ingredients:

  • 500 gr - Wheat flour
  • 2 pcs - Chicken egg
  • 40 gr - Salt
  • 170 ml - Milk
  • 20 ml - Vegetable oil
  • 2 g - Allspice
  • 1 pc - Bay leaf
  • 20 gr - Onion
  • 100 ml - Chicken broth
  • 10 g - Butter
  • 100 gr - Sour cream
  • Mushroom mince

cooking method:

Sift the flour through a fine sieve into a clean, dry bowl. Then add warm milk, 15 grams of salt, beaten chicken egg and vegetable oil to the flour bowl. Add all ingredients gradually, while constantly kneading the dough with your hands.

After the dumpling dough is kneaded to a dense, homogeneous mass, cover the bowl with a towel and place in a cool place to steep for two hours.

Pour a little flour onto the table and, on a flour-dusted table, use a rolling pin to roll out the finished dumpling dough into a sheet 2 mm thick. Then cut out circles with a diameter of 5 - 6 cm from the dough. Circles can be cut out using a glass cup or a special metal ring.

Then, place the prepared minced mushrooms in the center of each circle. Each dumpling should contain 5 grams of minced meat.

Then carefully fasten and pinch the edges of the dough to form closed dumplings.

After the dumplings are prepared, they must be frozen so that the dough does not open in the future.

Peel the onions, rinse, dry and cut into large petals.

Then the dumplings need to be boiled. Pour water into a clean metal pan and boil. Then add chicken broth, allspice, bay leaf, onion and salt to the pan. Cook for 5 minutes. How to prepare chicken broth is described on another page.

Then place the frozen dumplings in the pan and cook for another 7 - 10 minutes, until the dumplings are fully cooked.

After the dumplings are cooked, carefully remove them from the pan with a slotted spoon and place them in a deep plate. Place butter on top of the dumplings and let it melt completely. Serve dumplings with sour cream.

How to cook minced mushroom

ingredients:

  • 350 gr - Champignons
  • 60 gr - Onion
  • 10 ml - Vegetable oil
  • Salt, pepper to taste

cooking method:

Clean the champignons from dirt, rinse thoroughly and dry. Then cut the mushrooms into medium cubes and fry in a frying pan in vegetable oil until golden brown.

Peel the onions, rinse and dry. Then cut the onion into medium cubes and fry in vegetable oil in a frying pan until golden brown, i.e. sauté the onion.

Then mix the mushrooms and sautéed onions in a suitable bowl. Add salt and pepper to taste. Gently mix the minced meat with your hands until smooth. The mushroom mince is ready.

Dumplings have long become a common dish in every family. This is a tasty, satisfying and quick meal - it is precisely for these qualities that almost everyone, young and old, loves it. But not everyone can eat traditional ones - some are on a diet, others are vegetarians, and some are simply “bored” of them. For such cases, there is an alternative - the classic filling can be replaced with a mushroom one. The result will be no less tasty and satisfying dish than the familiar dumplings with minced meat. Of course, you will have to put in a little effort, because sculpting these products is a rather lengthy process, but the result is worth it. The original and aromatic mushroom filling will not leave you or your guests indifferent.

Ingredients

  • For the test:
  • Water - 250 ml;
  • Salt - 1 tsp;
  • Wheat flour - 500 g;
  • For the filling:
  • Mushrooms - 500 g;
  • Onions - 200 g;
  • Sunflower oil - 30 g;
  • Salt;
  • Ground black pepper;
  • Butter to taste.

How to cook delicious dumplings with champignon mushrooms

First you need to prepare the dough for dumplings with mushrooms, as it needs to rest for some time. Pour flour into a convenient deep bowl, after sifting it through a fine sieve. Make a well in the center. Pour water at room temperature into a separate bowl, add salt and stir until the crystals are completely dissolved. Pour it into the hole you made.

You can start kneading the dough. You need to do this with your hands until all the flour is wet. If you see that there is not enough liquid, add water little by little until you achieve the desired result.

Once all the flour is wet, turn the dough out onto the countertop. Continue kneading it with your hands until smooth. Since the dumpling dough should be stiff, kneading it is quite difficult and will require some effort. At the end of the kneading, cover it with a towel and leave for 30-40 minutes at room temperature.

While the dough is infusing, you can make the mushroom filling. Peel the onion, wash it well and cut into small cubes. Heat vegetable oil in a frying pan, add onion and fry until lightly browned over medium heat.

Any mushrooms will do, as long as they are fresh. This recipe uses mushrooms. Wash them thoroughly and cut into thin slices. Add the champignons to the onions, stir and add a little salt. Fry over moderate heat until the mushrooms are cooked. The cooking process creates a lot of moisture, increase the burner flame until all the liquid has evaporated. Then reduce the heat and continue frying. When the mushrooms are ready, season them with ground black pepper and salt to taste. Turn off the heat and cool the filling.

Grind the filling in a meat grinder.

During this time, the dough should sit and become softer, more homogeneous and pleasant to the touch. Divide it into four parts and work with each separately. Cover the remaining pieces with a towel.

Roll out a piece of dough into a thin layer. Take a glass or cookie cutter and cut out circles of the desired diameter.

Using a teaspoon, place a little mushroom filling in the center of each circle.

Lift the edges and secure well with your fingers. Connect the corners. At this stage, the preparations can be frozen in the freezer or cooked immediately.

Place the pieces in boiling salted water and cook for about 7-10 minutes. When the dumplings float to the surface and boil, they are completely ready.

Remove the hot mushroom dumplings from the water with a slotted spoon and transfer to a deep bowl.

Season with a piece of butter, stir and serve immediately. Dumplings can be sprinkled with fresh herbs and topped with your favorite sauce. Bon appetit!

Today we have a traditional Russian dish on our table - dumplings. Is it possible to pass by? Dumplings are loved and recognized by different peoples. They have many names and variations of preparation: Nepalese, Italian, Japanese, etc.

Dumplings with meat made from unleavened dough are a classic option. I propose to deviate from the classic recipe and prepare dietary dumplings with minced mushrooms.

We will take the ingredients for dumplings with mushrooms from the list.

To begin with, the simplest dumpling dough is kneaded. Pre-sifted flour is poured into a glass bowl. To make the dumplings tasty, it is better to use premium wheat flour for the dough.

During the process, water diluted with salt is introduced.

It is more convenient to start kneading the dough with a spoon or spatula, and then switch to manual kneading. The dumpling dough, formed into a bun, is kneaded by hand for at least 7 minutes until completely elastic. Then it is placed under cling film and sent to rest in the refrigerator.

The rested dough is divided into four parts.

Each part forms a thin sausage. The sausage is cut into pieces. The pieces are rolled in flour and laid out on a board.

Then roll out into thin circles with a diameter of no more than 7 cm.

Place a teaspoon of filling in the center of each circle. For the filling I use prepared for the winter. The minced meat is defrosted and mixed. You can make minced meat from fresh champignons fried with onions.

The edges are sealed into a crescent and then connected with a ring. During the process of rolling and sculpting, flour is added to the “dust”. Dumplings with minced mushroom are placed in boiling water. The water is pre-salted and seasoned with bay leaf.

Cook dumplings with mushrooms until they float completely. During cooking, lift from the bottom of the pan with a slotted spoon.

Diet dumplings with mushrooms are ready! Served hot. Have a nice Russian lunch.

Remove the soaked mushrooms from the water by squeezing them. Pass through a meat grinder or grind in a food processor.

Finely chop the onion and fry until golden brown in a frying pan with a small amount of vegetable oil.

Combine onions with mushrooms, salt and pepper to taste. The filling is ready.

Prepare dumpling dough.

Pour the flour onto the table and make a small depression in it. Break the eggs into it, add salt and pour in water, kneading the dough. You can add a tablespoon of vegetable oil to make the dough softer. Knead the dough thoroughly.

Divide the dough into several parts, roll each of them out with a rolling pin on a table sprinkled with flour one at a time. The thickness of the dough should be approximately 2-3 mm. Make sure that the dough does not turn out too thin, otherwise it will tear.

Using a suitable glass or shot glass, cut out circles from the layers of dough. Place minced mushroom in the center of each circle and form dumplings.

Ready dumplings need to be frozen.

Boil the dumplings in boiling salted water with bay leaves and your favorite spices for no more than 10 minutes from the moment of boiling. Cooking time depends on the thickness of the dough.

Serve the dumplings hot with sour cream, melted butter, mayonnaise, pepper, and mustard. Whatever you prefer.
