In addition to classic black coffee, cappuccino, latte and Americano, the so-called raf coffee is very popular today. It is a mixture of cream, vanilla sugar and espresso, which is whipped in the pitcher of a coffee machine. The main feature of the drink is the creamy foam.

Origin story

This drink was created in the mid-nineties of the last century in the capital of Russia. The first coffee machine in the country appeared in the Coffee Bean establishment, thanks to which the coffee shop received many visitors and fans of the aromatic drink. One of the regular customers of the establishment, named Rafael, did not drink the coffee that was presented on the menu, so a special drink was invented for him, consisting of espresso, cream and vanilla sugar, which were whipped together. After a while, his friends began to order coffee “like Rafa,” and this is how the name of the drink, raff coffee, arose, which today has become popular not only in Russia, but also abroad.

Subtleties of cooking

Raffa consists of espresso, cream and vanilla sugar, which in the original version were whipped in a cup, and over time they began to use the pitcher of a coffee machine. Serve the drink in a large cup or transparent glass. The dishes should be light and fit comfortably in your hand. The taste of raffa depends on the amount of sugar and cream, and the cream should not be fatty. A properly prepared coffee drink should have a pleasant, pronounced vanilla taste and not contain bitterness. In modern times, there are many varieties of raffa, which may also contain other ingredients.



Classic recipe

Ingredients for one cup:

  • 5 grams of vanilla sugar;
  • 100 grams of low-fat cream;
  • 25 grams of espresso;
  • 5 grams of sugar;
  • 1 gram of cinnamon.

Preparation:

  1. Before preparing the drink, you need to prepare the dishes. To do this, the cup or glass is preheated.
  2. Cream is poured into the pitcher, sugar and espresso are added.

Making raf at home

Lavender raf

Ingredients for 1 cup:

  • 100 grams of cold clean water;
  • 0.5 teaspoon of lavender flowers;
  • 2 tablespoons of ground coffee;
  • 1 teaspoon sugar;
  • 100 grams of cream.

Preparation:

  1. Coffee is poured into a pot, filled with water and brought to a boil, but not boiled.
  2. Sugar is ground together with lavender and added to coffee.
  3. Add cream, then heat the drink for two minutes on the stove.
  4. Beat the drink with a blender until a strong foam forms.

Rough coffee citrus

Ingredients:

  • 50 grams of espresso;
  • 5 grams of vanilla sugar;

This drink is prepared according to the classic recipe, but orange sugar is also added. The finished coffee is poured into a cup and garnished with a slice of lemon or lime.

Raf coffee in 2018

In recent years, a large number of varieties of rough have appeared. It can be with syrup or banana, lemon or even cheese. The history of the drink began in the 90s of the last century. In 1996, the first European-style coffee shop was opened in Moscow - Coffee Bean. Here you could try several types of drink made from different types of coffee. It was a real revolution in the world of the capital's coffee taste.

The coffee shop was small, with only a few people working there, but the guests were frequent and constant. Among them was Raphael, who did not drink traditional coffee. It was for him that the barista developed a recipe on the theme of sweet cappuccino, mixing espresso, milk and vanilla sugar in a pitcher at the same time until smooth and uniform. This kind of coffee was first offered to Raf, then his friends began to drink it. Later, a new drink appeared on the coffee shop’s menu – raff coffee.

Today, this drink is widespread throughout the country; it is prepared by baristas of many well-known coffee shop chains. Variations on its theme with additional ingredients appeared. What is raff coffee? This is a purely Moscow invention, the only recipe for a coffee drink invented in Russia.

Classic recipe

Raf is served in a cup or cappuccino glass. They must be warmed up before filling. Baristas claim that you can prepare this drink at home only if you have a good coffee machine. Only when the ingredients are whipped in a pitcher at the right temperature, a delicate and pleasant texture of the drink is obtained.

Smooth glossy foam distinguishes rough from others

In the traditional version, the raf coffee recipe looks like this:

  1. Brew a 25 ml shot of espresso.
  2. Pour into a pitcher, add full fat milk or 11% cream and vanilla sugar.
  3. Using a steam vent, beat the ingredients until you obtain a soft, glossy foam.
  4. Pour into a heated bowl.

For 1 serving of the drink you will need 100 ml of milk or cream and 5 g of sugar. The milk component must be heated to 60°C. Skim milk is not used, as it will not give a pleasant thickness to the finished drink. If there is only heavy cream at home, it is diluted with milk to a fat content of no more than 15% and no less than 10%. If you don’t have vanilla sugar, you can use natural vanillin in microscopic doses. In this coffee recipe, vanilla should be felt, but not overpower the taste and aroma of the espresso itself. The calorie content of a 125-130 ml serving of raf is 190 kcal.

How to make raff coffee without a coffee machine? This can be done in a regular cup. First, brew strong coffee in a French press or Turk. It must be free of sediment - this is a prerequisite. To achieve this, use black, medium-ground coffee - it is easier to separate it from the sediment.

Heat the cream in the microwave for about 1 minute, add vanilla sugar, pour in coffee and beat until foam appears. You can beat it in a blender or even using a regular whisk. A mechanical cappuccino maker is ideal for home use. It makes preparing raf easier and faster.

Variations

Despite its short history of existence, raf has already acquired several modified preparation options. These are honey, lavender and orange. Their recipes are presented below.

Technology for preparing lavender raffa:

  1. Brew coffee from 100 ml of water and 1.5 tsp. ground grains.
  2. In a coffee grinder, grind ½ tsp into dust. lavender flowers and 1 tsp. Sahara.
  3. Add mixture to coffee.
  4. Add 100 ml warm cream.
  5. Place the mixture over low heat and warm it slightly, beat in a blender, cappuccino maker or other method.

The drink contains dried lavender flowers.

How to make honey raf? The technology is identical to preparing a classic drink. The difference is replacing sugar with honey. For 1 standard 125 ml serving of drink, take 1 tsp. liquid honey. To serve dishes, they prefer a tall glass; the drink is sprinkled with cinnamon on top.

There are several options for preparing raf coffee with orange. This is adding citrus juice to a classic recipe, enriching the taste with chocolate and others.

Recipe No. 1:

  1. Brew 2 servings of espresso, 25 ml each.
  2. Heat 100 ml of cream.
  3. Combine liquid ingredients, add 1 tsp. vanilla sugar, 2 tsp. orange juice, whisk.

Recipe No. 2:

  1. Melt 100 g dark chocolate.
  2. Add to 50 ml espresso, 100 ml cream and 1 tsp. vanilla sugar, beat.
  3. Serve with a slice of orange as decoration.

A chocolate bowl can be used to melt the chocolate. Raf has recently been prepared with the addition of spices. These are cinnamon, cloves and vanilla. You can also add orange syrup instead of citrus juice.

The origin of the drink is very curious, since it was invented in Russia, more precisely, in Moscow. Let us remind you that the birthplace of most types of coffee is Italy, and the world owes the appearance of drinks with a lot of water (Americano) or the addition of milk to the Americans.


If we talk about Rafa coffee, it was first prepared by the barista of the Coffee Bean coffee shop chain in the early 90s for a foreigner named Rafael. The visitor was not a big fan of cappuccino and latte, so he asked to prepare a drink especially for him, in which the taste of espresso would not be so distinctly felt.

The staff prepared espresso for the guest and whipped it with light cream and sugar. The guest liked the result of such an experiment, and then it was appreciated by all of Raphael’s friends, who ordered “coffee like Raphael’s.” Ultimately, the name was transformed into the more convenient Rough Coffee, and then (like the drink itself) migrated to other specialized establishments.

Currently, Raf coffee is offered by most coffee shops not only in Moscow, but also in other cities of Russia, while it is almost never found in foreign establishments.



Composition and calorie content

The composition of the classic Raf is quite simple - a serving of espresso (25-30 ml), 100 ml of cream with a fat content of no more than 11% and 2 teaspoons of sugar. The latter is represented by ordinary sand and vanilla sugar, taken in equal quantities.

The energy value of a 130 ml serving is 135-150 kcal. However, it is more convenient to calculate the calorie content each time, taking into account the ingredients of the drink. A serving of espresso is the lowest in calories – only 2 kcal. The main load comes from cream, the calorie content of which is 120 kcal per 100 ml, and sugar. Regular has an energy value of 377 kcal per 100 g (19-22 kcal per teaspoon), vanilla - 288 kcal (about 14-20 kcal per teaspoon).

If supplements are used, this usually results in increased calories. The most nutritious is, of course, honey - 312 calories per 100 g of product or 30-35 kcal per teaspoon. The calorie content of orange juice is about 36 kcal, lavender is 23 kcal per 100 g of product.



If caramel, toppings, and chocolate chips are used for decoration, this also affects the total calorie content of the drink.

Rough coffee, especially in coffee shops where it is served in large glasses, can hardly be called a diet drink. If you are watching your figure, it is better to immediately include it in your daily calorie intake and not consume it at unplanned times. The drink itself is sweet, rich and high-calorie, so it does not need additional desserts.


Difference from cappuccino and latte

Rough coffee, latte and cappuccino are prepared on the basis of espresso with the addition of milk or cream and sugar, but these drinks are very different from each other.

Unlike cappuccino, Raf coffee is prepared with cream, which makes its taste softer, and creamy notes are more clearly felt in it. The preparation technology also differs - for cappuccino, milk is frothed separately and poured into espresso. Raf involves simultaneously whipping espresso, cream and sugar, which makes its structure more airy.

If we compare latte with Raf coffee, then first of all it should also be noted that the recipe involves the use of milk, not cream. Some of the milk is simply heated, while the other is whipped using a steam vent. Lattes are usually laid out in layers - first, heated milk, then a layer of espresso is carefully poured (along the walls of the glass), followed by a cap of whipped milk. It is logical that such a drink is served in a glass goblet to demonstrate the transition of layers.




For latte, it is important that the ingredients do not mix, while for Raff coffee the ingredients are mixed in one container. It turns out that the difference is due to the preparation technology, which, in turn, entails differences in the serving of drinks.

Classic recipe

The classic recipe is considered to be the one used to prepare coffee in the early 90s at Coffee Bean. You can repeat the drink only if you have special whipping equipment and a coffee machine. The latter will help prepare the “correct” espresso with a 25-30 second extraction time. The whipping apparatus will allow you to achieve uniformity of the drink and obtain a light, airy, foamy texture.

To prepare one serving of Raf coffee according to the classic recipe, you will need the following ingredients:

  • 50 g espresso (essentially a double shot of traditional 25 ml espresso;
  • 100 g of cream, the fat content of which is no more than 11% (if only a fatty product is available, it must first be diluted with milk);
  • 1 teaspoon each vanilla and regular sugar.


First of all, you need to brew espresso. The flow sheet indicates that 7-8 mg of ground coffee beans per 25 ml of water is required. While the coffee machine is preparing the drink, you need to warm up the dishes for serving Raf coffee. This could be a ceramic mug or a transparent glass with a low stem.

Cream should be used at room temperature; cold cream will not whip well and will cool the drink. The cream is placed in the pitcher, sugar is added there, after which the prepared espresso is poured into it. Now you need to beat the resulting mixture using the steam vent of the coffee machine. The drink is ready, all that remains is to serve it beautifully.



Varieties

You can brew Raf at home if you don’t have a coffee machine in a cezve. First you need to prepare coffee from 50 ml of water and 1 teaspoon of ground coffee. Grinding the beans immediately before preparing coffee will make the taste of the drink brighter. For the same purpose, you can throw a pinch of salt at the bottom of the cezve or preheat the ground grains at the bottom of the cezve for a few seconds.

It is better to pour coffee with cold, unboiled water; the heat should be moderate. It is important to warm the coffee beans, receiving beneficial substances, taste and aroma from them, but not to allow the drink to boil. As soon as you notice foam rising, remove the cezve from the heat and strain the coffee.

At the same time, heat the cream. You can do this in a water bath or place them in the microwave for a couple of minutes. Next, you should combine 2 teaspoons of sugar (it is better if it is vanilla and regular sugar taken in equal parts), heated cream and brewed coffee and beat the mixture well with a blender. When fluffy foam appears on the surface, the coffee is poured into a serving bowl. It is advisable to preheat it over steam.

You can decorate the drink with chocolate or coconut shavings or topping.



Rough coffee is a real field for culinary experiments. You can add alcohol, citrus juice, honey to it. This only enhances the taste of the drink.

Orange Raf coffee is very popular. The recipe for making it is in many ways similar to the one used to prepare the classic drink, however, instead of vanilla sugar, 20 ml of fresh orange juice is used. It should be without pulp. Instead of juice, you can use orange sugar, then the citrus flavor will be felt to a lesser extent.

This version of Raf coffee quenches thirst, has citrus freshness, and in addition, speeds up metabolism and helps eliminate toxins.

Replacing sugar with honey will make the drink more viscous in taste, spicy and aromatic, and also more beneficial for the immune system. You will need 1 or 1.5 teaspoons of natural honey. This method involves first combining 50 ml of freshly brewed espresso and 100 ml of cream. Only after this, honey is added and the coffee is whipped.



Preparing Raf coffee according to this recipe usually involves serving it in ceramic cups. Ground cinnamon is used as decoration. The honey drink has a warming effect, so it is rightfully considered more of a winter drink.

Fans of nuts or Snickers bars will appreciate the nutty Raf. The recipe includes a fairly high-calorie nut butter, so the cream is replaced with milk. For 50 ml of espresso you will need 100 ml of milk, a tablespoon of peanut butter, and cane sugar or caramel syrup to taste.

First of all, the paste needs to be diluted in a small amount of milk to the consistency of thick sour cream, then pour the resulting mixture into the pitcher. Add warmed milk, sugar or syrup there.

Brew espresso and pour it into the pitcher, then beat the composition using a steam vent or blender. Afterwards the drink is poured into cups and decorated.


For this recipe, it is important to choose high-quality pasta. It should be as natural as possible, and the main component must be nuts.

Instead of vanilla sugar and vanilla, you can use lavender. Lavender Raf has a pronounced calming effect and is an excellent stress reliever. This recipe uses lavender flowers instead of vanilla sugar. You will need half a teaspoon of dry raw materials.

Lavender flowers must first be ground in a coffee grinder with a teaspoon of regular sugar until it becomes a homogeneous aromatic powder. Otherwise the process is identical to the classical one. Espresso is brewed (in a coffee machine or Turk), combined with cream, and lavender sugar is added. All ingredients are whipped until foamy.

This drink is traditionally decorated with lavender flowers. They go well with a slice of orange.


Fusion cuisine offers unusual Raf cheese coffee. From the name it is clear that the drink will have not only creamy, but also cheesy notes.

To prepare it, coffee is brewed in a cezve from 2 glasses of water and 2 teaspoons of ground coffee. Usually spices are added to coffee - cinnamon, ground ginger, nutmeg, cloves. But you can refuse to use them or adjust the amount to your taste.

Add 50 g of soft cheese to 100 ml of heated cream and thoroughly beat the mixture with a blender until smooth. After this, all that remains is to combine the coffee, 2 teaspoons of sugar (regular and vanilla) and the cream cheese mixture in a warm pitcher and beat.


A little advice from professionals will help you get even more delicious and aromatic Raf coffee.

  • It is better to put vanilla sugar in the cream before heating it, so it will dissolve better and fully release its taste and aroma.
  • If the fat content of the cream is high enough, and there is no milk on hand to dilute it, you can even do this with boiled water. Interestingly, more and more often, when milk and cream are added to coffee, it is called Raf coffee in English.
  • Vanilla sugar in a drink, unlike baked goods, can behave quite aggressively, making coffee cloying and tasteless. It is recommended to start adding it with 3 g per serving, increasing to 5-6 g (just a teaspoon) if necessary.

If you don't like vanilla, you can replace it with cane or orange sugar, or use honey or lavender.

Raf coffee is served in a cappuccino cup. In this case, the sprinkles on the surface of the cup look harmonious. You can also present the drink to guests in a transparent latte macchiato glass. In this case, the balloon cap and the delicate creamy shade of the drink will delight you.

As a rule, for a large (180 ml) glass, use a double portion of espresso, and also increase the amount of other ingredients accordingly.

Vanilla Raf coffee must be served in a heated container, this way the taste of the drink is better revealed. The temperature of the glass should be such that it is comfortable to hold in your hands.

There is also a variety of double Raf coffee. In this case, the volume of espresso and cream is doubled, but it is better to adjust the amount of vanilla sugar to taste so as not to get an overly cloying and spicy drink.

Raf coffee should be served immediately after preparation, before the foam has settled on its surface and the drink has had time to cool.

Gleb became the director of the barista department and the chief roaster of the Coffeemania chain of coffee shops, I don’t know anything about Artyom now, and Galina works in the coffee industry. We didn’t really keep track of when and in which coffee shops raf began to appear, but now it is available almost everywhere, and not only in Moscow.

How to prepare an alternative version of raff coffee if you don’t have a coffee machine or cappuccino maker at home?

You will need:

  • finely ground coffee beans - 1 teaspoon,
  • water - 40 ml,
  • cream - 100 ml,
  • vanilla sugar - 1 teaspoon (can be replaced with vanilla, but just don’t overdo it, otherwise it will add bitterness to the finished drink),
  • regular sugar - 1 teaspoon.

Cooking method

  1. Add vanilla sugar to the cream (to create raff coffee it is recommended to use 11%, but if the fat content of the cream purchased for preparing the drink is slightly higher, we recommend diluting it with milk). Heat in the microwave for 2 minutes at maximum power.
  2. From the specified amount of coffee beans and water, brew coffee in a Turk. If you don’t want to waste time on brewing, you can prepare the base for raf coffee by brewing instant coffee.
  3. Mix heated cream and hot black coffee. Add granulated sugar. Beat until airy foam appears. For this purpose, you can use a blender and even an ordinary whisk.
  4. Pour the finished raf coffee into a heated cup for cappuccino or into a tall transparent glass for latte macchiato. We take a sample or treat guests. Enjoy your coffee!

Ingredients for making honey raff coffee:

  • 50 ml. coffee,
  • 100 ml cream 11% fat,

  2. Add a teaspoon each of vanilla sugar and granulated sugar.
  3. Pour in freshly prepared espresso (you can’t do without a coffee machine to brew it).
  4. Using a steam vent, beat the prepared ingredients into an airy foam.
  5. Pour the finished drink into a heated cup. We decorate at our own request and enjoy the most delicate taste and delicious aroma of raff coffee.

How to prepare an adapted version of raf coffee, if you don’t have a coffee machine or cappuccino maker at home.

You will need:

  • finely ground coffee beans - 1 teaspoon,
  • water – 40 ml,
  • cream – 100 ml,
  • vanilla sugar – 1 teaspoon (can be replaced with vanilla, but just don’t overdo it, otherwise it will add bitterness to the finished drink),
  • regular sugar – 1 teaspoon.

Cooking method

  1. Add vanilla sugar to the cream (to create raff coffee it is recommended to use 11%, but if the fat content of the cream purchased for preparing the drink is slightly higher, we recommend diluting it with milk). Heat in the microwave for 2 minutes at maximum power.
  2. From the specified amount of coffee beans and water, brew coffee in a Turk. If you don’t want to waste time on brewing, you can prepare the base for raf coffee by brewing instant coffee.
  3. Mix heated cream and hot black coffee. Add granulated sugar. Beat until airy foam appears. For this purpose, you can use a blender and even an ordinary whisk.
  4. Pour the finished raf coffee into a heated cup for cappuccino or into a tall transparent glass for latte macchiato. We take a sample or treat guests. Enjoy your coffee!
