Cheese soup with celery is a delicious and incredibly aromatic first course. It’s not at all difficult to prepare, and it turns out so bright, rich and original that your family will definitely appreciate its amazing taste. The beauty of this soup is the spicy chunks of celery in a delicious cheese broth, and it's delicious served with crispy croutons.

  • vegetable broth or spices/bouillon cubes- 1 l

Cooking method

There are no spices here, because the main duo is celery and cheese. And also, if you want, bouillon cubes. It’s better not to overload this delicate soup with spices, but nutmeg (on the tip of a knife) can highlight its merits.


Put 1 liter of water on the fire, throw in the cubes. The broth will cook, bring to a boil and reduce the heat to low. Grate the melted cheese onto a coarse grater. Moreover, you can choose absolutely any cheese (Dutch, Druzhba, Russian or For salads)


In the meantime. Peel, wash and finely dice the onion. Heat oil in a frying pan and add onion. Fry until transparent.


Now wash, peel and chop the celery stalks. First, loosen the stem into strips and you can chop as you like. Add celery to the onion, stir and cover with a lid. Reduce heat to low and simmer for about 10 minutes.


The broth is ready, and the vegetables are simmering under the lid. It's time to add grated cheese to the broth and simmer over low heat without boiling.


After the time has passed, add the vegetables to the broth and heat the soup base to a boil. Stir and simmer over low heat for about 10-15 minutes. Remove the prepared soup from the stove (you can add ground nutmeg) and let it brew for 5 minutes.
Fry the croutons.

Ingredients: - celery - 200 g (1 stalk); - carrots - 100 g (1 pc); - potatoes - 100-150 g (1-2 tubers); - onion - 50-70 g (1 pc. );- vegetable oil – 4-6 tbsp;- flour – ½ tbsp;- milk – 300 ml;- boiled water – 300 ml;- salt – ½ tsp;- green onion, dill for decoration; - crackers for serving.

If you want to lose weight on celery soup, use skim milk. In this case, the recipe allows for replacing the water with strained vegetable or chicken broth.

Peel potatoes, onions, carrots and rinse under running water. Grate on a coarse grater. Wash the celery (stem and leaves) and chop finely. Heat 1/3 of the total amount of oil in a frying pan, add the onion and saute it for 5-7 minutes. Add the carrots, stir and simmer covered for 10 minutes. Pour in half the oil specified in the recipe, add potatoes, stir and continue to simmer for another 10 minutes. Pour the remaining oil into the pan, add the celery and simmer with constant stirring for 15 minutes.

Sprinkle the prepared vegetable mixture with flour, stir and cook for another 3 minutes, then grind everything in a blender. Add milk and water as you mix. If your blender bowl is small, add liquid as much as possible, then transfer the resulting puree to a saucepan over medium heat and add milk and water while stirring vigorously. Bring to a boil, let simmer for 1-2 minutes, add salt and remove from heat. Serve with chopped green onions and dill; place a separate dish with croutons.

If you don't have a blender, you can rub the stewed vegetables through a sieve. Just do this while they are still hot. Also, do not delay adding milk and water to the resulting puree. Then the cream soup will turn out very tender, without lumps

Bonn soup

Ingredients: - celery – 1 bunch with a root; - carrots – 5 pcs.; - sweet bell pepper – 2 pcs.; - onions – 5 pcs.; - white cabbage – 0.8-1 kg; - fresh tomatoes – 5 pcs.; - salt to taste; - fresh greens for serving.

Peel the celery, onion, and carrots, cut into cubes (chop the celery leaves with a knife). Place the tomatoes in boiling water for a minute, remove the skin and chop. Place the vegetables in a saucepan, add water so that it barely covers them. Place the pan on the fire and cook for 15 minutes. Then remove the finished vegetables with a slotted spoon and rub through a sieve or grind in a blender. Add shredded cabbage and bell pepper, cut into strips, from which the seeds have been removed in advance, into the broth. Cook for 10 minutes over high heat, and then on low until fully cooked. Before finishing, about five minutes later, put the vegetable puree into the pan, add salt and stir. Bonn soup according to the classic recipe is ready. Even if you are on a strict diet and your goal is to lose weight, you can safely eat this soup in any quantity.

Celery soup with cheese

Ingredients: - celery root – 500 g; - onion – 1 pc.; - red apple – 2 pcs.; - Parmesan cheese (Parmigiano Reggiano) – 100 g; - cheddar cheese – 100 g; - vegetable broth – 3 cups; - cider – ½ glass; - vegetable oil – 4 tbsp. l.; - salt and pepper to taste; - greens for decoration to taste.

You can replace cider and weak apple wine with juice from sour apple varieties. You can also use other cheeses, remembering, however, that classic cheese soup with celery is prepared with the specified types of cheeses

WILL BE NEEDED

250 g celery stalk

Half a celery root

1 onion

4 potato tubers

3 tbsp. olive oil

2 l. chicken broth

1 egg yolk

100 ml. cream 30% fat

100 g grated cheese

2 tbsp. l. lemon juice

Parsley and celery

Salt, ground black pepper to taste

COOKING

1. Peel, wash, dry and grate the celery. Peel the onion and chop finely.

2. Peel the potatoes, wash them, cook for 15 minutes, let cool slightly and cut into cubes.

3.Heat olive oil in a frying pan, add onion and fry for 3 minutes. Add celery, sprinkle with flour, stir and fry for 5 minutes.

4.Put the vegetables fried with flour into a saucepan, pour in the broth, put on the fire and bring to a boil. Add potatoes and cook for another 5 minutes. 5.Mash the soup in a blender. Place on the heat again and bring to a boil, stirring constantly.

6. Grind the egg yolk with cream, add to the soup and bring to a boil again. Salt and pepper. Remove from heat, pour in lemon juice and sprinkle with cheese.

7.Sprinkle with chopped herbs. When the cheese begins to melt, pour the soup into bowls and serve.

Wash celery and onion, dry, peel and cut
