As soon as our mixture becomes homogeneous, add softened butter to it and continue to whisk thoroughly. Place the cooled and thickened ganache in a cooking bag and, with its help, place it on the cookie halves exactly in the middle.

It is necessary to turn off the equipment and allow the meringue to cool. Then turn the mixer back on and beat into a thick foam until the birds' beaks form. When the protein solidifies on your fingers in this form, you can stop the beating process.

Add the resulting mass to the almond paste in three stages. Mix quickly, but gently and slowly. The result will be an unusual viscous air mixture.

We transfer it into a pastry bag with a round nozzle and squeeze halves of French Macaron cookies onto a baking sheet. We try to make them the same and leave space between them. We deposit on a silicone or any other baking mat. You can use regular thick parchment paper.

Then several times we throw the baking sheet three centimeters strictly vertically above the work surface and lower it onto the table. This will help remove excess air bubbles and make the surface of the dessert smoother.

Leave the pieces alone for 15-30 minutes and preheat the oven to 150 degrees. During this time, the French Macaron cake should set a little and when pressed with a finger it will not stick to it.

Place the dessert in the oven, close the door and lower the temperature to 140 degrees. They should be baked for no more than 10 minutes. At the sixth minute, remove the baking sheet and turn it over so that all halves are baked evenly.

When ready, you should immediately pull the mat with the dessert onto the work surface from the baking sheet so that they begin to cool at room temperature.

At this time you can start preparing the ganache. It is prepared according to the same principle for two varieties of chocolate. To do this, heat the cream over moderate heat and remove from the stove. Add the chocolate, divided into squares, and stir with a whisk or spatula until completely dissolved. Add butter and stir until completely dissolved.

Pour the resulting homogeneous mixture into a separate bowl. It can be made any color using your favorite syrup or food coloring. To make the dark brown ganache especially aromatic, you can add a little of your favorite liqueur or cognac to it.

When the filling has cooled a little, put it in a pastry bag and squeeze it onto the French Macarons in a small amount and strictly in the middle. Then cover with the other half and press lightly so that the cream is evenly distributed.

  6. We sift the resulting powder, and send the remainder to the combine and grind it again according to the previous scheme. Then we pass it through the sieve again. We do this until a minimum amount of crumbs remains. You should stop at this stage. Almond flour is ready.

Pasta without almond flour

If almonds are not your favorite nut, and you don’t want to give up a delicious dessert, you can prepare a delicacy from other flour options.
