For example, we very often prepare jelly cake for no reason, just because it is very tasty and just with its bright appearance it lifts the mood.

To prepare the Broken Glass jelly cake we will need:

  • 3 packs of jelly (I have cherry, lemon and kiwi flavored jelly)
  • 1 packet of vanilla sugar (10 - 15 grams)
  • 500 grams of sour cream (I use 15% sour cream)
  • 1 sachet of gelatin (20 g.)
  • 3-4 tablespoons sugar
  • 150 ml milk

You can buy jelly with the flavor that you like, that is, strawberry, peach, kiwi, raspberry, orange, lemon... It is better to take jelly of different colors, then the jelly cake will be colorful and bright.

The photo shows the ingredients for the Broken Glass jelly cake: gelatin, vanilla, sour cream and jelly of different colors. I have three bags, you can take more bags if you wish, but then you will need twice as much sour cream and gelatin.

I look on the Internet, many people put a layer of cookies or biscuit on the bottom of the mold, for example, I like just jelly without cookies.

We dilute the jelly according to the instructions on the package; it says for 1 pack of jelly you need 400 ml of hot boiled water.

I pour the jelly into a half-liter jar, fill it with hot boiled water (400 ml), mix everything well until the gelatin is completely dissolved.

I pour the finished jelly into molds or bowls, whatever suits you. Next, wait for the jelly to harden.

The frozen jelly is cubed. You can cut it into small cubes, you can cut it into large ones, we tried both ways, it turns out more beautiful when you cut the jelly into small cubes, but not very finely.

Now about the sour cream. It tastes best when you buy homemade sour cream, but it’s also delicious with store-bought sour cream.

First, dilute gelatin in a small amount of hot water, about 100 ml, leave to swell. But the photo shows that vanilla is added to gelatin, I wanted to experiment a little, but the best thing is to add vanilla to sour cream.

Then mix the sour cream with sugar, add gelatin to the sour cream. But gelatin immediately comes in lumps. Therefore, I put sour cream with sugar, vanilla and gelatin on the fire, add milk and heat it well, stirring constantly, but do not boil, so the sugar and gelatin dissolve well. Why do I do this? It’s just that gelatin hardens very quickly, and if you warm it up, you need to cool it, but it immediately starts to harden, add it to sour cream, and lumps form.

Next, we put our chopped jelly into any form, so that later we can fill it with sour cream. I use a square baking dish, so the jelly can then be cut into beautiful squares. Distribute the jelly cubes evenly according to shape and color.

Now fill the jelly with sour cream jelly.

It is necessary that all the jelly is evenly filled with sour cream. If desired, you can add pieces of fruit and berries to the jelly cake.

Next, the jelly cake should harden well. It hardens quite quickly, within about a couple of hours, especially if the mold with the jelly cake is taken out into the cold, I take it out onto the balcony or put the jelly cake in the refrigerator.

This is how beautiful it turns out. We prepared such a jelly cake for our son’s birthday, the children, adults and children were delighted. Can be cut into rectangles and served in portions.

How to make Broken Glass Cake with Fruits and Cookies

The “Broken Glass” cake can be prepared with either multi-colored jelly or any fruit you like. I decided to make it with fruit. It is much tastier and healthier, without any dyes and flavors that are contained in the finished jelly. For fruits I used kiwi, orange, banana, strawberry and black currant.
So, peel the kiwi and cut it into thin circles, and then into pieces of any shape. But, it should be remembered that kiwi reduces the gelling properties of gelatin, so you don’t need to add a lot of them to such a cake.

We peel the oranges and also cut them into circles, and then into small triangles.

Cut the strawberries in half, and larger ones into 4 parts. It's winter, so I used frozen strawberries and blackcurrants, which I thawed slightly. And in the summer, when there is an abundance of fresh berries, such a cake will be even tastier and more aromatic.

Lastly, cut the banana into slices.

Let's prepare sour cream jelly. In general, this cake can be made not only with sour cream, but also with yogurt or milk; in any case, it will turn out delicious.
So, combine sour cream with sugar and vanilla, and beat with a whisk or mixer. To make the grains dissolve faster, it is better to take fine sugar or use powdered sugar. I used a coffee grinder, it crushed the sugar literally in a matter of seconds.

Dissolve gelatin (I use instant gelatin). Pour 2 tablespoons of gelatin with hot water (70-80 degrees) and stir until completely dissolved. Cool slightly.
If you have a different gelatin, prepare it according to the instructions on the package.

Add the warm gelatin into the sour cream in a thin stream, stirring quickly all the time. As soon as the sour cream jelly is ready, we immediately begin to assemble the cake so that the jelly does not harden.

Line a deep bowl with cling film so that its edges hang down slightly. This is necessary so that you can easily get the finished cake later. You can use any other mold, a silicone muffin mold works well. As a rule, they have a beautiful raised pattern, and your cake will take the same shape.
Let's start assembling the cake. First, place some of the fruit on the bottom of the bowl.

Break the cookies into small pieces and place them in a thin layer on the fruit. I used Napoleon biscuits; you can take a sweet cracker or make a Broken Glass cake with sponge cake, which is cut into small cubes. You can prepare it yourself according to any recipe or buy it ready-made in the store.

Then, again lay out a layer of berries and so on until the form is filled. The last layer is cookies. In total I got 3 layers of fruit and cookies. First, let's prepare everything necessary for the jelly layer. You can make your own jelly from fruits and berries, but I prefer store-bought, as it is brighter. It makes the cut cake look so much more fun. The fat content of sour cream does not matter, and it is important to check the expiration date of gelatin when purchasing, otherwise the result may not be as expected.

We dilute the jelly of each color with boiling water, while halving the amount of water indicated in the instructions so that the composition is more dense after hardening. So, instead of the recommended 400 ml of water, I added only 200.

Cool to room temperature, then leave the jelly to harden in the refrigerator for an hour or two.

At this time, prepare the biscuit. You can make a cake without a crust, but it is a good base, and it’s also richer and tastier. Let's prepare all the ingredients needed for the sponge cake.

Beat the eggs and sugar in a blender until the mass increases in volume and becomes white; the sugar should completely dissolve.

Sift the flour into the egg mixture, add baking powder and lemon juice, mix everything carefully with a spoon.

Grease the springform pan with butter; if you have parchment paper, it would be a good idea to line the pan with it. Pour the biscuit dough into it.

Carefully open the oven door to protect the sponge cake from settling, and use a match to make sure it is ready (the match should remain dry).
  4. While the biscuit is cooling, prepare the fruits and berries. Wash, dry, peel, cut (small berries can be placed whole).
  5. Now let’s start preparing the jelly for the “Broken Glass” cake with fruit. Thoroughly whisk the sour cream and sugar. Add the swollen gelatin and mix.
  6. All the components of the cake are ready, all that remains is to assemble it.
  7. I prefer to use a springform pan, it's very convenient. Place a biscuit on the bottom of the mold (if it was baked in another). I cut it into 2 cake layers, since the whole cake is thick, put one in the mold, and break the second one into the middle of the cake, but this is optional.

  10. Before serving, remove the pan from the refrigerator, carefully remove the sides and transfer the cake to a plate. We cut it and eat it right away. It cannot stand for long, otherwise it will leak. But it won’t last long, because it’s amazingly delicious!

  • Most often they prepare the “Broken Glass” cake with sour cream, but you can also add cottage cheese, but then it is better to take not grainy, but homogeneous, low-fat, and beat it with milk until the consistency of sour cream.

3. Now you need to prepare gelatin for the creamy base. To do this, pour 1 tbsp into a glass. with a heap of gelatin and fill with cold boiled water. Let it swell for 30 minutes. We take a break for 15 minutes.

4. Check the multi-colored jelly for readiness. If it is ready, immerse the glasses in hot water and wait until the jelly begins to lag behind the walls of the glass. You need to immerse it in hot water gradually (put it in and take it out) and very carefully so that the glass does not crack due to a sudden temperature change. This is especially true for glasses with thin walls. Remove the jelly by turning the glass over onto a plate. Cut the jelly into cubes. It is advisable to choose two rich and contrasting jellies for dessert, then the “Broken Glass” cake will turn out to be the brightest and most impressive.
  2. In the meantime, prepare the sponge cake. Without separating the whites/yolks, combine the eggs with sugar. Beat with a mixer for 5-7 minutes (until a fluffy thick mass is obtained).
  3. In several steps, add the sifted flour to the egg mixture, stirring it each time with a spoon or spatula. We achieve a homogeneous and smooth biscuit dough without flour lumps.
  4. Melt the butter until liquid. Once cooled, pour along the sides of the bowl into the dough. Mix the mass carefully.

  10. We immerse containers with frozen colored jellies in a bowl of hot water for 25-30 seconds, and then turn them over onto plates. Using a knife, cut each jelly into large pieces.
  11. We remove the peaches from the syrup and also cut them quite coarsely.
  12. We separate the pieces of jelly one by one from the total mass and load them into sour cream. Next add the peaches. Gently mix the mixture with a spoon to distribute the additives evenly. Place the cake on top, pressing it into the cream. Place the dessert in the refrigerator for 4-5 hours or overnight - the sour cream jelly should completely harden.
  13. Place the bowl with the finished cake in a bowl of hot water for 30 seconds or simply blow it on the outside with a hairdryer. Then cover the container with the jelly mass with a large plate and turn it over. Remove the bowl, cut the dessert into portions and serve.
