Lazy dumplings in a frying pan are prepared very quickly and without much hassle. This is a delicious meat dish with the addition of vegetables that does not require much time.

For the test you will need:

  • flour - 3 cups;
  • eggs - 3 pieces;
  • water (warm) - 1 glass;
  • salt - ½ teaspoon.

For minced meat you will need:

  • any meat - 500 g;
  • onion - 1 large head;
  • salt, spices - to taste.

  • carrots - 2 medium pieces;
  • garlic - 2 cloves (or more if you like it spicier);

For the sauce you will need:

  • sour cream - 150 g;
  • water - half a glass;
  • hops-suneli - to taste.

Preparation

  1. Dissolve the egg and salt in warm water. Pour into the sifted flour and mix thoroughly, gradually adding more flour to the “liquid center”. Knead the dough and set it aside to “proof”, covered with a towel or wrapped in a plastic bag, for about half an hour.
  2. Grate the carrots and chop the onion (you can also just chop the carrots if you don’t like grated ones), simmer them together in a frying pan for about 4 minutes. At the very end, add finely chopped garlic.
  3. Grind the meat and onion in a meat grinder or blender (or chop it by hand, this will make the minced meat more textured), add salt and seasonings. It is better to take freshly ground spices - this way they will give more aroma and taste to the dish. Mix well until the salt is completely dissolved and evenly distributed.
  4. Roll out the dough into one large layer no more than 1 mm thick. Place the minced meat on it in a thin layer, leveling with a fork.
  5. Carefully roll the roll, avoiding any air bubbles under the dough. Pinch the edges of the resulting roll.
  6. Cut with a sharp knife into small pieces - rolls 2-3 cm thick.
  7. Spread about a third of the vegetables on the bottom of the pan and place the dumplings on top, cut side up. Place so that the rolls do not touch (you can place vegetables between them). Cover everything on top with the remaining vegetable pillow. When placing the rolls on a vegetable bed, do not forget to pinch the bottom cuts so that the juice does not leak out and the dumplings do not lose their taste.
  8. Prepare the sauce: mix sour cream with water and khmeli-suneli (if you don’t like this seasoning, you can use black pepper, paprika or something else to your taste). Pour mixture over dumplings. If desired, you can put butter on each roll.
  9. Cook for about 30 minutes, covered, over low heat.

Serve the dish hot, garnished with herbs and fresh vegetables. You can serve sour cream, hot sauce, garlic sour cream sauce, etc. with lazy dumplings.

Cooking in the oven

The recipe for lazy dumplings in the oven is not much different from the recipe in a frying pan. But in the oven you can cook a portion for a large family without having to constantly stand at the stove.

Preparation

  1. Prepare the dough: stir the egg and salt in the water, pour the mixture into the sifted flour and mix gently, then transfer to a table sprinkled with flour and knead the dough until elastic. Cover with a towel or cling film and leave for 30-40 minutes (during this time the vegetables and filling will be cooked).
  2. Grate or finely chop the carrots, cut the onion into small cubes. Place the onion in a heated frying pan and fry it with vegetable oil for 1-2 minutes. Then add the carrots, mix everything and simmer under the lid closed for another 3 minutes.
  3. Prepare the minced meat: grind the meat and onions in a meat grinder, add salt and seasonings to taste.
  4. Roll out the dough into a large oval shape (it will be more convenient if you get a rectangle with rounded corners).
  5. Place the minced meat on the dough, spreading it evenly, and roll it into a roll. Pinch the free edges. Cut into circles 2-3 cm thick.

  • onion - 1 head;
  • salt and spices - to taste;

Preparation

  1. Add warm (but not hot) water, salt and egg to the sifted flour. Mix everything carefully, gradually increasing the thickness of the dough by adding flour.
  2. Knead the dough until elastic and leave it under a towel or film for about 30 minutes.
  3. Prepare the filling: pass the meat and onions through a meat grinder or grind in a blender. Add salt, spices and some herbs.
  4. Roll out the dough into a thin sheet and place the minced meat on it. Level it so that it is the same thickness throughout the entire sheet.
  5. Roll the roll and pinch the edges.
  6. Cut the roll into pieces 2-3 cm thick. Place on the bottom of the bowl.

In addition, in my family, even the men were satisfied with three pieces. The finished dumplings turn out beautiful, resembling roses. These dumplings are steamed in a cascan. It is also called a mantovarka or mantyshnitsa. The dough needs to be rolled out very thin so that it cooks well inside.

To prepare lazy rose dumplings, we will need the products listed in the list.

Let's prepare the filling. To make it juicy, add a lot of onions to the minced meat. Our onion weight is half the weight of minced meat. Grind the onion in a blender or grate it on a grater with large holes. Season with salt and pepper and add ice water. Mix well.

Add salt to the flour, pour in boiling water, stirring vigorously with a fork until lumps form.

Add milk and butter, continuing to stir with a fork.

Beat the egg into the dough and knead into a stiff dough. If the dough is not stiff, add the remaining flour. And even if the dough is stiff (it depends on the flour), you can add more flour. Don't let the fact that the dough is tough scare you. Cover it with film and leave to ripen for 30 minutes. After 30 minutes the dough will become softer.

I used a machine to roll out the dough. If you don't have one, just roll out the dough very thin and cut strips 7 centimeters wide and 35 centimeters long.

Place minced meat lengthwise on each strip.

Fold the strips of dough in half lengthwise and press.

We begin to roll it up. We do this with all strips of dough.

Pour water into the bottom of the cascan and bring it to a boil. Lubricate the cascan grill with vegetable oil. Place the rose dumplings on the cascan grill and send them to steam. Close the cascan with a lid. Cook for 45 minutes until the dough is well cooked. And since the caskan has 4 floors, we cook all the dumplings at the same time.

Grease the finished dumplings with butter.

I peel and wash the onions. I cut one onion into small cubes, two into half rings.

I peel the carrots, wash them, and grate them on a coarse grater.

I'm preparing minced meat. In a bowl, combine minced meat, diced onion, chopped garlic, salt and pepper to taste.

Mix the minced meat well and put it aside.

Then I prepare the dough. Sift the flour into a bowl, add the egg, salt, and melted butter.

I add water and knead the dough. I put it in a bag and put it aside.

I'm preparing the sauce. In a frying pan, lightly fry the onions in butter or vegetable oil. Add grated carrots and fry a little more.

Then I pour in the pureed tomato pulp.

Add sour cream, salt and ground black pepper to taste.

I pour water into the pan and let the sauce boil.

I take 1/3 of the dough and roll it into a thin circle with a rolling pin. If necessary, I add a little flour so that the dough does not stick to the table and rolling pin.

Using a glass or a round cutter, I cut out circles from the dough.

I lay out 4 circles in a row, going a little over the previous one.

Using the round handle of a wooden spoon or spatula, I press the circles as in the photo.

I place the minced meat in a strip in the middle of the circles.

I close the minced meat by folding the dough circles in half.

I roll the dough with minced meat into a “roll”.

I pinch the edge of the resulting “rose” so that the workpiece does not unwind. You can spread the petals a little to the sides to make the “roses” more beautiful. This is how I make the rest of the dumplings.

I prepare lazy dumplings in several forms, but you can bake them in one large form. I distribute the sauce into the molds.

I place the lazy dumplings in the pan with the sauce, spacing them out slightly from each other, as they will increase in size during cooking.

Cover the pan with foil.

I place the forms of lazy dumplings in the oven, preheated to 180 degrees. I cook for about 45-50 minutes.

I decorate the finished dish with herbs.

  • approximately 250 g of flour (check the consistency of the dough);
  • 4 small onions;
  • 2 carrots;
  • 700 g minced beef and lard;
  • 2 g ground black pepper;
  • 50 ml oil for frying;
  • clove of garlic;
  • 15 g fresh herbs;
  • 50 ml sour cream.

Cooking steps.

  1. The dough is being prepared. Pour 120 ml of water into a capacious cup, add eggs, salt, and shake. Add sifted flour. First, stir the mass with a whisk, then knead with your hands. The dough should be elastic and tight. If it sticks to your hands, you need to add more flour.
  2. The dough wrapped in cling film is placed in the refrigerator for 40–60 minutes to mature.
  3. Grind 2 onions in a meat grinder or fine grater. Minced meat is peppered, salted and combined with onions.
  4. The dough is divided into 3 equal pieces. One part is rolled out with a rolling pin into a cake 3 mm thick. Spread a third of the minced meat on it in an even layer and roll it into a roll, constantly pinching the edges.
  5. The resulting roll is cut into small identical pieces.
  6. Do the same with the remaining dough and minced meat.
  7. Peel and chop the remaining onions, carrots, and garlic. Vegetables are fried in oil in a frying pan.
  8. Separately mix chopped herbs and sour cream. Combine with fried vegetables.
  9. Place semi-finished rosettes in a deep frying pan. Pour in the remaining water. The top of the roses is covered with sour cream and vegetable mixture.
  10. The dish is cooked covered for 13 minutes. Serve directly in the pan.

This recipe allows you to prepare a meal for a large family without spending a lot of time at the stove.

Ingredients:

  • 600 g flour;
  • egg;
  • 550 ml water;
  • 10 g salt;
  • 50 ml sunflower oil;
  • 300 g chicken fillet;
  • 400 g pork with lard;
  • 3 onions;
  • 1 sweet pepper;
  • 3 g ground black pepper;
  • 60 g tomato paste;
  • 3 garlic cloves;
  • 5 g sugar;
  • 40 ml sour cream.

Cooking steps.

  1. Minced meat is prepared from meat and two onions using a meat grinder. It is salted, peppered, mixed with sour cream and whipped.
  2. They make choux pastry: it turns out to be more elastic and can be easily rolled out into a thin layer. Boil 250 ml of water. Separately combine the egg, salt, sifted flour, 20 ml of oil. Add boiling water. Stir the dough with a fork, and when it has cooled, use your hands.
  3. The dough is covered with cling film and left on the table.
  4. To prepare the dumpling filling, chop and fry the onion, pepper, and garlic in oil. Add tomato, salt, sugar, black pepper.
  5. A small portion of the dough is rolled out thinly. The minced meat is spread over the entire surface of the resulting flatbread. Roll it up (loosely).
  6. The roll is cut into pieces 5 cm long. Each piece is pressed down a little with your hands on one side so that on the other it opens, resembling a rose.
  7. Place the semi-finished products in a deep baking tray so that there is space between them. The void is filled with fried vegetables: this will prevent the dumplings from sticking together. Pour boiling water, cover with foil and place in the oven, preheated to 180 degrees. Cook for 35 minutes.
  8. Lazy dumplings in the oven are ready when they take on a nice golden hue. If there is still water in the pan, you can remove the foil and keep the dish in the oven for a few more minutes.

Lazy dumplings in a slow cooker

Using a multicooker makes cooking easier. However, the dumplings turn out no less aromatic and juicy than according to the classic recipe.

Ingredients:

  • 400 ml water;
  • 1 egg;
  • 500 g flour;
  • 8 g salt;
  • 0.5 kg of minced pork and beef;
  • 2 onions;
  • 1 carrot;
  • 3 garlic cloves;
  • 20 ml oil for frying.

Cooking steps.

  1. Prepare the dough in the usual way: stir an egg in 200 ml of water, add salt and flour. Make a stiff dough, wrap it in plastic and put it in the refrigerator for 40 minutes.
  2. Chop 1.5 onions very finely, add to minced meat, salt and pepper.
  3. Grind the carrots with the remaining onion and garlic, fry in a slow cooker on the “Fry” mode for 10 minutes.
  4. The dough is rolled out very thin. Fill its surface with minced meat, then roll it into a tight roll.
  5. The roll is cut into pieces 3–4 cm wide.
  6. Place the semi-finished products for frying, add water and cook on the “Baking” mode for 30 minutes.

Cooking steps.

  1. For the dough, combine 1 egg, water, salt, beat everything thoroughly. Add soda dissolved in vinegar. Gradually add flour and knead into a tight dough. It is placed in a bag and put in the refrigerator for 30 minutes.
  2. Veal is ground using a meat grinder. Finely chopped onion, seasonings, salt, and 30 ml of water (for juiciness) are added to the minced meat.
  3. The dough is divided into 2 halves. One part is rolled out thinly, half of the minced meat is applied to it and wrapped into a roll. Repeat the same with the remaining dough and filling.
  4. The roll is cut into small pieces. They are dipped in flour on one side.
  5. The products are placed in a frying pan with the flour side down. Butter is distributed between the semi-finished products. Fry the dumplings over medium heat for 4 minutes on each side.
  6. Whisk the egg in a bowl. Mix it with chopped herbs.
  7. Pour the egg mixture over the dumplings, cover with a lid and leave to simmer over low heat for 10 minutes.
