Probably no housewife can do without pickled tomatoes for the winter. And everyone has their own favorite recipe, or even more than one. I also preserve tomatoes in different ways, but my favorite is the one I present here. It is my favorite because it is very easy to remember - the marinade is very simple to prepare. For a liter of liquid (water), we take one large spoonful of sugar, table vinegar and salt. Everything is very simple, you can’t confuse it.

As for filling the jars, here, in addition to the traditional carrots, onions and garlic, I will also add parsley - greens and roots. Both the tomatoes and the marinade turn out so tasty that everything is used: both the liquid contents of the jar and the solid ones.

We will prepare the ingredients for preparing tomatoes and parsley for the winter according to the list, and wash the tomatoes.

I start canning tomatoes by preparing the marinade. The fact is that while the marinade is boiling, I just have time to fill the jars. I calculate the amount in this way: I believe that the liquid will take up half the volume in the jar. This, of course, is approximately, the jar can be filled more or less tightly, try to guess, it is better to prepare a little more marinade. I fill the jar as tightly as possible.

I immediately put the jars and lids to sterilize. The lids just need to be boiled for a few minutes, and the jars are sterilized over a teapot for about 7 minutes.

In the meantime, the marinade is being prepared and the jars are being sterilized, I will start preparing the ingredients: I will peel the onions, parsley root, carrots and garlic.

At the very bottom of the jar I put spices, carrot and onion rings (3-4 rings in each jar).

I pack the tomatoes as tightly as possible to the top, garlic cloves, parsley root, cut into thin rings (3-4 rings per jar), parsley.

Fill the jar with marinade.

Next, we need to sterilize each jar of tomatoes. To do this, fill the pan with warm water and place a stand for the jar inside. Place the jar on the stand and cover with the lid. Sterilize jars at low boil for 12 minutes (liter).

We remove the jar and screw it tightly (twist-off) or roll it up with a key.

We'll keep it upside down for three hours.

Tomatoes and parsley are ready for the winter. You can use them after a couple of months.

No special conditions are required for storage.

Cut the tomatoes in half, if they are large, then into four parts. Place them on top of vegetables and herbs.

Boil water and pour tomatoes completely. Cover with a sterilized lid and leave for 10 minutes.

Pour the water into the sewer.

Add 2 large tablespoons of salt. Add granulated sugar to the tomatoes.

Add aspirin, citric acid, peppercorns.

Pour pre-boiled water over the tomatoes and parsley. The water must be boiled.

Tighten the jar with a key.

The workpiece should be turned upside down and covered. Keep until completely cool, then transfer to storage until winter in a cellar or pantry.
