  • Wheat flour – 640 g.
  • Dry yeast – 1 teaspoon;
  • Sugar – 100 g.
  • Salt - a pinch;
  • Milk – 200 ml.
  • Eggs – 2 pcs.
  • Butter (margarine) – 100 g.
  • Sour cream – 100 g.
  • Poppy – 110 g.
  • Raisins – 110 g.
  • Sugar – 1-3 tbsp. spoons;

How to cook

The first stage is kneading the dough. Stir yeast in warm milk. After 10 minutes, pour this milk into the bowl, add salt, sugar, eggs and butter. Yes, and sour cream too. Beat well, add flour and mix again. Add flour in small portions until all is gone.

The resulting dough should rest for 40-60 minutes.

Now you can start filling. Since the confectionery poppy seed is dry and hard, it needs to be softened. Let's cook it!

First, rinse with water to ensure there are no twigs or debris. Fill with water so that it is 1-2 cm above the level of the poppy. Place on the stove, turn on the heat to maximum and wait until it boils. Then reduce the heat to low and cook for 10-15 minutes. Stir to ensure nothing burns.

Combine raisins with poppy seeds, add another spoon or three of sugar and mix. The mass should be thick, like jam.

Let's start with the fact that pies are made from yeast dough. It has long been known that yeast dough requires attention and a good mood. Without a good mood, you may not start baking.

To make poppy seed pies you need:

  1. a glass of water and the same amount of milk;
  2. a pinch of salt;
  3. 100 grams of sugar or more if you have a sweet tooth;
  4. active yeast per 1 kilogram of flour;
  5. about a kilogram of flour;
  6. 100 grams of poppy seeds;
  7. 100 raisins;
  8. a tablespoon of honey;
  9. one chicken egg or just the yolk.

First I mix milk with water and heat this mixture over low heat. I add sugar and a little salt, literally a pinch, into this mixture. And I scatter dry yeast on top of the milk and water. I let it sit for a minute and stir everything thoroughly with a spoon.

I knead the dough exclusively with my hands. This is the only way to accurately determine the exact amount of flour. I mix in the flour until the dough becomes pliable and soft. At this point, I dump the dough out of the bowl onto the countertop and knead it well. The better the dough is kneaded, the more magnificent the pies will turn out in the end.

I cover the container with the dough with cling film and wrap it with a warm towel. I put it in a warm place for an hour. During this time, you can prepare the filling for the pies. Poppy seeds and raisins work well together to create a sweet and flavorful filling. And in order to give the pies a more delicate taste, I pour boiling water over the poppy seeds and raisins. I leave it like this for 30 minutes.

I drain the water from the raisins and squeeze out the excess liquid with my hands. Within 30 minutes the poppy completely absorbs all the water and becomes very soft and swollen. Now the poppy seeds and raisins need to be chopped. An immersion blender works best for this, but I put everything through a meat grinder. Add a tablespoon of honey to the resulting mixture. It turns out to be a very sweet and tender filling.

  • salt - 1 pinch.

  • poppy seed - 1 cup;
  • sugar - 0.33 cups;
  • softened butter - 50 g;
  • raisins or other dried fruits - 0.5 cup;
  • nuts (almonds, walnuts, etc.) - 120 g;
  • cognac or other strong alcohol - 2 tbsp. l.;
  • zest of 1 orange.

In addition, you will need vegetable oil to fry the pies.

Cooking technology:

Well, all the products are prepared, and if not all, then don’t be upset: pies with poppy seeds will still be delicious, even if you don’t have nuts, raisins, cognac or zest on hand. Therefore, feel free to begin the sacred rite.

1. Prepare the filling for pies with poppy seeds. First, fill the poppy seeds with hot water (you will need 1 cup) and simmer over low heat after boiling for about 7 minutes. Turn off the heat and leave for another 15 minutes without removing the lid. Drain the water.

Steam the raisins for 10-15 minutes with hot water (boiling water). Place raisins in a sieve to drain excess water.

Mix raisins, poppy seeds and nuts, grind in a meat grinder or blender.

Add the chopped zest there. Before doing this, wash the orange thoroughly with hot water, dry it and remove the zest with a fine grater. Pour sugar into the mixture, add butter, pour in cognac and mix everything thoroughly.

2. Start preparing the dough for the pies. Lightly beat the egg with sugar and a pinch of salt, add vegetable oil and kefir.

The flour must be sifted and combined with baking powder. Gradually pour into the resulting liquid and quickly O knead a thick dough.

3. Divide the dough into portions, form them into neat balls, roll in flour and roll out flat cakes the size of a small saucer.

Place a tablespoon of filling in the middle of such a circle, and then carefully, but carefully, pinch the edges.

4. Fry the pies over medium heat on different sides. A sign of readiness will be a beautiful, appetizing golden-colored crust.

She prepared everything delicious for the guests’ arrival, but of all the festive dishes, I remember the poppy seed pies the most! I have never tried poppy seed cakes like this before or since. It was full of poppies!!! Not like the current store-bought buns - three popcorns in the middle. IN THOSE pies there was more sweet, tasty poppy seed filling than fluffy, rich dough. Well, my grandmother’s friend’s grandson and I got our hands on these pies while the adults were talking in another room... 😀 I don’t remember how many pieces were eaten, but when I got home, I slept until the middle of the next day. Mom and grandma were even scared at first, what was this? And then we remembered: yeah, pies with poppy seeds! Everything is clear.
The story about amazingly delicious pies with poppy seeds charmed the children, however, I wanted to try again... And I promised the children that I would bake them pies from my childhood. 🙂 I suggest you try it too. Just don’t overeat like we did then! 🙂


I made the dough according to my favorite recipe for rich yeast dough - the pies made from it are very tasty, fluffy, sweet!


Ingredients:

Yeast dough for pies with poppy seeds:

  • 35-50 g of fresh yeast (in the original recipe 50 g, but less is possible, I checked);
  • 2-3 eggs;
  • Half a glass of sugar;
  • 125 g butter or margarine;
  • ¼ - ½ glass of warm milk or water;
  • About 3.5 cups flour;
  • A pinch of salt;
  • ¼ cup sunflower oil.

Poppy filling for pies:

  • 200 g poppy seeds;
  • Sugar to taste.

You can add raisins and nuts, but those same pies only had poppy seeds!

How to bake:

Grind the yeast with 1 tablespoon of sugar, and when it melts, pour in warm milk and stir. Then sift 0.5 -1 cups of flour and knead a thin dough without lumps - a dough. Place the bowl in a warm place, covered with a towel.

Beat the eggs with a mixer with the rest of the sugar, and melt the butter.

After 15-20 minutes, when the dough has risen, add the fluffy whipped egg-sugar mixture, warm (not hot) butter, and mix. Gradually sifting the flour in portions, knead a soft dough that does not stick to your hands. Along with the last portion of flour, add sunflower oil to the dough.

After kneading the dough, cover it again with a towel and put it in a warm place for 20 minutes. Meanwhile, let's prepare the poppy seed filling. To prevent the poppy from becoming bitter, I pour boiling water over it, and when it cools down, I strain it. Some housewives do not steam poppy seeds, but boil them in milk, but I have not tried this.

Then, ideally, the poppy seeds should be ground in a mortar and pestle until milk of the poppy is obtained, so that the filling is tasty and sweet. I didn’t have a mortar, so we mixed the poppy seeds in a blender. Add sugar to taste and the filling is ready!


Punch down the risen dough and dust the table with flour. Separating small pieces from the dough, roll them into circles (or simply knead them into flat cakes with your hands).

Place a generous amount of poppy seed filling in the center of each flatbread (just be careful not to overdo it so that the filling doesn’t come out over the edge).


Carefully pinch the edges and place the pies, seam side down, on a baking sheet greased with sunflower oil (or lined with parchment).


I turn the oven on low and place the baking sheet with the pies on top of the stove to let them rise while the oven warms up.

Place the pies in the oven (by the way, that’s why they are baked pies with poppy seeds, because they are baked in the oven) - at 180-200C for 20-25 minutes. Let’s carefully look in and check: the pies have arrived, have the crust “set” on them and is starting to brown? It's time to brush our pies with beaten egg to give them a beautiful, golden brown crust!

Having greased the pies with a pastry brush, put them back in the oven for 5-7 minutes, turning up the heat. When the pies become this rosy, it’s time to take them out!

  • 100 gr. butter
  • 2 tbsp. sunflower oil

  • 250 gr. poppy
  • sugar and milk

    Dough for pies with poppy seeds

  • These poppy seed pies are made from rich yeast dough, so we immediately put in the dough. Heat the milk to 38-40 degrees. Crumble pressed yeast into warm milk. The yeast should be fresh, uniform in color, have a pleasant yeasty smell and crumble well. If the yeast looks like putty, then it is stale and not suitable for baking.
  • Place one tablespoon of flour and sugar into the dough, stir, and place the dough in a warm place for 30 minutes. During this time, the yeast multiplies intensively, and the dough greatly increases in volume.
  • Add the remaining ingredients to the dough: eggs at room temperature, sifted flour, sugar, salt, 2 tbsp. vegetable oil, as well as slightly warmed butter.
  • Mix everything thoroughly, cover the pan with a clean towel and place in a warm place for an hour or two. While the dough is rising, prepare the poppy seed filling.
  • Filling for pies with poppy seeds

  • To make poppy seed pies, poppy seed rolls or poppy seed buns delicious, it is important to choose a tasty poppy seed. It sounds a little strange, but it turns out that not all poppies are the same. Poppy seeds with large poppy heads are more tasty; they are more oily and aromatic. Therefore, if you have a choice, then stop your gaze on this poppy. It's a little more expensive, but worth it.
  • Heat a glass of milk over the fire. Pour poppy seeds into boiling milk.
  • Boil the poppy seeds for five minutes over low heat, cover with a lid and turn off the heat. Leave the steamed poppy seeds to steep.
  • Before preparing poppy seed pies, carefully strain the poppy seeds. If this is not done, the remaining milk will flow out of the pies.
  • Add sugar to the steamed poppy seeds. For every 100 gr. add 2 tbsp poppy seeds. sugar, you can use less, but then the poppy seed filling will be less sweet. It is advisable to grind the filling in a mortar.
  • Making pies with poppy seeds

  • Place the pastry dough on a table generously sprinkled with flour. It should be noted that three and a half cups of flour are used to knead the dough, but then you will need a little more flour for kneading.
  • Knead the dough properly to make it easier to work with the dough, moisten your hands in vegetable oil. A well-kneaded dough should easily separate from your hands and the table.
  • Divide the dough into several parts, form sausages, which we cut into smaller pieces.
  • Roll out a small cake with a rolling pin or pull it out with your hands. Add a spoonful of poppy seeds.
  • We form pies with poppy seeds. Carefully pinch the seam. We do the same until we stick all the pies.
  • Fried pies with poppy seeds

  • The juiciest and most delicious poppy seed pies are pies fried in oil. To do this, heat the oil in a deep fryer or just in a small saucepan.
  • Place the pies in hot oil. Fry the pies until they are beautifully golden brown.
  • Place the finished pies with poppy seed filling on paper napkins to remove excess fat. Serve pies warm or cold. Even the next day they are very tasty and juicy, but usually these pies do not stay stale until the next day))).
  • Poppy seed pies fried in a frying pan are no less tasty. As usual, heat the pan and place the pies seam side down.
  • Fry the pies over medium heat with the lid on. When one side is browned, turn it over to the other. These are the beauties they turn out to be.
  • And the third way to prepare poppy seed pies is to bake them in the oven. Place the pies on a baking sheet, seams down, grease the baking sheet itself with margarine or place a layer of baking paper (tracing paper).
  • Leave the pies for half an hour in a warm place so that the dough rises again.
  • Brush the top of the pies with egg yolk. Since before Easter I baked poppy seed pies in the oven for myself (they are lower in calories) and at the same time fried them in oil for my husband and son (they don’t need to watch their figure), I missed this moment, but it still turned out delicious.
