar, sour cream, salt and eggs, then beat well with a blender.
  6. Now combine the buckwheat with the curd mass and mix everything thoroughly.
  7. Take a baking tray, grease the bottom with oil (reserve a little oil) and sprinkle with breadcrumbs.
  8. Place the prepared mixture on a baking sheet and grease the surface with oil.
  9. Bake the krupenik at 170 degrees for about half an hour.

From rice

A tasty and satisfying krupenik can be prepared with rice and raisins. Here's what you'll need for this:

  • two glasses of rice;
  • 3 eggs;
  • two glasses of water;
  • one glass of milk;
  • 150 ml sour cream;
  • 100 grams of raisins;
  • 3-4 tablespoons of sugar;
  • three tablespoons of butter;
  • two tablespoons of breadcrumbs.

Preparation:

  1. Rice must be washed very thoroughly, otherwise it will simply turn into mush when cooked.
  2. Now fill it with water and place the pan on the stove. After boiling, the heat should be reduced.
  3. When all the water is absorbed, add milk and cook the rice until done.
  4. Raisins need to be poured with boiling water for literally 10 minutes so that they soften a little.
  5. Grind the cottage cheese using a blender or mixer and beat with eggs, sugar and sour cream. Add raisins and mix everything well.
  6. Combine cooked rice with cottage cheese.
  7. Grease a baking sheet with oil (leave a little oil to grease the rice) and sprinkle with breadcrumbs to prevent the rice from burning.
  8. Lay out the rice and curd mixture and brush it with the remaining oil on top.
  9. Place the baking sheet in the oven, preheated to 170-180 degrees, for about thirty minutes.

From semolina

Prepare krupenik with cottage cheese, semolina and berries.

List of ingredients:

  • 200 grams of semolina;
  • 200 grams of cottage cheese;
  • two glasses of milk;
  • 100 ml sour cream;
  • one glass of any berries (for example, cherries, raspberries, cherries, strawberries, etc.);
  • four tablespoons of sugar;
  • two tablespoons of breadcrumbs (breadcrumbs or crushed regular ones);
  • 40-50 grams of butter;
  • a bag of vanillin or vanilla sugar;
  • two eggs.

Cooking method:

  1. First you need. To do this, bring the milk to a boil, then carefully pour the semolina into it, stirring constantly. Cook the cereal for about ten minutes, then cool.

Krupenik is an interesting dish that can pleasantly diversify your daily menu. In fact, krupenik is a casserole made from cooked cereals (one might say porridge, sometimes cooked in milk) with the addition of other ingredients: eggs, cottage cheese, sour cream.

We'll tell you how to prepare buckwheat krupenik with cottage cheese, the recipe is very simple, but such a dish is an excellent option for a healthy and nutritious breakfast, lunch or second course. In principle, such a casserole can even be considered dietary.

Buckwheat krupenik

Ingredients:

  • buckwheat groats – 2 cups;
  • water or milk – 3-4 glasses;
  • chicken egg – 3-5 pcs.;
  • – about 150-200 g;
  • natural sour cream – 3-5 tbsp. spoon;
  • a little butter to grease the pan.

Preparation

In a healthier version, pour the buckwheat in a cauldron with the specified amount of boiling water or hot milk, cover with a lid and wrap in a towel. While the buckwheat cools, it will be ready with all the nutrients retained. Alternatively, pour water over the buckwheat and, after boiling, simmer over low heat until tender, covered with a lid, stirring occasionally.

Now we prepare the actual krupenik. Add eggs and grated cottage cheese with sour cream to the cooked buckwheat. The mixture should not be too thick.

Grease a medium-depth mold from the inside with a piece of butter (silicone ones don’t need to be greased). Fill the mold with the buckwheat-curd-egg mixture and bake in an oven preheated to about 200 degrees C for about 25 minutes. Before cutting into portions, cool the krupenik slightly. Buckwheat krupenik is good served with meat gravy and/or mushrooms stewed in sour cream.

In a simplified version, you can prepare krupenik without cottage cheese and/or sour cream, using only eggs and buckwheat.

How to submit?

Krupenik can be served separately with sour cream, jam, syrup or condensed milk. In this case, it will become a wonderful dessert. If you do not add sugar during cooking, the dish can be an excellent side dish for meat. Before serving, cut the krupenik into portions.

You can add not only berries to the krupenik, but also fruits, honey, jam, and so on.

Pour buckwheat into boiling, salted water and cook for 15 minutes until the water has evaporated. Cool.

Beat eggs with sugar, grind thoroughly with cottage cheese, mix with cooled buckwheat. You can, if desired, add raisins or some dried fruits. Place in a greased container. I cook this dish in a double boiler, so I don't need fat. Grease with sour cream and place in a preheated oven for 15 minutes to bake. The fire should not be strong. I cook in a double boiler for 20-30 minutes.
I advise you to check the readiness of the dish. I touch it carefully with my finger. If I feel that it is not liquid, it means it’s ready. The last time I cooked for 50 minutes.

P.S. I read it from our cook GadenKa that you can not cook buckwheat, but simply pour boiling water over it and leave for several hours. That's what I do now.

Add 1 tablespoon of salt and cook a viscous porridge. Another very important thing is that the fire must be strong until it boils - this first 3-5 minutes, then moderate boiling and at the end of cooking it is necessary reduce heat to low and wait until the water has completely boiled away. The total cooking time is 15-16 minutes; it is not recommended to keep it on the fire longer - the taste of the porridge worsens and the cereal loses its shape.

Step 2: Add the remaining ingredients.

As soon as the porridge reaches the required consistency, remove it from the stove and let it cool. Add 1 tablespoon of sugar, 160 grams of cottage cheese to the cooled porridge and stir well. After the added curd is well mixed, add 1 egg and stir well again so that there are no lumps.

Step 3: Bake the krupenik.

The next step in preparing krupenik is baking it. To do this, you will need a form prepared in advance, crackers and sour cream. The mold must be greased and sprinkled with breadcrumbs. Place the porridge in a mold and grease with sour cream. You can put a piece of butter on top. Preheat the oven up to 200 degrees and bake the krupenik until a crispy crust appears. Baking time takes approximately 30-40 minutes.

Step 4: Serve the krupenik.


After removing the krupenik from the oven, let it cool slightly, put it on a dish and serve hot with sour cream. Bon appetit!

Millet can also be used to prepare krupenik. Do everything the same, but rinse the cereal well in boiling water so that it does not taste bitter, and use twice as much sugar.
