  • Cucumber or tomato brine – 1 cup.
  • Sugar – 1 glass.
  • Refined sunflower oil – 1 cup.
  • Vanillin – 1 sachet.

  • Vinegar – 1.5 teaspoons.
  • Flour. It is difficult to say exactly how much flour will be used in this case. Much depends on the quality of the flour, its moisture content, and even the humidity level of the room in which the baked goods are prepared. Therefore, just in case, take 500 g of flour; during the cooking process it will be clear how much it will take.

Preparation procedure:

Pour sugar into a deep bowl.

Pour in the brine.

Stir everything thoroughly with a whisk until the sugar is completely dissolved.

Now add vegetable oil.

Start adding sifted flour in small portions, kneading the batter. The consistency should resemble mayonnaise.

Like this:

Add vanilla.

Quench the soda with vinegar and pour into the dough.

Stir everything well. Now very carefully, little by little, add the remaining flour to the mixture, kneading the already stiff dough with your hands.

Be careful not to overdo it with flour. The dough should be thick, mold well, but remain elastic and not dry.

Roll out the finished dough into a layer 0.8-1 cm thick and cut out the figures using any mold or glass.

Place the cookie dough on a baking sheet and brush each one with strong, sweet tea leaves.

Bake in the oven at 180 degrees until lightly browned, about 20 minutes.

Banana Lenten Cookies

Incredibly exquisite cookies with a noble exotic taste. There is no shame in serving such a delicacy even to guests. Be sure to try it, and most likely you will want to cook this miracle not only during Lent.

Prepare the necessary products:

  • Bananas - 2 medium fruits.
  • Honey – 1 full tablespoon.
  • Sugar – 100 g.
  • Unscented vegetable oil – 120 ml.
  • Soda - 1 teaspoon.
  • Lemon juice – 2 tablespoons.
  • Flour – 250-300 g.

Tip: it is very good to replace refined sunflower oil with corn oil in this recipe. Its subtle sweetish aroma perfectly sets off the exotic taste of bananas.

Preparation:

Break the peeled bananas into pieces and place in a bowl.

Add honey and sugar there.

Now gently mash the banana pieces together with the additives into a single mass with a fork. Under the influence of sugar and honey, the fruit crumples very easily, and you don’t have to bother with a blender.

Pour in lemon juice.

This is what you should end up with lemon-banana puree.

Its aroma just makes your mouth water, but don’t rush, the base for the cookies is not ready yet, so you shouldn’t try the puree too much - you risk eating everything clean.

So, now pour vegetable oil into the banana mixture,

add soda (there is no need to extinguish it, since the puree already contains lemon juice) and mix everything well again.

Sift the flour and add it to the banana puree in small portions, kneading a thick dough.

Do not make the dough too stiff; its consistency should be quite soft, so that it can barely be molded. As soon as the dough stops sticking to your hands, do not add more flour.

Now form the dough into small balls.

Place them on a baking tray covered with baking paper.

Bake in the oven at 180-200 degrees for 20 minutes, but be careful not to burn the delicacy.

The finished cookies turn out incredibly tender and crumbly.

Ginger crumbly cookies

If you have ever tried Tula gingerbread, you will definitely remember their divine, bright, unlike anything else taste. This is a lifelong love for every connoisseur of quality sweets. So, ginger cookies taste very much like the famous Tula gingerbread cookies, but they are prepared much faster and easier.

  • Apple jam – 0.5 cups.
  • Cocoa – 0.5 cups.

  • Flour – 1 cup.

  • Whole almonds – 1 handful.

Let's start baking:

To begin, place all the dry ingredients in a bowl: flour, starch, sugar, salt, baking powder, cocoa and spices.

Mix everything. Add jam.

Pour in vegetable oil. Knead a stiff dough. If the dough turns out too dry and crumbles, pour 1-2 tablespoons of water into it.

Roll the finished dough into round balls the size of a walnut.

Place the balls on a baking tray covered with baking paper. Press 1 almond nut into the surface of each ball, slightly flattening the ball itself into a hemisphere.

Bake in the oven at 190 degrees for 10-15 minutes.

Lenten cookies with carrots

From such a seemingly modest and unpretentious product as a carrot, you can prepare a very tasty delicacy of an incredibly beautiful orange color, which has a subtle and appetizing aroma of real caramel. This is the interesting effect this vegetable gives in sweet baked goods. Well, the necessary fiber and carotene contained in carrots turn this sweetness into a rather healthy dish.

Prepare the necessary products for carrot delicacy:

  • Carrots – 3-4 pieces, larger and juicier.

And, of course, various dried fruits, nuts, honey, citruses and much more, thanks to which Lenten cookies are not only surprisingly tasty, healthy, but also beautiful.

Choose vegetable oil for Lenten cookies that is odorless and cold pressed.

Flour should be sifted before baking; this will enrich the product with oxygen, making the dough airy and incredibly tender.

You can use any sugar: regular, brown or cane.

Nuts and dried fruits must be of high quality. Honey for Lenten cookies can be either flower honey, buckwheat honey, linden honey, or anything else that suits your taste.

To add flavor, use cinnamon, ginger, mint, vanilla, and citrus zest.

From almost any dough from the above recipes you can make Lenten cookies in the form of a basket, which can be filled with fresh fruits, nuts and other goodies.

You will need:

  • unscented sunflower oil 1/3 cup

Tomato juice can be replaced with any other juice, sweet soda water, coconut, almond or soy milk, coffee, kvass, beer and even cucumber pickle. Mix tomato juice, sugar and vegetable oil in a bowl until the sugar dissolves. This can be done with a regular spoon. I mixed it using a blender in literally half a minute. If the juice was in the refrigerator, warm it up so the sugar will dissolve faster.

Gradually add flour- first 1 glass, mix until smooth, using a blender.

Add baking soda quenched with vinegar and another 1.5 cups of flour. Leave some of the flour on the table for kneading. Now knead the dough with a spoon or spatula.

Place the mixture on the surface and, adding flour, knead into a smooth dough.

Divide the dough into three parts, form into balls, place in a bowl, cover with film and refrigerate for at least 1 hour, or overnight. I added to one part raisin(1/3 cup), which must first be sorted out to remove debris, washed and dried with a napkin. If you decide to add raisins to the entire dough, you can do this earlier in the mixing bowl.

Remove one ball of dough from the refrigerator, roll it out to 1/2-inch thickness, and cut out cookies using any pastry cutters.

Now there are all kinds of shapes and cutouts for cookies on sale, but the simplest method, which I usually use myself, is to cut out with a glass or a shot glass. For variety, you can use glasses of different diameters. You can also cut the rolled out dough into diamonds using a regular knife.

Tomato juice can be replaced with any other juice, sweet carbonated water, coconut or soy milk, kvass, beer, fruit puree, cucumber pickle. The main thing is that the liquid does not contain animal products, only in this case the cookies will be lean.
You can add cocoa, cinnamon, cardamom, chopped nuts, seeds, candied fruits or dried fruits to the dough.

Mix tomato juice, sugar and vegetable oil in a bowl until the sugar dissolves.

Required ingredients:

  • three apples;
  • half a glass of vegetable oil;
  • two glasses of flour;
  • salt;
  • baking powder – 1 tsp;
  • half tsp cinnamon;
  • two sticks of cloves;

Preparation step by step:

  1. Mix salt with flour, baking powder, sugar and cinnamon in a bowl.
  2. Pour water into the pan, add cloves and oil. Bring to a boil and remove the cloves.
  3. Add hot mixture to dry ingredients.

Quickly made Lenten apple cookies are tasty and crispy.

In order for lean baked goods, in particular cookies, to be loose, tender, and not hard, they need to be prepared on the basis of leavening ingredients without the use of such usual products for home baking as eggs, butter, milk. Lenten oatmeal cookies
