Only mineral water of neutral acidity is suitable for its preparation, otherwise the fruity aroma will be hopelessly lost. Cherry puree and lemon zest should not be added to sugar syrup that has just been removed from the heat in order to preserve the vitamins of the juicy berries and the volatile essential oils of the lemon peel.

Ingredients

  • cherry 400 g
  • sugar 350 g
  • water 250 ml
  • lemon zest 1 tsp.
  • sparkling mineral water 1.5-2 l

Preparation

1. First fill the cherries with cold water and leave for 10-15 minutes. During this time, if there are worms inside the berry, they will float to the top. After this procedure, rinse and sort the berries. Remove stems and seeds.

2. Transfer the prepared cherries to a separate tall container and beat thoroughly with a blender until smooth.

3. Add 350 g of white sugar to the pan, pour in water. Place on the stove. Stir occasionally to dissolve the sugar and let it boil. Once boiling, turn the heat to low and simmer for 5 minutes.

4. Add the punched cherries to the hot sugar syrup, then mix thoroughly.

Scald the lemon with boiling water, dry with a towel, then remove the zest using a grater or a special knife. Add to the pan with the remaining ingredients and stir. Cover with a lid.

Leave to cool at room temperature.

5. Strain the cooled cherry syrup through a strainer with small holes so that the skins and pulp do not get into the finished drink.

6. Pour the strained liquid into a jug or bottle and add 1.5-2.5 liters of carbonated mineral water. Mix thoroughly and transfer to a cool place for 1-1.5 hours. Use the amount of mineral water at your discretion. If you want a less sweet lemonade, add more soda.

7. Cherry lemonade is ready. Serve it with ice cubes, mint leaves and cherries.

How to make cherry syrup

In order for the lemonade to be truly tasty, you need to cook the syrup correctly. To create the sweetness you will need 10 minutes and simple culinary steps:

  1. sort out 250 gr. cherry fruits, removing rotten and damaged cherries from the total mass;
  2. we wash them in clean water, then remove the seeds and stalks from the berries;
  3. rub the peeled cherries through a sieve;
  4. Sprinkle the resulting fruit and berry mixture with sugar, then fill it with water. After this, boil everything for 5 minutes over medium heat. It is important that the syrup is thick;
  5. After cooking, we give it time to cool and filter the already cooled syrup through a sieve.

Lemonade recipe

We start preparing the drink by preparing the berries. To do this, select ripe, unspoiled cherries, wash them in water and remove seeds.

We grind selected clean cherries in a blender, after which we transfer the resulting fruit and berry puree into the prepared, previously boiled syrup.

Squeeze the juice from the lemon (manually or using a juicer) and add the juice to the syrup with chopped cherries.

After that, pour everything into a clean jug, stir the sweetness with sparkling water - and serve the drink to the table.

  2. We sort through, wash the cherry fruits, and then clean them of stalks and seeds.
  3. Place the berries in a blender and grind until pureed.
  4. Mix the resulting puree with the cooled syrup, dilute with freshly squeezed lemon juice and finally fill everything with mineral water.

You can make lemonade with thyme not only by diluting the drink with boiled sugar-cherry syrup. You can easily do without syrup and without sugar at all.

To prepare such a drink, there is a simple home recipe, which involves following all the culinary steps described above, only without adding syrup.

Mix all the ingredients (cherries crushed in a blender, unsalted mineral water, spices and lemon juice) in one jug and leave the lemonade to infuse for 1 hour. After that, strain it through a sieve (provided that you don’t like a drink with pulp), pour it into serving glasses and serve.

A cool non-alcoholic drink of Georgian origin has long become popular outside of Georgia. Natakhtari is a delicious factory-made lemonade, which is prepared on the basis of mineral water, fruit and berry syrup, flavorings, sugar and citric acid.

Since it is not so easy to buy this original Georgian delicacy in our country, you can try to create an excellent alternative to it yourself - prepare natakhtari at home.

Ingredients

  • Cherry – 500-600 gr.
  • Mineral sparkling water – 1.5 l.
  • Sugar – 10 tbsp. l.
  • Purified water – 0.5 l.
  • Mint – 5-6 sprigs (more if desired).

Preparation

  1. Grind the mint in a blender with a small amount of sugar.
  2. Pour boiling water over the resulting mixture.
  3. Leave the spice to cool at room temperature. It is advisable that after cooling the mint continues to infuse for at least another 1 hour. The longer it infuses, the richer its taste.
  4. Strain the infused spice through a sieve.
  5. Squeeze the juice out of the cherries; for this we can use a blender. After squeezing, strain the cherry mixture.
  6. Mix cherry juice, mint tincture, and purified water in a carafe.
  7. We put homemade natakhtari in the refrigerator.
  8. After a while, pour the finished drink into glasses (approximately 1/3 of the container’s volume), mix it with sparkling water and serve. There is no need to fill the entire prepared volume with soda at once.

  1. Cherry – 0.5 kg;
  2. Water – 1 l;
  3. Sugar – 4 tbsp;
  4. Lemon – 0.5 pcs.;
  5. Mint – 1 branch;
  6. Sparkling water – 0.5 l.

  • To prepare this cool drink we will need the ingredients according to the list. We'll first make the cherry compote and then add the rest of the ingredients to turn the compote into a refreshing lemonade.

  • We sort out the cherries from sticks and bad specimens and rinse them under cold running water. To make sure that the berry is not worm-free, soak the cherries for 15-20 minutes in cold water.

  • Pour about one liter of water into a small saucepan, place it on the stove and bring to a boil. Throw the cherries into boiling water to preserve vitamins and nutrients as much as possible.

  • Add sugar. When the water boils again, reduce the heat and cook for only 3 minutes.

  • At this time, prepare the lemon. Wash the lemon in cold water and cut it into two halves crosswise. For this amount of cherries we only need one half of a lemon. Cut this half into small rings.

  • After 2.5 minutes of boiling water with cherries, add lemon slices.
  • We tear the mint with our hands and add it to the compote. Boil for literally 15-20 seconds and turn off the heat. Let the compote cool to room temperature.
  • When the lemonade base has cooled, strain it so that only one drink remains. Dilute it with chilled sparkling water and pour into serving glasses. You can add a small slice of lemon and ice cubes to each glass. Refreshing and invigorating lemonade is ready! It is better to drink it immediately; after storing it in the refrigerator, the gases evaporate and the effect of lemonade disappears.
