How many delicious things can you make from one jar of puree? Alphonso mango? We ended up with seven whole dishes! Although the most correct way to use Alphonso mango still remains eating it with a big spoon in its original form, Karifood I set up my own experiment, preparing two types of ice cream, several sauces, clafoutis, pancakes, Scottish cookies and a refreshing lassi from 850 grams of the sweetest puree!

1. Spicy lassi

For two servings of spicy lassi you will need:

3 cardamom pods

ground ginger, nutmeg, cinnamon and red hot pepper

100 g cold puree Alphonso mango

200 ml yogurt

100 ml milk

Grind cardamom with a pinch of ginger, nutmeg, cinnamon and pepper in a mortar. In a blender bowl, beat milk, yogurt, mango puree and sifted spices. Pour into glasses, drink immediately, repeat immediately if necessary.

2. Pancakes with plum-mango sauce

For pancakes you will need:

2 cups flour

1 tsp soda,

50 g puree Alphonso mango

1 glass milk or yogurt

3 tbsp. l butter

vinegar for slaking soda

For the sauce:

50 g Alphonso-mango puree, 3 large sweet and sour plums.

Sift the flour into a deep bowl. Add mango puree and a teaspoon of baking soda slaked with vinegar. Melt butter in a saucepan. In a separate bowl, beat the egg, add milk (or yogurt), melted butter and mix the mixture well with a whisk. Stirring constantly, pour the beaten egg with milk and butter into the flour and puree and stir until smooth. Heat a frying pan and fry the pancakes, scooping out the batter with a large tablespoon. The pan does not need to be greased with oil; the butter in the dough will prevent the pancakes from burning. Each side of the pancake is baked for one and a half to two minutes until golden caramel color.

3. Spicy Chocolate Chip Ice Cream

For ice cream for 6 servings you will need:

200 g puree Alphonso mango

pinch of red chili powder

200 g natural yogurt

30 g dark chocolate

Blend mango puree, peppers, bananas and yogurt until smooth in a blender. Grate the chocolate.

Prepare the dough in a bowl: a glass of flour, 1 egg, mango puree and plums, mix all this carefully until smooth, adding milk to the dough. Pour the resulting mass into a mold with fruit, place slices of two peaches cut in half on top and place in a preheated oven. Bake the clafoutis for 35 minutes at 180 degrees. Then turn off, sprinkle with powdered sugar and let the cake cool. Clafoutis is eaten without taking it out of the mold, using spoons. Whoever gets the most peaches from the pie is dexterous and cunning!

6. Scottish scones

To make Scottish scones you will need:

100 g puree Alphonso mango

1.5 cups flour

3 cups oatmeal

100 g butter

1 tsp soda

1/3 cup milk or yogurt

vinegar for slaking soda

In a bowl, mix flour, cereal, puree, slaked soda. In a separate bowl, beat eggs and milk. Melt the butter and pour it into the milk-egg mixture. Carefully pour the liquid into the bowl with the flour, cereal and puree. Knead soft dough. Sprinkle a large flat plate with flour, place half of the dough on it and use your hands to form a round cake. Using a knife, cut it like a pizza into 6-8 wedges.
