  • 1 cup flour - 140 g
  • 150 g sugar
  • 1 tsp baking powder
  • 150 g melon pulp
  • 250 g plums
  • 1 tsp cinnamon
  1. Beat the eggs with sugar using a mixer - not to stiff peaks, but until the sugar dissolves. Continuing to beat, gradually add flour mixed with baking powder.
  2. Grease the mold with butter and sprinkle with a little flour. Place the pitted plum halves, cut side down, and sprinkle with cinnamon. Top with sliced ​​melon cubes. Pour the batter, distributing it evenly over the fruit.
  3. Place in the oven preheated to 200ºC for 35 minutes. Cool the finished upside-down pie on a wire rack and invert onto a plate.

And although this classic pie is usually prepared with apples, since they are affordable, believe me, charlotte is no less tasty with melon.

This sweet pastry is so easy to prepare that even a novice cook can handle it, especially if you cook it in a slow cooker. You need to choose a melon that is not very soft, with bright orange pulp. We prepare biscuit dough for charlotte, and, thanks to the stir-cooker, the charlotte turns out slightly moist at the base, fluffy and tall. The main thing is to beat the eggs with sugar for a long time and do not open the multicooker during the cooking process so that the dough does not “sink.” Then our charlotte will come out unusually airy.

All that remains is to invite guests for a cup of tea or coffee. In the fall, you can also use plums and other seasonal fruits to make charlotte. You can also cook it with melon pumpkin. Feel free to experiment!

This charlotte will be prepared not according to the classic bread recipe, but in its more famous version - using biscuit dough.

Set of products for cooking

  • 1.25 cups flour;
  • 1 glass of kefir;
  • 2 chicken eggs;
  • 4 slices of melon;
  • ½ cup sugar;
  • 2 tablespoons brown sugar;
  • 1 teaspoon cinnamon;
  • 1 teaspoon baking powder;
  • Vanillin (to taste).

Cooking method

  1. First you need to take a deep bowl, in which all further actions will take place. Pour sugar into this bowl and then break 2 eggs one by one. Using a mixer or whisk, you need to start gently whisking these two ingredients together.
  2. After a large amount of white egg foam has formed, you can add kefir and vanillin and continue beating for a few more minutes until smooth.
  3. Now into the container with the egg-kefir mixture you need to add the entire volume of sifted premium wheat flour, as well as baking powder (can be replaced with soda, slaked lemon juice or vinegar). After which the dough needs to be beaten again with a whisk or mixer so that the finished biscuit is fluffy and airy, as required by the recipe.
  4. When all manipulations with the whisk or mixer are completed, the dough should be poured into a deep mold for preparing bulk cupcakes (during the cooking time, the cake almost doubles in size, which is why high sides of the mold are needed). If you use a silicone mold for baking, then you do not need to grease it with oil; the cake will come away from the sides just fine; if you use an iron or metal mold, then you either need to cover the bottom with baking paper or grease it thoroughly with oil.
  5. When the dough is already in the muffin tin, it's time to work on the melon. It must be carefully cut into slices, peeled, all seeds removed and the slices cut into small pieces or squares.
  6. Now these pieces need to be placed in random order on top of the dough, it is desirable that the entire surface of the future melon pie is covered with filling. After all, this gives an absolute guarantee that the dessert will be truly delicious, and also incredibly beautiful.
  7. The preparation of melon pastries ends with the future pie simply sprinkled with ground cinnamon and brown sugar on top. The proportions of these two ingredients can be adjusted depending on preferences, as you like.
  8. After all the ingredients are used and the charlotte is formed, there is only one thing left - baking. Melon pie is baked in an oven preheated to 180 degrees for about a quarter of an hour (25–30 minutes). Readiness can be determined using a wooden stick or a toothpick: if there are particles of batter left on it when sticking it in, then you need to keep the dessert in the oven a little longer, otherwise it may turn out to be raw.

Tip: if the charlotte starts to burn a little on top, but at the same time is not completely baked, then you should cover it with a sheet of foil. With its help, the charlotte will not burn and will bake much faster.

In the end, all that remains is to remove the charlotte from the oven, cut it into several pieces and serve. By the way, this delicious melon pie will look equally good either cold or hot and will be an excellent alternative to the long-loved apple recipe.
