This tender can be prepared during Lent, because the recipe does not contain eggs, butter or milk. This is a very quick recipe, the total time taken is 30 minutes. The dough is kneaded approximately as in, only bananas will be its main ingredient. You can use overripe fruits with blackened skin. If you have a few bananas lying around that have long been ripe, then feel free to bake them into this simple and delicious tea cake!

Vegan Banana Pie Recipe

We will need:

  • 4-5 ripe bananas;
  • 1 cup flour;
  • 0.5 cups brown sugar;
  • 3-5 tbsp. spoons of vegetable oil;
  • 0.5 glasses of water;
  • 5 pitted dates;
  • half an apple;
  • soda on the tip of a knife.

In a deep bowl, mix bananas and dates using a blender. Add vegetable oil, sugar, water and soda to the banana puree. Beat with a blender (you can use a mixer). Sift the flour and beat again. The consistency of the dough will be similar to charlotte. Don't forget to turn on the oven to preheat in advance.


To bake this pie you need baking molds made of silicone, metal or any other one you have. You can use a springform cake pan or a silicone muffin pan. I had a round metal baking dish on hand. We either grease it with oil, or sprinkle it with flour, or cover it with baking parchment.


Pour our banana dough into the mold. Decorate the top of the pie with banana and apple slices. Place in an oven preheated to 200 degrees for 20-25 minutes. Ready banana pie You can sprinkle with powdered sugar if desired. It is very tasty to serve the pie for tea with sweet dried fruits and ice cream. The inside of the pie turns out a little moist, as if it was not fully baked, this is due to the bananas. The taste is simply amazing and without extra calories!

Let's take:

  • at least 4 overripe bananas (it’s better to take overripe ones 😉) - I usually take 5-6 pieces
  • 300 gr. flour
  • 150 ml vegetable oil (or melted butter - if not Lent)
  • 1/4 teaspoon salt
  • 100 grams of sugar (a little less is possible)
  • 1 dessert spoon of baking soda, slaked with vinegar or lemon juice

I usually bake this banana muffin with eggs, but since it's Lent, I decided to experiment and bake a banana muffin without eggs. And my experiment was a great success, I think.

The most important thing here is bananas. They play a key role.

And I usually take them either very soft or medium soft. But not those that you can eat for pleasure. Now, when my son either wants to eat bananas or doesn’t, it often happens to me that we don’t have time to eat bananas... And then I make this cupcake...

Let’s peel the bananas, mash them a little with a fork (you can, of course, do this with a blender, but personally I’m too lazy to wash it afterwards (cough cough), and I prefer the taste when there are pieces of banana in the cupcake itself. 😉

As you can see, I got bananas from very dark to quite decent on the outside - this top banana happened to be here by chance - there were simply no more overripe ones, and those that were were not enough...

So, mash the bananas with a fork and set them aside.

In a large bowl, mix flour, salt and sugar.

Then add a dessert spoon of baking soda, slaked with vinegar (this time I slaked it with vinegar, but usually I still prefer to do it with lemon juice).

Turn on the oven to 180 degrees and continue.

Add odorless vegetable oil to the flour and mix the oil into the flour.

Don't worry about it being too thick. After all, overripe bananas are quite wet... And they quickly do their job.

Add mashed bananas to the butter-flour mixture and stir until smooth.

As you can see, the dough turns out to be quite liquid.

Pour it into a mold greased with vegetable oil and place in a preheated oven for about 40-50 minutes.

Despite the fact that I preheated the oven to 180 degrees, I bake the cake itself at 160-170. Look at your oven, because here you need to focus on a specific oven, which only you can know better. It is important that the dough does not bake too much before it has time to rise. That's why I prefer slower baking...

This is such a handsome, tanned handsome guy in the end. 😉

There are two ways to determine whether a cake is ready - I usually look if the edges of the cake or cupcake have already “moved away” from the pan, then it’s ready. But to be sure, of course, it’s better to check with a “dry match” (you can use a toothpick), just keep in mind that pieces of bananas can get caught and they will show “wet”...

Eggless Banana Cake ready! You can sprinkle it with powdered sugar or spread it with jam, but although I am a lover of sweets, I am not that much of a fan. I like this cupcake just like that - without any coating or decoration. 😉 The cake is quite moist, sweet and has a strong banana flavor.

Then, when I run out, I will definitely post a non-lenten version of this cupcake. It is also tasty and worthy of attention. 😉 Although, I admit, I personally even like this one better.

What do you need for a pie with banana curd filling?

Filling:

  • Soft cottage cheese - 400 g.
  • Bananas - 4 pieces.
  • Brown sugar - 100 g.
  • Ryazhenka 4%, or natural yoghurt without additives - 50-70 ml.

The beneficial properties of cottage cheese are determined by its healing composition. Milk protein - casein, contained in cottage cheese - has a high nutritional value and can replace animal proteins; 300 g of cottage cheese is the daily dose of protein necessary for the body. The minerals contained in cottage cheese contribute to the formation and strengthening of bone tissue.

Dough

  1. Whole grain wheat flour - 400 g.
  2. Baking powder - 2 teaspoons.
  3. Brown sugar - ¾ cup.
  4. Milk - 1 glass.

How to make a pie with curd filling

  1. For the dough, mix flour with baking powder, add sugar.
  2. Add milk. Knead into a soft sticky dough.
  3. Place the dough in a silicone baking dish.
  4. Distribute the dough along the bottom of the mold. You can form small sides around the edges.

Preparing the filling for the pie.

  1. Grind the cottage cheese with sugar using a fork.
  2. Add fermented baked milk or yogurt to the cottage cheese with sugar and grind until a homogeneous mass is formed.
  3. Peel the bananas and place them in a baking dish directly on the dough.
  4. Spread the curd mixture on top of the bananas and level it out.
  5. Bake the pie in the upper part of the oven at 180 degrees C for 40 minutes.

Let the finished pie cool slightly, remove it from the mold and serve warm.

Banana pie without flour and eggs. 7 easy banana pies.

Ingredients
Banana (2 - for dough, 1 - for decoration) - 3 pcs.
Kefir – 500 ml
Sugar - 100 g
Semolina - 200 g
Baking powder - 3 tsp.
Vanillin (to taste, pinch)
Powdered sugar (for sprinkling)
Lemon juice (a little for drizzling bananas on top of cake)


Mix semolina with granulated sugar. While stirring constantly (so that there are no lumps), pour in kefir. Add baking powder and vanillin. Mix thoroughly.
Peel bananas (2 pcs.) and cut into slices.
Preparing the form. If silicone is used, then simply spray the mold with water; if it is a regular mold, grease it with oil and sprinkle with breadcrumbs.
Pour out half the dough. Lay out the bananas.
Fill with the remaining dough and place in an oven preheated to 180* degrees. Bake for 40 minutes. Depending on the features of your oven, baking time may vary! We look at the appearance of the pie and check the readiness with a wooden stick (or toothpick). Dry - the pie is ready.
Remove from the oven and let cool in the pan to room temperature.

Transfer the pie to a plate. Sprinkle with powdered sugar through a strainer. We cut the third banana into slices, sprinkle it with lemon juice (so as not to darken), decorate the pie with it

Option 2 with banana and kiwi

1 large banana and 2 kiwis

Margarine - for greasing the pan.

Banana pie preparation:
Mix the salt, sugar and milk thoroughly with a mixer or whisk until the salt and sugar are completely dissolved.
Then add flour - mix. The dough should have the consistency of soft plasticine, a little softer than for cookies.
Divide the finished banana pie dough in half, placing one part in a mold greased with margarine.
Peel the bananas and cut into long slices, which are placed on the dough in the form. Then cover everything with a second layer of dough and bake in an oven preheated to 180-200°C.

Banana Pie 4
ingredients:
butter or margarine - 100 g,
eggs - 2 pcs,
sugar - 1.5 cups,
flour - 2 cups,
baking powder - 2 teaspoons,
vanilla sugar - 1 teaspoon,
salt - on the tip of a knife
milk - 150 ml,
bananas - 2 pcs

Pour the batter into a greased or parchment paper-lined springform pan.
Bake the pie at a temperature of 180-190 degrees for 30-40 minutes.
