How to cook minced meat?

  1. Since we prepare minced meat from lean and dietary meat, we need a “juicy safety net” so that the finished dish does not turn out dry, is easy to chew and requires a large amount of sauce. For this I have several secrets:
  2. Combine types of meat. Chicken+veal, turkey+beef, veal+horse, turkey+chicken, veal+beef. You can make minced meat from 2, 3, 4 types of meat. I really like chicken fillet (2 parts) + veal fillet (1 part).
  3. Onion. Be sure to add onions to the minced meat. Twist it together with the meat and then mix well. For 1 kg of meat I can take 2 or even 3 large onions (100 g each).
  4. Soy sauce. 2-3 tbsp. 1 kg of meat will be enough. As with marinades, sauce works great here too.
  5. Spank the minced meat. Yes, yes. After mixing the minced meat with onion, soy sauce, salt and spices (if using), roll it into a ball and drop it from a height of 20-25 cm into a bowl. You need to thoroughly slam it to the bottom, so don’t spare any effort. And so 10 times. You can additionally slap the meat ball with your palm.

That's it, the super-duper minced meat is ready. Now I’ll tell you how I make simple, but always tasty cutlets from it.

Healthy chicken and veal cutlets

Ingredients

  • Minced meat (I have chicken + veal, 2:1) – 900 g
  • Egg – 1 pc.
  • Carrots – 2 pcs.
  • Onion – 1 pc.
  • Tomato paste – 3 tbsp.
  • Water – 1.5 cups
  • Mixture of Italian herbs – 1 tsp.
  • Salt – 1 tsp.
  • Smoked paprika – 1 tsp. (important ingredient).

Preparation

  1. Mix the minced meat with egg, spices, paprika, and salt. Smoked paprika is an important ingredient that I do not recommend replacing or removing. It gives a very pleasant “campfire” flavor to the meat.
  2. Cut the onion into cubes, grate the carrots.
  3. Mix tomato paste with water.
  4. A non-stick frying pan needs to be heated and, if necessary, greased with a small amount of oil (coconut, olive, sesame).
  5. Roll the minced meat into balls and place them in the frying pan. Fry on both sides until golden brown (about 3-4 minutes).
  6. Add onions and carrots to the fried cutlets, fry for another 2 minutes, then pour in water mixed with tomato paste and a pinch of salt. Mix carefully, cover with a lid and leave the cutlets to simmer for 30 minutes.

  • Oat flakes – 60 g
  • Parsley – 20 g
  • Pepper, spices without salt - to taste

Cut the chicken fillet into pieces.

Place the chicken fillet in a deep bowl, break the egg into it, add sour cream and sprinkle with pepper and spices to taste. Using a hand blender, blend until smooth.

Grind the oatmeal into flour, add it to the meat and stir. Add chopped herbs and mix the dough into cutlets.

Form cutlets and fry in a non-stick frying pan on both sides over low heat for 7-8 minutes.

Place the cutlets in a bowl and serve.

Diet chicken cutlets are especially popular among healthy eating enthusiasts. Fried foods are not welcomed by nutritionists, as they contain a lot of calories. An excellent alternative would be cutlets steamed or baked in the oven.

Ingredients:

  • kilogram of chicken fillet;
  • chicken egg - two pcs.;
  • onions - four pcs.;
  • sunflower oil – 20 ml;
  • oat flakes – 200 g;
  • green onions - two bunches;
  • freshly ground black pepper.

Step-by-step recipe for dietary steamed chicken cutlets

Clean the chicken fillet from films, veins and skin. Cut it into small slices. Peel the onion heads, rinse and coarsely chop. Pass the meat and onions through a meat grinder or chop using a food processor.

Salt the resulting minced meat to taste and season with pepper. Beat two eggs here and add oatmeal. Rinse the green onions, dry and chop into thin rings. Add to the minced meat. Mix everything thoroughly, beating it in a bowl. Leave the resulting mixture for half an hour to allow the flakes to swell.

Make small cutlets from minced chicken. Pour some water into the pan and place a colander on top. Place the cutlets in it. Cover with a lid and cook for half an hour.

Prepare dietary chicken cutlets from chicken breast or fillet, after thoroughly cleaning it of skin and fat. Cutlets can be prepared in another way: place them in a frying pan, pour in a little drinking water, cover with a lid and simmer over low heat until cooked.
