I'm kind of embarrassed to even call this recipe a "recipe" because it's obscenely simple, fast, and flexible in terms of ingredients and their ratios. It's just a berry pie. Just a delicious berry pie. Just a very tasty berry pie, which is very easy and pleasant to cook with a little helper.

What ingredients do you need for a berry pie?

For test:

Sugar - 1 cup (about 200 g)
Egg - 1 piece
Butter - 100 g
Sour cream - 0.5 cups
Flour - 2-3 cups

For filling:

Berries - how much to eat, there will not be much (about 0.5 kg)
Sugar - to sprinkle on top of the berries (2-3 tablespoons)

All proportions in the recipe are very approximate, because such a simple and tasty pie Well, no way, it's just technically impossible to make it tasteless.

In essence, this is the usual shortbread dough stuffed with fresh berries and that's it. In principle, a child of six years old will cope with this dish alone, and you will only have to watch. Well, taste the result of his work.

How to make a pie with berries?

1. First, it's better to deal with the berries. In our village, branches were bent under the weight of cherries, so there was no problem with choosing the main ingredient. There was also blueberries, they were also added. Any berries will do.

I ran out of patience to pick out the pits from cherries about the first third. The rest of the cherries were used with pits under the pretext that the berries would be healthier this way.

Add flour. I am a fan of flour, all sorts of different, so I poured all that is: rice, whole grain wheat, chickpeas, regular wheat and bran more.

But, of course, the usual Wheat flour quite suitable.

The amount can be adjusted in the process - you should get the usual shortbread dough, which will be pleasant and convenient to roll out.

The dough must be divided into two parts; 2/3 and 1/3. The larger part will be the base of the pie, the smaller one will turn into a picturesque lattice of sausages.

At the stage of rolling out the dough, a little helper is absolutely indispensable. But the rolling pin, as it turned out, is completely replaceable - they rolled out the dough with a long glass.

Yes! An important addition from us: if you plan to bake a cake on baking paper, then it is better to roll it out directly on it, because scraping the dough off the table and moving it to a baking sheet is not the most exciting thing to do.

When the base is ready - lay out the berries. The little helper is still needed.

The berries need to be beautifully leveled, sprinkled with sugar (the amount of sugar depends on the acidity of the berries and your taste preferences).

4. Roll out the base into a thin layer and lay it on the bottom of a suitable mold without forming sides.

5. Preheat the oven to 180°C and bake the base until light golden brown.

6. At this time, chop the previously thawed berries using a blender, add sugar and starch. Put the dishes with the weight on slow fire and cook after boiling for no more than 3-5 minutes, so that the mixture thickens a little. Cool down.

7. Put the cooled filling on the baked base. Roll out the rest of the dough thinly, cut into strips and place randomly on top.

8. Bake at the above temperature until the top layer is browned. Serve slightly chilled.

Recipe for an open pie with berries

Nothing decorates a feast or tea party like an original open pie with berries prepared according to the following recipe.

Prepare:

150 g butter;

300 g of granulated sugar;

2 large eggs;

2 tbsp. flour;

1 pack shop baking powder;

1 pack vanilla;

500 g of any berries;

4 tbsp starch.

Cooking:

1. Remove the butter from the refrigerator in advance so that it is soft enough. Add a portion of sugar (100 g) to it, beat in the eggs, rub with a fork.

2. As soon as the mass becomes homogeneous, enter vanilla sugar ok and baking powder. And then add the sifted flour in parts.

3. Roll out the adze into a layer, put it on a baking sheet and put it in the refrigerator for 15-20 minutes.

4. While the base is "resting", make the filling. Put the washed or thawed berries in a saucepan, sprinkle with sugar, mix.

5. Once the crystals have dissolved, prepare the starch. Dilute it with a couple of spoons cold water and then pour into the filling.

6. Boil it over low heat for 5-7 minutes, cool well.

Take:

3-4 st. flour;

1 pack baking powder;

1 egg is larger;

200 g margarine or optional oil;

100 g of sugar;

500 g of any berries;

some salt.

Cooking:

1. For this cake, butter or margarine must be well frozen, therefore, before cooking, for fidelity, they should be removed for 5 minutes in the freezer.

2. In the meantime, take the flour and add the baking powder to it.

3. Chop the frozen margarine with a knife into small cubes directly in the flour, and then rub it with your hands into crumbs.

4. Beat in the egg, add salt, depending on the consistency, you can add from 2 to 5 tbsp. cold water. Knead fairly dense, but elastic dough. Divide it into two balls so that one is twice as large as the second, and put both in the freezer.

5. Sort and wash the berries, defrost frozen ones and leave for a few minutes in a colander to drain excess liquid.

6. Take the mold and grate a larger ball of dough evenly on a grater. Carefully lay out the prepared berries, sprinkle with sugar, repeat the procedure for rubbing a smaller part of the dough on top.

7. Place in the oven (170-180°C) and bake for about half an hour until beautiful crust. It is better to cut the cake while still warm.

Pie with berries in a slow cooker - step by step recipe with photo

100 g butter (margarine);

300 g of granulated sugar;

1.5 st. flour;

a couple of eggs;

1 tsp baking powder or soda with vinegar;

a handful of salt;

300 g raspberries or other berries;

a jar (180-200 g) of sour cream.

Cooking:

1. Remove butter or margarine from the refrigerator in advance so that it melts and becomes soft. Then rub it with sugar (150 g).

2. Beat eggs with baking powder or soda.

3. Mix the butter-sugar mixture and beaten eggs with the double-sifted flour to make a stretchy dough. It should be sufficiently elastic, not blurry and not sticky to the hands.

6. At this time, prepare the sour cream. Regardless of the fat content, excess moisture must be removed from it. To do this, lay it on several layers of gauze or a clean cotton cloth, fold it into a bag and fasten it to the edge of the saucepan so that liquid flows into it.

3. Introduce flour in small parts and knead soft dough until it comes off your hands.

4. Cover with a napkin and leave to “rest” for another hour and a half, remembering to knead at least once.

Recipe 2. Shortbread pie with frozen berries

  • 300-350 g flour
  • ½ tsp baking powder
  • 150 g sugar
  • 1 sachet (10 g) vanilla sugar
  • 150 g butter (or the word margarine), softened
  • a little milk (or water, sour cream) - if necessary
  • 1 egg (or 2 yolks)
  • a pinch of salt

Soften the butter first at room temperature.
Whisk soft butter with sugar and vanilla sugar until creamy.
Whisking continuously, add the egg (or egg yolks).
Mix flour, baking powder and salt.
Sift on top of the oil mixture.
Knead the dough until a lump forms.

Then we take 800 g of any frozen berry (on the top photos, first strawberries, then cherries). Defrost to the end, pour the juice into a glass, bring it to 250 ml with the same juice or water. We use this juice to make jelly.
We spread the berries on the dough laid out on the form, sprinkle lightly with sugar (optional, depending on the acid of the berry and the tastes of the absorbers of this product) Yes, by the way, the form is 26 cm in diameter.

Grease a baking dish with vegetable oil. Distribute the dough evenly in the form.

Made with blackcurrant. The pie turns out to be very fragrant, the dough is a little crispy, the filling can be made with apples or any other berries, as well as with thick jam.

The recipe is designed for a small form, 19 cm in size.

  • 1.5 cups flour
  • 2 tbsp. spoons of sugar
  • 5 st. spoons of vegetable oil
  • 6 art. tablespoons of ice water
  • 1 sachet of vanilla sugar
  • soda on the tip of a knife
  • a pinch of salt
  • 1 cup frozen blackcurrant
  • 2-3 tbsp. spoons of sugar
  • 1 st. a spoonful of flour

Defrost berries.
Sift a glass of flour into a bowl, add salt, sugar, vanilla sugar, water, vegetable oil, mix, add the rest of the sifted flour with soda. Knead elastic dough, wrap in cling film, refrigerate for 1 hour.
Add flour and sugar to the berries, mix. Turn on the oven to 180 degrees, grease the mold with vegetable oil.
Divide the dough into 2 parts, one more and one less.
Roll out most of it, put it in a mold, make sides.

Distribute the filling on top.

Roll out a smaller part of the dough, cover the pie from above, carefully pinch the edges, grease the pie with a brush with vegetable oil, sprinkle with sugar, make a small hole in the middle for steam to escape.

Bake the pie for 30-35 minutes, it does not brown well, so you should not overexpose it in the oven, just check the dough itself for readiness by piercing it with a toothpick, if it is dry, the pie is ready.
Let the cake cool slightly, then transfer to a serving platter.

Recipe 5. Cottage cheese and berry pie with frozen berries

This beautiful festive dessert resembles a cheesecake with cottage cheese, and the berries add juiciness and tenderness. It is prepared even easier than a cheesecake, and the result is much superior in taste.

  • flour (250 grams),
  • margarine (150 gr),
  • sugar (1 cup + filling 150 grams),
  • egg,
  • vanilla sugar,
  • soda (half a teaspoon),
  • sour cream (250 grams),
  • powdered sugar
  • cottage cheese (200 grams),
  • starch (100 grams).
  • blackcurrant or other berries (300 grams).

Beat eggs with sugar, add pieces of margarine softened at room temperature, add soda. Add flour and starch, knead the dough. Soft dough, powdered with flour, easily taken by hand. We send it to the refrigerator for 30 minutes.

We rub the cottage cheese through a sieve, or knead it in a mixer or blender, add an egg and 2/3 cup sugar, sour cream. Grind cottage cheese with additives and get a creamy mass. Grease a baking dish with butter and sprinkle with flour. We spread the dough with a cake, form the sides and bottom. We spread the curd mass on the dough, level the surface. Put the berries on the cottage cheese and put in the oven.

Juicy berries that bake quickly (raspberries, blueberries, blueberries, we have black currants) can be laid out 20 minutes after the start of baking. The temperature is 180 degrees. The cake turns out just wonderful, not at all simple.

Recipe 6. Yeast dough pie with frozen berries

Yeast cake is the most satisfying pastry. Soft muffin is all the more pleasant because not much time is spent on its preparation. A standard set of products: yeast, sour cream, flour - and a great addition to lunch or breakfast is provided.

  • milk (1 cup)
  • yeast (15 grams),
  • salt (half a tablespoon),
  • sugar (two glasses)
  • any fresh berries (1 kilogram),
  • flour,
  • vanilla sugar,
  • sour cream (1 cup).

We dissolve the yeast in half a glass of warm milk, salt and pour a glass of sugar. Add flour to the consistency of fritters. In a warm place, we leave our dough to roam. When the dough rises well, add the sifted flour, butter, milk and sugar to it, add margarine and eggs at the end.

The elastic dough should rest for 20 minutes. We knead it until a homogeneous mass, roll it into a layer 3 mm thick. Mix in a baking dish.

Filling: cover the berries with a glass of sugar and let stand for 15-20 minutes. Remove the juice that has come out, pour into the mold and level. Bake 30-40 minutes.

Recipe 7. Puff pastry pie with frozen berries (from ready-made dough)

Puff pastry baking is essentially a lifesaver, as it greatly facilitates the process of preparing any dish. The main thing is to defrost the dough in time, and everything else is trifles.

  • puff pastry - 500 g (this is a whole store package);
  • any berries and fruits - 500 g;
  • potato starch - 3 tablespoons;
  • egg - 1 pc.;
  • sugar - 0.5 cups.

Remove puff pastry from the freezer and defrost. Wash the berries thoroughly and clean them from twigs and leaves directly under running water. After, we cut the large fruits, and leave the small ones as they are, filling them with sugar, and mix. Excess juice, which is formed after 10-15 minutes, must be drained, and starch should be added to the berries (this is done so that the starch becomes a link for the berries during baking).

We take a baking dish, I use a large baking sheet, grease with oil and set aside for now. Roll out the puff pastry neatly in one direction, put one layer on a baking sheet so that the edges come out a little, and leave the other on the table and make cuts in it.

Put the berries in starch and sugar on the dough,

cover with a cut layer on top, and pinch the edges from all sides. The slits in the top layer of the dough should open up a little to make holes. The future puff pastry pie with berries is gently greased with a beaten egg

and put in an oven preheated to 200 ° C, baking for 20-25 minutes.
