  • 200 gr. fresh cabbage;
  • 2 tbsp. lightly fatty kefir;
  • 1 tbsp. flour;
  • green;
  • 1 egg;
  • 1 tbsp. l. oils;
  • 1 tsp soda;
  • 1 onion.

The cooking process consists of several steps:

  • The cabbage is cut into small strips with a knife or a special tool and combined with finely chopped herbs and onions;

Cooking steps:

  • 1 glass of kefir and the same amount of sugar;
  • 3 eggs;
  • 1.5 tbsp. flour;
  • 250 gr. fresh cottage cheese;
  • 4 tbsp. spoons of sunflower oil;
  • 1 tsp each vanillin, soda and baking powder.

The preparation method consists of several stages:

  • Mix kefir and soda in a vessel with a whisk and set aside for an hour;
  • Beat the eggs with a mixer and pour them into the kefir mixture;
  • Next, add butter;
  • At the last stage, sift the flour and add baking powder. Pour them into the prepared mass in portions;
  • Knead the dough and proceed to forming the filling;
  • Grind fresh cottage cheese with egg and sugar until a homogeneous, paste-like mass is obtained, without individual granular inclusions. If the cream comes out runny due to low-fat sour cream, it’s not a problem. Add a spoonful of flour, and if on the contrary it turns out a little dry, pour in a little milk;
  • From the resulting mass we form small pieces-balls;
  • Prepare a baking dish, grease it with butter or cover it with parchment;
  • We turn on the oven in advance so that by the time the cake is formed, it has already warmed up to 180 degrees;
  • Roll the curd mass into small balls;
  • Pour the dough into a mold, and, keeping a certain distance, place our balls into it;

Kefir-based casserole with apples

Casserole is a fragrant, light and healthy dish that is ideal for breakfast, will become a profitable afternoon snack and will decorate an evening family dinner. Apples are an important addition to this recipe. Baking in the oven, they give a pleasant aroma and slight sourness. Combined with delicate porous kefir dough, they create an appetizing composition.

So, we will need:

  • 0.5 tbsp. kefir;
  • 3 tsp cinnamon;
  • 3 tbsp. l. sugar powder;
  • 1 apple;
  • 0.5 tbsp. semolina;
  • a pinch of soda;
  • 250 g cottage cheese;
  • 2 tbsp. l. spoons of butter.
  • a pinch of vanilla;
  • 1 egg.

Cooking process:

  • The first step is to prepare the soda by first extinguishing it. This can be done traditionally with vinegar or kefir. This procedure will rid the future casserole of an unpleasant bitter taste;
  • Next, take a bowl of cottage cheese and beat an egg into it and add sugar powder. Then, one by one, we include kefir, slaked soda, 1 tbsp. butter and semolina (don’t pour out all the cereal, some will still be needed). Mix everything vigorously;
  • To prevent burning, crush the greased form with the remaining semolina;
  • Juicy apples must be cut into medium pieces and poured into the dough, stirring it all the time. They should not be in one place, but should be evenly distributed throughout the curd mass;
  • Pour the resulting casserole into a mold; for a more flavorful crust, sprinkle it with cinnamon.

Baking with potatoes has been very popular for many decades. They offer to buy it as a lunch snack, in the event of events where a large number of guests will gather, as a “slow” for a picnic, as a treat for parents, children and grandchildren. But few people know that for a good and airy dough it is enough to use fermented milk products as the main component.

  • 3 potatoes;

  • 1 tbsp. flour;
  • 2 tbsp. kefir;

    Pie with potatoes + meat
    2 eggs, 1.5 cups of flour, 1.5 cups of kefir, 1 teaspoon of salt (for pregnant women, and a little more is possible), 1 teaspoon without top of soda, pepper, potatoes, meat of your choice (pork, minced meat, sausages, stewed meat, whatever your heart desires), onion, spices (herbs)
    Mix eggs, half a glass of kefir, add salt, soda, add flour, stirring constantly (a food processor works well). Add kefir and stir. It looks like sour cream, fluid but thick.
    In a greased frying pan, place layers of onion rings, potatoes sprinkled with spices and salt, meat, and potatoes. Fill everything with dough. Bake for 20 minutes

    Pancakes
    For a glass of kefir, 2 eggs, 2 tbsp. l. sugar, soda and flour.
    Or maybe a light pie. 1 tbsp. kefir, 250 g margarine, 1 tbsp. sugar, 2 eggs, 1 tbsp. semolina, 1 tbsp. flour (or another glass of flour instead of semolina), and add whatever else you want: nuts, raisins, poppy seeds, grated carrots, candied fruits, cocoa, vanillin.

    A glass of kefir, 2 eggs, baking powder or slaked soda, flour so that the dough is thick like pancakes. Salt of course. A little dough on a greased frying pan, then chopped cabbage, then the rest of the dough, pieces of butter on top.

    apple pie
    1.5 tbsp. kefir
    1 tsp soda
    2-3 eggs
    1 tbsp. Sahara
    flour
    The dough should turn out like a pancake. Pour 0.5 of the dough onto the pan, place peeled and chopped apples on top. You can sprinkle sugar and cinnamon on top to taste. Then pour in the remaining dough.
    Bake in the oven until done.

    Kefir pancakes with cottage cheese
    eggs 3 pcs.
    3 cups kefir
    salt to taste
    1 tbsp. l. Sahara
    6 tbsp. l. vegetable oil
    3 cups sifted flour
    filling:
    cottage cheese
    sugar
    vanilla sugar
    sour cream
    Beat the eggs with a mixer or a fork, or an iron whisk. Add 3 cups of kefir or sour milk, add salt to taste, add 1 tbsp. spoon of sugar, 6 tbsp. spoons of vegetable oil. Mix everything well and, while stirring, gradually pour the kefir-egg mixture into 3 cups of sifted flour. Stir everything well until the lumps disappear. Let it rise for 15 minutes and stir well again. Add one and a half teaspoons of baking soda dissolved in warm milk or water. Mix well again and you can fry... For the filling, grind the cottage cheese with sugar, add vanilla sugar. If the cottage cheese is dry, add sour cream or milk or kefir. Mix everything well and wrap it in pancakes. Serve with sour cream.

    To all the recipes listed I will add my own, standard and very easy. In addition, this recipe allows you to add not only kefir, but also leftover jam.

    For half a liter of kefir you need two eggs, about half a glass of sunflower oil (odorless), a teaspoon of soda (quench with vinegar), a glass of sugar and about a glass of jam or jam. You need enough flour to make the dough like pancakes, a little thicker.
    Mix kefir with sugar, egg, butter, add flour, slaked soda. Stir, if the dough is liquid, add flour. Lastly add jam. Grease the pan with oil, pour the dough into the oven over medium heat. Bake for about half an hour. Tasty and fast, the recipe is very easy, even a beginner can handle it.

    Pie “Childhood”
    Mix 3 cups of flour with 150 g of melted butter, 1 egg, 100 ml of sour cream (I replaced it with kefir), 1.5 cups of sugar, 1 packet of baking powder and 1 packet of vanilla sugar.
    Knead the dough well, it turns out elastic and does not stick to your hands or dishes. Place the dough in the refrigerator for 1 hour.
    Cut 600 g plums into halves (remove pits). Place the dough in a greased form, place the plums on it and sprinkle them with sugar. I also added large grapes.
    Place the pie in an oven preheated to 200 degrees, bake for about 30 minutes, sprinkle the cooled pie with powdered sugar.

  2. To avoid wasting time while the vegetables are stewing, prepare the dough. To do this, mix all the other ingredients (add flour a little and stir to avoid lumps).
  3. Preheat the oven well at high temperature. Pour half the mixture into the mold and place the filling on top. Top with another half of the dough.
  4. Place in the oven for half an hour (mode 180-200 degrees). After 30 minutes, the healthy kefir pie is ready.
  5. If you want the finished dish to have a beautiful crust, sprinkle it with grated cheese before cooking.

Mannik with nuts and raisins

Save this recipe to your culinary treasure chest to surprise unexpected guests with something original. You can also replace nuts and raisins with poppy seeds if desired. You will need:

  • chicken egg – 3 pcs.;
  • sugar – 9 heaped tablespoons;
  • semolina – 200 g;
  • kefir – 210 ml;
  • sifted wheat flour – 210 g;
  • raisins – 1.5 tbsp. l.;
  • nuts – 30 g;
  • baking soda – 4 g;
  • vinegar - to extinguish soda;
  • vanillin;
  • butter (you can use vegetable oil) – 2 tbsp. l.

Step by step process:

  1. Turn the oven to high temperature to preheat.
  2. Beat eggs and sugar, add semolina and kefir little by little and beat quickly again. Leave the mixture to rest until the semolina swells.
  3. Add flour, baking soda, vanillin, butter and nuts. Stir until the liquid mass is homogeneous.
  4. Pour the liquid mixture into the mold and cook in the oven for no more than half an hour.

Fried crumpets in a frying pan

An excellent option for a nutritious and tasty breakfast, which will take very little time. Children will love these crumpets with tea, milk, compote. You can prepare an interesting dish using the following products:

  • kefir – 300 ml;
  • flour – 3.5-4 cups (depending on the liquid mass);
  • chicken egg – 1 pc.;
  • sugar – 8 tbsp. l. (with a “hill”);
  • oil (vegetable) – 45 ml;
  • salt – 3 g;
  • baking soda – 4 g.

Cooking process:

  1. Pour the main fermented milk product into a bowl. Add a slightly beaten egg, salt, sugar, quicklime soda to it. Mix everything.
  2. Gradually sift the flour into the liquid mixture and knead. Do not flour too much, otherwise the dough will not turn out fluffy. The dough should be soft, it will be obvious that it can already be rolled out.
  3. Cover the bowl with a towel and set aside for half an hour to allow the mixture to rest.
  4. Divide the dough into a couple of parts, roll out into a not very thin layer. Rolling thickness – 0.5 cm.
  5. Using molds or a glass, cut out the buns and fry them in very hot oil.

Sweet buns with cottage cheese in the oven

Who doesn’t love buns that remind us so much of good fairy tales, grandma, warmth and home comfort? If you are wondering what to cook with cottage cheese, then these pies will be an indispensable option. For the bun dough you need:

  • kefir (0% fat) – 1 cup (200 ml);
  • flour - 4 cups;
  • butter – 2.5 tbsp. l.;
  • chicken egg – 2 pcs.;
  • sugar – 2.5 tbsp. l.;
  • salt – 3 g;
  • soda – 1/3 tsp.
  • cottage cheese – 0.5 kg;
  • raisin;
  • sugar – 65 g;
  • vanillin or vanilla sugar.

Step-by-step cooking process:

  1. Pour hot boiled liquid over the raisins for a few minutes, drain and dry.

  • vegetable oil – 15 ml;

Step-by-step recipe for kefir cookies:

  1. Beat kefir and sugar until smooth and sugar is completely dissolved.
  2. Add vegetable oil, slaked soda, vanilla.
  3. Gradually stir in the flour with a spoon or spatula, then with your hands until the dough becomes very elastic.
  4. Roll out the layer (the thickness of the finished roll is 0.5 cm), cut out the cookies, and place them on a baking sheet covered with parchment paper.
  5. Bake for 10 minutes at high temperature (about 200 degrees), remove, dip one side in milk, and cover with sprinkles. Return to the oven until the crust is lightly browned.

1. Delicious kefir crumpets

Ingredients:

  • 1.5 tbsp flour
  • 1 tbsp kefir
  • 1 egg
  • 3 tbsp. spoons of butter
  • 2-3 tbsp. l. Sahara
  • 1/3 teaspoon baking soda
  • 1/4 teaspoon salt
  • vegetable oil for deep frying

Preparation:

Mix kefir with soda and let stand for 5 minutes. Beat the egg with salt and sugar and combine with kefir. Gradually add flour and knead into a thick dough. Add melted butter to the dough and knead again. Heat vegetable oil in a ladle (about 0.5 cups) and spoon out the dough with a dessert spoon (as much as will fit in the ladle). Deep fry all the crumpets on both sides (pouring boiling oil on top with a spoon) and place in a deep bowl. Let the donuts cool down and you can eat.

2. Cupcakes with kefir

Ingredients:

  • Kefir - 250 ml
  • Vegetable oil - 2 tbsp.
  • Honey - 1.5 tbsp.
  • Eggs - 1 piece
  • Sugar - 0.5 tbsp.

Preparation:

Pour soda into kefir and mix. Add the remaining ingredients, flour at the very end. Mix thoroughly. Pour the batter into the muffin cups 2/3 full. I have silicone ones, so I didn’t lubricate them with anything. Bake for 30-35 minutes. at 180 degrees.

3. Kefir pie

Ingredients:

  • 100 g butter, let sit for a while at room temperature
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1/2 l kefir
  • 1/2 tsp. soda
  • a small handful of raisins (I made them with currants, you can also use raspberries)
  • vanilla sugar

Preparation:

Remove the butter from the refrigerator and let it sit at room temperature, then cut into cubes and place in a container. Add sugar and start beating at low speed until everything becomes smooth. Beat in the egg and continue beating. Pour in kefir. Put soda, add vanilla sugar. Lastly, add the sifted flour. The dough turns out like thick sour cream, tender and airy. Grease the bottom of the pan with oil, pour out all the dough, level it with a spatula, throw currants (or raspberries) on top and bake. Bake at 200 degrees, 30-40 minutes. Then check with a toothpick for doneness, turn off the oven and let it cool completely in the oven. The pie may crack a little, that's okay - it won't affect the taste in any way.

4. Kefir buns

Ingredients:

  • 375 gr. first grade flour
  • 0.5 tsp salt
  • 250 ml. kefir at room temperature
  • 2 tbsp. l. warm water
  • 12 gr. fresh yeast or 1 tsp. dry yeast
  • 2 tbsp. l. Sahara
  • 1 egg + 1 tbsp. l. water for greasing buns
  • If desired, you can sprinkle with poppy seeds, oatmeal, sesame seeds, etc.

Preparation:

In a bowl, mix flour (sift) with salt, make a well in the middle. Mix yeast with water. Add kefir to the yeast and stir. Add the kefir mass to the flour and knead the dough well. Knead for at least 10 minutes on a floured work surface. The dough should not be very elastic, it turns out quite soft. Follow the dough and add a little water or flour if necessary. Place the dough in a bowl, cover with a towel or place in a plastic bag.

The dough should double in size. It took me about 1.5 hours. Knead the risen dough quite a bit and divide into 8 parts. Form into 8 balls and place in the pan, leaving a little space between them for rising. Cover again and put in a bag for half an hour. Meanwhile, preheat the oven to 200 degrees. Brush the buns with the egg mixture and place in the oven for 30 minutes.

5. Kefir cupcake

Ingredients:

  • Egg - 4 pcs. (1 - whole and 3 whites)
  • Vegetable oil - 100 ml
  • Kefir - 100 ml
  • Sour cream -1 tbsp.
  • Sugar - 1 cup.
  • Flour - 3 cups.
  • Cognac - 2 tbsp. l.
  • Raisins - 1 handful
  • Orange zest - 1-2 tbsp. l.
  • Baking powder -3 tsp.
  • Salt - a little
  • Vanillin - optional

Preparation:

Beat the whites and eggs well. Add butter and kefir. Then sugar, baking powder, salt, cognac and zest. Stir in flour. Add raisins. Pour the dough into a mold that has been greased and sprinkled with flour (I have a silicone mold, so I only lightly greased it with oil). Preheat the oven well, place the pan and reduce the heat slightly. Bake for about an hour. Check readiness with a wooden skewer. Turn the finished cake over onto a plate and sprinkle with powdered sugar (I still have a little cocoa).

6. Chocolate muffins with kefir

Ingredients:

  • Kefir - 0.5 cup.
  • Flour - 1 cup.
  • Cocoa powder - 3 tbsp. l.
  • Sugar - 100 g
  • Chicken egg - 1 pc.
  • Soda - 1/4 tsp.
  • Vanillin (At the tip of a knife)

Preparation:

Beat sugar with eggs, and then pour in kefir. We continue to beat these products until the granulated sugar is completely dissolved. In a separate bowl, mix the bulk ingredients: sifted flour, cocoa and 0.25 teaspoon of soda. You can also add a little vanilla to the dough. Pour the resulting mixture into the liquid ingredients and mix the dough with a whisk.

It shouldn't be thick. The approximate consistency is the same as for pancakes. Fill the molds, greased with any oil, with dough, approximately halfway, because the dough will rise. Bake for about 20 minutes (it took me a little longer), preheating it to 160C. We check readiness with a match. Let them cool a little and decorate! I used Charlotte cream.

7. Berry muffins with kefir

Ingredients:

  • 150 grams of any frozen berries (I used blueberries)
  • 1 tbsp. any red jam (I used strawberry)
  • 300 g kefir
  • 1 egg
  • 150 g sugar
  • 1 p. vanilla sugar (10 g)
  • pinch of salt
  • 1 p. baking powder (15g)
  • 275 g flour + 1 tbsp.
  • 1/2 tsp. soda
  • 75 ml plant. odorless oils (7-8 tbsp)

Preparation:

First, take 3 tbsp from the berries. and mix them with confiture and set aside. Add 1 tbsp to the remaining berries (do not defrost!). flour and mix well. Beat the egg, sugar, vanilla sugar and salt with a mixer into a fluffy mass. Add the plant one at a time. butter and kefir, whisking continuously. Sift the baking soda and flour into a bowl and pour into the egg-kefir mixture and beat with a mixer into a homogeneous mass. Add berries (those with flour!) and mix gently with a spoon.

Turn on the oven at 200C. If you have a muffin tin, grease it well (I use paper molds). Pour the dough into the molds up to 2/3 full and place in the oven for 15 minutes. Then take it out, make a small depression in the middle with a spoon and put the berries and jam there. Place back in the oven and bake for about 10 minutes more (until a toothpick comes out dry). Sprinkle the finished, cooled muffins with powdered sugar if desired.

8. Open kefir pie with apples

Ingredients:

  • 600g flour
  • 150g sugar
  • 1.5 tsp. soda
  • 300ml kefir
  • 200ml light syrup (I use apple syrup)
  • 200g butter
  • 500g apples
  • if desired, 2 tsp. cinnamon
  • if desired, 2 tbsp. l. Sahara

Preparation:

Mix flour, sugar and soda. Add kefir and syrup, and finally melted butter. Combine the ingredients into a dough, kneading it as little as possible. Spread the dough on a baking sheet or baking dish measuring 24x32 cm. Peel the apples, cut them into slices and spread over the surface of the pie. Sprinkle with sugar and cinnamon. Bake in the oven at 180C for 40-45 minutes.

What can you quickly bake from kefir? I admit, I myself love to quickly bake something from kefir.

These recipes come in handy when you have very little time and need to quickly prepare something tasty, unusual and with a twist.

Pancakes.

For a glass of kefir, 2 eggs, 2 tbsp. l. sugar, soda and flour.

Easy option: 1 tbsp. kefir, 250 g margarine, 1 tbsp. sugar, 2 eggs, 1 tbsp. semolina, 1 tbsp. flour (or instead of semolina another glass of flour).

Add as desired: nuts, raisins, poppy seeds, grated carrots, candied fruits, cocoa, vanillin.

Kefir cake: “Black Prince”.

For the dough: 1 egg, 1 glass of sugar, 2-3 teaspoons of cocoa, 1 glass of kefir, 1 teaspoon of soda, 1 glass of flour.

For the cream: 200 g butter, 0.5 cups sugar, 250 g sour cream.

Beat the egg with sugar until thick foam, add kefir, soda and beat again.

Add flour, the dough should look like thick sour cream.

Pour into a greased tall tin and bake at 180°C.

Check readiness with a match - stick a match into the pie; if it comes out damp, finish baking the pie.

Remove from pan and cool on a wire rack, then cut the cake into 2 layers.

Spread with cream, decorate with nuts and chocolate on top.

For the cream: grind the butter with sugar, add sour cream and beat everything.

Pie with potatoes and meat.

2 eggs, 1.5 cups flour, 1.5 cups kefir, 1 teaspoon salt (for pregnant women, a little more is possible).

Then 1 level teaspoon of soda, pepper, potatoes, meat of your choice (pork, minced meat, sausages, stew, whatever your heart desires), onion, spices (herbs)

Mix eggs, half a glass of kefir, add salt, soda, add flour, stirring constantly (a food processor works well).

Add kefir and stir. The consistency is similar to sour cream, fluid but thick.

In a greased frying pan, place layers of onion rings, potatoes sprinkled with spices and salt, meat, and potatoes.

Fill everything with dough. Bake for 20 minutes

Cabbage pie.

A glass of kefir, 2 eggs, salt, baking powder or slaked soda, flour so that the dough is thick like pancakes.

Pour some dough into a greased frying pan, then chopped cabbage, then pour the rest of the dough on top, put pieces of butter on top.

Apple pie.

  • 1.5 tbsp. kefir
  • 1 tsp soda
  • 2-3 eggs
  • 1 tbsp. Sahara

Mix all the ingredients for the dough, it will turn out like pancakes. Pour 0.5 of the dough onto a baking sheet, place peeled and chopped apples on top.

You can sprinkle sugar and cinnamon on top to taste. Then pour in the remaining dough.

Bake in the oven until done.

Pie “Childhood”.

Mix 3 cups of flour with 150 g of melted butter, 1 egg, 100 ml of kefir, 1.5 cups of sugar, 1 packet of baking powder and 1 packet of vanilla sugar.

Knead the dough well, it turns out elastic and does not stick to your hands or dishes.

Place the dough in the refrigerator for 1 hour.

Cut 600 g plums into halves (remove pits).

Place the dough in a greased form, place the plums on it and sprinkle them with sugar.

Bake the pie at 200 degrees for about 30 minutes, sprinkle the cooled pie with powdered sugar.
