Sequence of dough preparation: slightly frozen butter should be grated coarsely. Place the product in an empty, deep bowl.
Break the eggs there. Mix everything thoroughly with a spoon.
Pour warm, almost steamed, milk into the bowl with the liquid mixture. Mix everything again.
Add sugar and salt to the liquid mixture. Pour yeast into the same bowl.
Add flour in small portions to the bowl. Gently knead the dough with your hands. Collect the resulting dough into a ball and leave in a cup for an hour. The bowl with the dough should not be removed anywhere; the container with the contents should remain on the table. Room temperature is ideal for rising dough.
Making pies with potatoes and sausages.
Make mashed potatoes as usual. Coarsely grate the cheese and place in a bowl with the potatoes.
Fry finely chopped onion in vegetable oil. Place the onion in a bowl with potato mixture. Mix the filling well.
Place some of the dough on a floured table. Divide a large piece of dough into pieces weighing 40 grams each. Press the pieces into a flatbread. Place the potato filling in the middle of each flatbread; a tablespoon of filling will be enough.
Form pies into your favorite shape with your hands. Place the products on a baking sheet. Brush the top of the products with beaten egg. Bake for 30 minutes in an oven preheated to 180 degrees.
Roll out the remaining dough into a thin layer. Use a knife to cut long strips, each about 2 centimeters wide.

Let's start cooking:
Heat the milk in the microwave, dissolve dry yeast in it, adding a tablespoon of sugar. Let stand for 20 minutes. A cap will appear on the dough, which means you can continue kneading the dough. Break an egg into a container, pour in the dough, add sunflower oil and add flour a little at a time. The dough should not be rough and hard, let it stick a little to your hands. Cover the container with a towel and put it in a warm place.
While the dough is rising, make the filling. Boil potatoes in salted water and mash them. Chop the onion and fry in a small amount of sunflower oil. Mix onion with puree. Boil the sausages, cut lengthwise. Meanwhile, the dough is rising, after 40 minutes you need to press it down a little with your hand and let it rise again. It will take about 1 hour. The dough is ready. Cut off small pieces, make balls and roll out the dough to a thickness of 7 millimeters. Place potatoes on it and sausage in the center. Let's seal it up. Fry in hot oil until golden brown.
Potato pie recipe with sausages
Ingredients:
Yeast dough – 400 g;
sausages – 5 pcs.;
potatoes – 3-5 pcs.;
onion – ½-1 pcs.;
rosemary – 1 sprig;
vegetable oil – 2-3 tbsp. l.;
eggs – 1 pc. (yolk);
salt;
pepper.
Sausage and potato pie is not only delicious, but also looks funny. In addition to purchased yeast dough, they also use homemade dough, made in their own way; the potato filling can be replaced with cabbage, assorted vegetables, meat or another at your discretion, and instead of regular sausages, you can choose hunting sausages.
Boil the potatoes in advance and mash them. Fry onions in vegetable oil with rosemary leaves. Mix the puree and sauté, add salt and pepper to taste and let the filling cool completely.
Roll out a little more than half of the defrosted dough into a layer about 3 mm thick, and use a plate to cut out a circle with a diameter of 27-30 cm.
Having removed the casing, we arrange the sausages in a “house” along the edge of the circle.
We fold the dough, covering the sausages, then cut the side with the filling every centimeter.
We turn out the “rings” with pieces of sausages, alternately pulling them left and right - we create a kind of edging for our pie.
Fill the empty center with potato and onion filling.
From the remaining dough we form a thin circle, for decoration inside we make, for example, a cross-shaped cut. We also cut the four resulting petals inside and turn them through the hole once or twice.
Cover the central hole with, say, a small ball and fasten the petals. We scatter a dozen more miniature koloboks around the borders. Lubricate the workpiece with yolk diluted in water and place in a hot oven for 35-40 minutes. Bake a pie with sausages and potatoes at a temperature of 180 degrees.
I tried these pies for the first time in a cafe in Yevpatoria. Light and tasty dough and tasty filling. I would like to suggest a dough option for fried pies. We cook it with kefir, without adding eggs. This dough is great for making pies fried in a frying pan. It is very obedient, pleasant and easy to work with. The filling will be mashed potatoes and sausage. These pies make a great snack. They are filling and very tasty!

Let's knead the dough, it should be soft (much softer than dumplings) and elastic, it should resemble an earlobe, as our grandmothers said. Cover the dough and leave to ferment for an hour and a half in a warm place. After 40 minutes, knead. After about an hour and a half, the dough will increase in size by 2-3 times. It's ready.
While the dough is fermenting, we will prepare mashed potatoes by adding butter to it.
Tear off portions of the dough.
Spread each piece into a flat cake. Place potato filling and a piece of sausage in the middle of the flatbread.
