    Beat the egg with a fork and pour into warm kefir (room temperature).

    Add melted butter there.

    Sift the flour and pour into the kefir mixture. Don't forget to add baking powder (you can mix it with flour).

    Stir the dough. While it has not yet become homogeneous and dense, add spices and spices to it to your taste. Knead the dough until all ingredients are combined.

    Grate the cheese or cut into pieces.

    Cut the ham into very small cubes. If you cut it coarsely, it will be difficult for the dough to rise and the muffins will turn out dense.

    Mix cheese and ham into dough.

    The dough will be denser than for sweet muffins; it will fall from the spoon in a lump rather than pour out.

  1. First of all, preheat the oven to 190°.
  2. Pour milk or kefir into a bowl or other convenient container, break the egg and add salt.

  3. Take a whisk and mix, beating a little.

  4. We extinguish the soda over a bowl and sift the flour into it.
  5. Mix everything again.
  6. Rub a piece of cheese with the fine side of a grater and add it to the bowl.

  7. We cut the ham or sausage into small cubes and also add it to the other products. You can add any seasonings

  8. Mix everything together.
  9. Grease the molds, no matter what kind you use, with oil. You can sprinkle a little semolina or flour.

  6. Melt margarine or butter in a metal bowl.
  7. Beat the eggs and salt a little. I use a whisk for this, but you can use a blender or mixer.

  8. Pour the required amount of kefir or milk into another convenient container.
  9. Combine, stirring, kefir with beaten eggs and margarine.
  10. Using a sieve, sift the flour into the liquid mixture.
  11. We extinguish the soda.

For this I squeeze lemon juice, but you can use any vinegar.

For some reason, it is always customary to start preparing muffins by mixing all the liquid ingredients, so we turn on the oven to heat up (we need a temperature of 180 degrees) and put 75 ml of milk, one egg and 25 g of soft butter into a deep container. We also add a quarter teaspoon of salt there. Roughly stir the liquid ingredients using a fork.


Now let's prepare something that will make snack muffins out of ordinary muffins. Cut 100 g of ham into small cubes. Grate 70 g of any hard cheese on a coarse grater, and finely chop the washed parsley.


Add ham, cheese, parsley to the container with the liquid ingredients of the muffin dough. Then add 125 g of flour and half a teaspoon of baking powder.


Mix the snack muffin batter with a fork until more or less homogeneous (no need to try too hard).


I ran out of paper muffin liners, so I had to grease the muffin cups with a little butter and dust them with flour (this method of preventing the dough from sticking to the pan is called “French shirting”).


Divide the batter between six muffin cups. Spread the dough with a spoon.


At this point, the oven has already warmed up to the desired temperature (at least mine), so we send the muffins to bake. Bake time: 25 minutes or until muffins are lightly golden brown.
