The study covered 36 popular brands. The result is paradoxical: 19 manufacturers had shortcomings, while 10 others, on the contrary, exceeded the requirements of GOST!

Better than the best examples

Kefir of ten trade marks are recognized as the best of the best. They formed the top 10 brands. These are House in the Village, Ruzsky, Ostankinskoye 1955, 36 kopecks, Avida, Tommoloko, Agrocomplex, Nezhegol, Parmalat and Prostokvashino. There are no traces of antibiotics in the products of these brands, in addition, they have a high protein content.

Kefir "Vkusnoteevo", "Dmitrovsky Dairy Plant", "Kubanskaya Burenka", "Derevenskoye Molochko", "Shepherd", Goodness Farm and Zorka were recognized as quality products.

No dangerous amounts of radionuclides, heavy metals and organochlorine pesticides were found in the studied kefir. Poisonous mold toxin (aflatoxin M1), Staphylococcus aureus bacteria and pathogenic microorganisms were also not detected.

Without antibiotics

Experts of Roskachestvo did not reveal any excess of antibiotics in any product. However, traces of preparations of the tetracycline group were still found in 9 out of 36 kefirs. This is not a violation of the law, but such goods will not be able to receive the State Quality Mark.

Kefir was studied according to 35 indicators. In addition to Russian manufacturers, the study included three Belarusian brands. Most brands are produced in Moscow, Belgorod, Bryansk, Vladimir, Vologda, Voronezh, Kaluga, Novosibirsk, Veliky Novgorod, Ryazan, Saratov, Tomsk, Leningrad Region, Moscow Region, Kabardino-Balkaria, Bashkiria, Kuban and Stavropol.

But in 19 brands, the study revealed various kinds of shortcomings. An excess of bacteria was found in six brands of kefir. In the kefir "Sun of the Kuban", "Budennovskmolprodukt", "Davlekanovo", "Dairy products from Dubrovka" and "Dairy plant" Stavropolsky "found E. coli, and in the kefir" Okolitsa "was mold.

Race for the cheap

Kefir producers sometimes add starch to the product, although in small quantities - up to 2%. Starch is found in kefir "Budennovskmolprodukt", "Davlekanovo", "Village Milk", "Good Burenka" and "Narodny".

There were no problems with the fat content of the tested kefir. All samples were as advertised.

"Kefir is a product that does not require and is almost never counterfeited," says Artem Belov, executive director of Soyuzmoloka.

Vegetable fats were found only in four cases out of 36. These are Budennovskmolprodukt, Dairy products from Dubrovka, Narodny and Pyatigorsky. Kefir differs from the kefir product only in the ferment used. Therefore, as Elena Yurova, head of the VNIMI technochemical control laboratory, explained, the presence of vegetable fats in the product indicates its falsification.

But manufacturers are in no hurry to put yeast in kefir. By the end of the expiration date, a smaller amount of yeast than required by regulatory documents turned out to be in kefir of the Big Mug, Dobraya Burenka, Korovka from Korenovka, Milava, Molochny Spring, Pyatigorsky, Savushkin trademarks Product", "Fresh Tomorrow" and "Sheksninsky Butter Plant". However, here the flaws may not be during production, but during storage. According to the expert's conclusion, it is better not to buy kefir of these brands at the end of its expiration date - it will be a completely different product.

The protein content in kefirs of the brands "Dairy products from Dubrovka", "Milk patterns" and "Snezhok" does not correspond to GOST, although these drinks were made according to the standard.

For a complete analysis of the milk component of kefir, experts evaluated the mass fraction of SOMO (dry skimmed milk residue). The higher this indicator, the higher the quality of the product. A low SOMO may indicate either that low-quality milk was used to produce kefir, or that part of the product was replaced with additives, such as starch. A low SOMO was recorded in kefir "Budennovskmolprodukt", "Good Burenka", "From the village of Udoevo", "Milk patterns" and "Narodny".

"Budennovskmolprodukt" excelled in one more thing - underweight kefir. The net weight of kefir was lower than stated. The consumer of kefir of this brand pays 10% of the value of the goods for ... emptiness. The mass of kefir turned out to be only 450 grams with the declared 500.

The cheapest ryazhenka is sold in soft bags. In Moscow, however, this type of packaging has been a rarity for quite a long time. Yes, a soft bag is not a very practical thing, but in view of the minimum price, it definitely has the right to exist.

The most common "container" for fermented baked milk, perhaps, is the TetraPak cardboard box. Its advantages are a sufficiently long shelf life, practicality and convenience. But such packaging is, of course, somewhat more expensive than a regular plastic bag.

Finally, sometimes you can find fermented baked milk in bottles - plastic or glass. This is also a practical and convenient container, although, to be honest, glass bottles are heavy and too expensive: ryazhenka in such bottles usually costs from 100 rubles. Plastic bottles are a good compromise.

Product weight

Nowadays, manufacturers are very fond of playing with the mass of the product. Hence the appearance of such original weight options (in the case of fermented baked milk) as 330 grams, 420 grams, 470 grams. But quite often there is also a classic - 500 grams. For modern fermented baked milk, a fairly long shelf life is considered acceptable: 7-14 days, if we are talking about TetraPak cardboard boxes. Ryazhenka in soft plastic bags is stored less: 3-5 days.

Prices and brands

In the end, I will briefly describe my personal impressions of ryazhenka from different brands.

  • Every day- is sold in Auchan and is the cheapest fermented baked milk from this list. In my opinion, more or less decent for its price. True, the quality of dairy products of this brand (owned by Auchan), alas, tends to vary slightly depending on the batch and specific products.
  • Russian milk- when this ryazhenka cost 25 rubles / 500 grams, it was the best, in my opinion, in terms of price-quality ratio. Now it costs 32-33 rubles. Sold in Pyaterochka, Perekrestok ("Russian Milk" is the x5 Retail Group's own brand). Quite a decent ryazhenka, I buy it from time to time. Fat content 3.2%.
  • House in the village- despite my skepticism towards this brand, I can’t say anything bad about Domik v derevne ryazhenka. However, there is nothing special about it either. Fat content 3.2%. It costs about 35 rubles / 500 grams, sold everywhere.
  • Ostankinskoe- no better than the "House in the Village", but it costs a little more: at the Crossroads - 42 rubles. Fat content is lower: 2.5%.

  • Vologda- the only ryazhenka in this list made from whole milk. Good, solid, thick. Fat content 4%. Sold in Magnolia and Magnet, it costs 33-34 rubles / 470 grams.
  • - also a good and solid fermented baked milk, but from normalized milk. Fat content 3.2%. Sold in Magnit and many other stores, it costs from 30 rubles / 420 grams. Magnit is the cheapest.

The first stage of verification is the qualifying round. The members of the jury are the buyers. They can only vote for one of the designs whose names are hidden. The people's jury liked the ryazhenka "Vkusnoteevo".

“I really liked this ryazhenka: it is drunk well, moderately thick, with a rich creamy color - like a real ryazhenka should be”, - shared the participant of the popular vote about the product under number 2.

The leading position of the product was maintained until the very end. The most serious test - an independent laboratory examination showed that it is Vkusnoteevo fermented baked milk that is richer in useful microorganisms than others. “An important indicator in assessing the quality of ryazhenka is the content of lactic acid microorganisms. It is their number that determines how useful ryazhenka is, - Olga Maksimenko, expert of the testing center of the program, comments.

The hosts of the Control Purchase program said that ryazhenka is an ideal fermented milk product for those who cannot tolerate milk protein, and those who want to reduce sweet curds and yogurts in their diet. Ryazhenka perfectly quenches thirst in hot weather, it can be drunk after a plentiful feast, it will help get rid of heaviness in the stomach, improve digestion and much more. And Elena Baikova, a visiting nutritionist, advised viewers to drink at least 1 glass of fermented baked milk a day.

At Molvest, a manufacturer of dairy products under the Vkusnoteevo brand, the victory of ryazhenka was a pleasant surprise, but not a surprise. In production, they said that to get real fermented baked milk, the product is simmered for several hours. GOST allows only two ingredients in the composition of fermented baked milk - milk and sourdough. And even milk must certainly have a fat content of 3.5 - 4.5%. At the heart of Vkusnoteevo ryazhenka is milk of the highest quality from its own farms. Today, more than 23,000 cows of special breeds - Jersey and Montbéliarde - live in the Molvesta complexes. Their milk is high in fat and high in protein and is ideal for even the most "capricious" dairy products.

It is worth noting that Vkusnoteevo brand products have participated in the Test Purchase program three times over the past 5 months and have become winners three times. So, in November, butter with a fat content of 72.5% was recognized as the best, and in December - 1% kefir.
