Butter test Neva cheeses. How to find and choose high-quality butter on store shelves

According to the results of a study by Roskachestvo, Rospotrebnadzor and Rosselkhoznadzor, trademarks of butter were identified, which turned out to be counterfeit. This was reported to Izvestia in Roskachestvo. We are talking about products that contained vegetable fats instead of animal fats, although there was no information about this on the product label.

On behalf of the former Deputy Prime Minister Arkady Dvorkovich, an inspection was carried out on the dairy market in February-March. Roskachestvo, Rospotrebnadzor and Rosselkhoznadzor investigated butter, milk and cottage cheese. The first organization bought products in stores, and departments checked them in their laboratories.

As Rospotrebnadzor explained to Izvestia, the results of the check are general, they were recognized only if they were confirmed by the laboratories of Rospotrebnadzor and Rosselkhoznadzor at the same time, then they were already transferred for generalization. To date, based on the results of an audit in the dairy market, 37 administrative fines have been imposed for a total of 2.5 million rubles, the Rospotrebnadzor added.

As Roskachestvo told Izvestia, vegetable fats were found in 10 out of 82 brands of butter with a fat content of 72.5%. This means that butter could not be called butter - it should be made only from animal, milk fats without any vegetable additions. Roskachestvo noted that the research protocols were sent to all companies.

We are talking about such oil names as "Appetizing all year round", "Budennovskmolprodukt", "Volzhanochka", "Peasant from Bashkiria", "Lav product", "Seryshevsky", "Sulimovskoye", "Sulimovskoye" Bashkirskoye "," TD Smetanin "and" What you need. These brands, according to the information on the packaging, were made from "pasteurized cream", which was not true. The results of the checks were confirmed by the Rosselkhoznadzor and Rospotrebnadzor, the services told Izvestia.

According to Roskachestvo, in real terms, counterfeit products account for 13.5% of the total market. At the same time, oil with various types of violations accounts for more than 25% of the market.

Some manufacturers, in an interview with Izvestia, admitted that their products were falsified. Manufacturers "Milkgroup" (oil "Budennovskmolprodukt"), "Molsyrkombinat Volzhsky" (oil "Volzhanochka") noted that the reason for the incident lies in the violation of the technological process. Both companies produce spread (margarine) and butter, and violations occurred during the transition from the production of one product to another. As a result, manufacturers have tightened control on production lines.

Representatives of "Ekomilka" (oil "What you need") stated that the company did not receive any research reports on the violations found. The company noted that they are ready to protect their reputation in the future.

Baltkom Uni (appetizing all year round oil) does not recognize the results of the study. A representative of the manufacturer told Izvestia that the company does not use non-dairy fats. The producers Love Product (oil of the same name), Seryshevsky (oil of the same name), Chelyabmaslo (Peasant from Bashkiria), IP Timoshkin, Tander (TD Smetanin) did not respond to Izvestia's request.

According to representatives of Rospotrebnadzor, the results of inspections do not give grounds to talk about mass falsification of butter on the Russian market.

For oil, 12% of the samples did not match the content of vegetable fats, thus, information about the mass falsification of dairy products with vegetable fats is not confirmed, the Rospotrebnadzor emphasized.

Artem Belov, Executive Director of Soyuzmolok, noted that consumers are unlikely to be able to meet counterfeit products in retail chains. As a rule, it is sold only in individual stores in the regions. He is sure that in order to solve the problem of counterfeiting food products, it is necessary to tighten the responsibility for the production of counterfeit products. So far, the work of not a single plant has been suspended due to the manufacture of such products, he stressed.

Amendment

Baltkom Uni LLC is not a manufacturer of Appetitno all year round oil.

The editors apologize for the mistake.

Since 2016, Roskachestvo has tested 74 brands of butter with a fat content of 82.5%. 9 manufacturers received the highest rating at once. 19 brands received 0 points due to the presence of dangerous bacteria or vegetable fats. Responsibility for damage to goods may lie with both the manufacturer and the supplier.

Butter is an indispensable ingredient in cooking. A good product gives a rich taste to both complex pastries and the usual morning sandwich. A large-scale study by Roskachestvo, launched in 2016, will help you choose the best butter.

To conduct the study, experts chose the most common type of oil with a fat content of 82.5%. It is often called "Traditional", and it's not just about popularity: the Russian GOST defines just such a name.

The first stage of the study took place back in 2016, when experts tested the products of 64 brands. The results of the audit were so popular that in 2018 experts studied 10 more brands. Thus, over 3 years, 74 types of oil were tested in the Roskachestvo laboratory.

Experts checked each sample for 68 indicators reflecting the safety and quality of the product. The testing methodology is based on the requirements of GOST 32261-2013. At the same time, Roskachestvo presented more stringent requirements for some indicators, such as the content of yeast and mold.

Rating of the best and worst brands

According to the results of the test, each product received a score from 0 to 5 points. A zero rating was given to products that may endanger the health of the buyer.

The range of estimates was significant. 9 manufacturers received the highest score at once. The experts could not give a clear preference to any of these products, so the brand names are sorted alphabetically, not by rating.

The list of outsiders turned out to be even more extensive. 19 samples failed the safety check and received a score of 0. In these products, experts found vegetable fats or a high concentration of dangerous bacteria, so the results of other tests no longer mattered much.

However, 0 points is not yet a verdict. As explained by Roskachestvo experts, in some cases, product safety suffers through no fault of the manufacturer. To understand the situation, let's take a closer look at the results of laboratory tests.

Test results for key indicators

Butter is a perishable product that is extremely sensitive to the conditions of transportation and storage. For this reason, the results of testing products for safety turned out to be ambiguous. If the sample contains dangerous bacteria, both the manufacturer and the intermediary - the seller or the logistics company - may be at fault.

It is much easier to detect outright consumer fraud. If the composition of the product does not correspond to the declared indicators, the manufacturer is definitely to blame. Consider the results of the most important laboratory studies.

Presence of bacteria and mold

15 outsiders out of 19 received a zero score due to the presence of dangerous bacteria. Harmful microorganisms experts divided into 3 categories.

  1. Bacteria of the Escherichia coli group. In small concentrations, they live in the body of every person, without causing any harm. Excess of the natural number of microorganisms leads to eating disorders. Children are most susceptible to E. coli: they have the disease with the most severe symptoms.
  2. Mesophilic microorganisms (the laboratory name of the indicator is QMAFAnM). A high indicator indicates the beginning of damage to the goods.
  3. Other bacteria that were not found in any of the samples. Examples of such microorganisms are Staphylococcus aureus and Listeria.

10 samples contained both E. coli and other bacteria. The test results are presented in the table.

Table 3. The presence of bacteria in butter samples, the results of the Roskachestvo test

Source: roskachestvo.gov.ru

In addition, molds and fungi were found in some samples. The test for these parameters failed trademarks:

  • "Milkmaid";
  • "Neva cheeses";
  • "Milky style";
  • "Ostankino";
  • "Oka-River";
  • "Farm";
  • "The Joy of Taste";
  • Danke Anke.

Experts recognize that responsibility for violations may lie with resellers who violated the conditions of storage or transportation. It is impossible to determine the exact cause of the appearance of bacteria. At the same time, Roskachestvo emphasizes that the test purchase was carried out only in stores with strict adherence to the storage regime.

Curious fact: violations were recorded only in 2016. None of the brands tested in 2018 failed microbiological tests.

Adding vegetable fat

Butter can only be made from milk. The presence of palm oil in the product indicates its falsification. By adding vegetable fat, the manufacturer reduces the cost of production. The resulting product cannot be called butter: instead, the law prescribes the use of the term "milk product".

Some manufacturers did not indicate the real composition on the packaging. Palm oil instead of cream has been found in branded products:

  • "Vologda meadows";
  • "Milk farm";
  • "Russian milk";
  • "Rzhevushka";
  • "Dairy style".

The study of Roskachestvo refutes the opinion about the mass falsification of butter with the help of vegetable fats. Only 5 out of 74 trademarks were caught on this violation. The listed samples received a zero rating, since they do not actually belong to the category of butter.

Note:as in the case of microbiological indicators, violations were found only in the 2016 study.

Fat percentage

Another way to save on production is to reduce the fat content of oil. Far from always, the percentages on the packaging correspond to real values.

As a result, the consumer suffers: a decrease in fat content negatively affects the taste. In the manufacture of confectionery, a low fat content will completely turn into a culinary failure: the dish will turn out completely different from what was planned.

A study by Roskachestvo revealed an underestimation of fat content in 12 samples. In some cases, the difference between the declared and actual fat content was 10%. According to GOST, such oil belongs to a completely different variety - "Peasant".

Table 4. Low-fat products, Roskachestvo data

As part of a rolling study, Roskachestvo studied butter with a 72.5% fat content of 82 brands, the total market share of which is more than 70%. Tests were carried out on 23 quality and safety indicators. The goods were purchased in the regions of eight Russian federal districts: Far Eastern, Volga, North-Western, North Caucasian, Siberian, Urals, Central and Southern. The cost of butter at the time of purchase was from 59.88 to 299.99 rubles. per package (the study presented products in packages from 170 to 500 grams) and from 33.3 to 92.4 rubles. for 100 grams. According to the test results, the products of 19 brands will be able to qualify for the Russian Quality Mark.

RUSSIAN QUALITY SYSTEM STANDARD

The standard of the Russian quality system, in comparison with the current GOST (GOST 32261-2013 "Butter. Specifications") imposes more stringent requirements on the thermal stability of the product applying for the State Quality Mark. The thermal stability index of an oil determines the amount of time a product will not lose its shape at room temperature. Also, in the Roskachestvo standard for butter, the requirements of TR TS 033/2013 for the content of antibiotics have been tightened. Butter is not allowed to contain antibiotics even in trace amounts and, in addition to the antibiotics included in the technical regulations of the Customs Union, it should not contain nitroimidazoles and nitrofurans. The level of localization of production for the award of the Russian Quality Mark to butter must be at least 85%.

Less fat, more moisture

According to GOST "Peasant" butter must contain at least 72.5% fat.

Reference:

On the packaging of butter, we can find such definitions as “Peasant”, “Amateur”, “Traditional”, and even “Sandwich” and “Tea”. These definitions are not mere oil names or epithets. These are classes of butter depending on its mass fraction of fat (set by GOST).

  • "Traditional"- mass fraction of fat 82.5%.
  • "Amateur"- mass fraction of fat 80%.
  • "Peasant"- mass fraction of fat 72.5%.
  • "Sandwich"– mass fraction of fat 61%.
  • "Tea"– mass fraction of fat 50%.

However, some manufacturers can reduce the cost of butter by reducing the amount of fat and increasing the amount of moisture in the product. The average consumer, of course, will not feel it. But who likes to pay for one product, but in fact get another, and cheaper? According to the test results, Roskachestvo identified 9 manufacturers that violated consumer rights to reliable labeling. In their oil, the amount of fat was less than stated:

  1. "Kuban milkman", Krasnodar region.
  2. "Health from the Foothills", Krasnodar region.
  3. "Pershinskoe", Tyumen region.
  4. "Budennovskmolprodukt", Stavropol region.
  5. "Tyumenmoloko", Tyumen region.
  6. "Yanta", Irkutsk region.
  7. "Charles Yard" Belgorod region.
  8. "Blagoveshchensk Dairy Plant" Amur region.
  9. "Slavmo" Republic of Karelia.

At the output, the butter turned out, of course, no longer “Sandwich”, but also not “Peasant”. The recorded maximum negative deviation of the actual fat content from the declared one was 7%.

The indicator of the mass fraction of moisture is associated with the indicator of the amount of fat. An increased amount of moisture was recorded during tests in oil with a lack of fat.

Fat as much as you need, but he's not the same

Butter is a product made from cow's milk, cream or other milk products. That is, made exclusively from milk fat. If the product contains vegetable fats, it has no right to be called butter: we have a spread in front of us.

Pasteurized cream is indicated in the composition of all studied butter with a fat content of 72.5%. Of course, there are no markings like “spread” or “margarine” on the packaging. But, unfortunately, on the packaging - no, but in reality there are such products.

So, vegetable fats were found in products of 10 brands: "Appetizing all year round"(MO), "Budennovskmolprodukt"(Stavropol region), "Volzhanochka"(Volgograd region), "Peasant from Bashkiria"(Chelyabinsk region), "Love product"(MO), "Seryshevsky"(Amur region), "Sulimovskoe"(Chelyabinsk region), SulimovskoeBashkir» (Chelyabinsk region), "TD Smetanin"(My "What you need!"(MO).

By the way, earlier experts of Roskachestvo have already found vegetable fats in kefir of the Budennovskmolprodukt trademark and butter 82.5% Love Product. As you can see, these manufacturers did not work on the bugs and were again seen in the falsification of their products.

Note that the cost of counterfeit is not always lower than the average cost of oil. And although, for example, the product of the Love Product brand is the cheapest of all the studied products (33.3 rubles per 100 grams), Seryshevsky oil is one of the most expensive oils studied (82.2 rubles per 100 grams). ). So the manufacturer's replacement of milk fat with cheaper vegetable fat does not always affect the cost of production for the consumer.

In addition, the experts noted some interesting facts:

  • On the packaging of the oil "Appetizing all year round" it is indicated: "Made according to GOST from natural cream." As you can see, this striking statement runs counter to the truth.
  • The products of the trademarks “Appetitno all year round” (private trademark (hereinafter - STM. - Note. ed.) networks "Karusel"), "TD Smetanin" (STM network "Magnet") and "That's what you need!" (STM network "OK") one manufacturer - CJSC "Ozeretsky Dairy Plant". As you can see, for the listed private labels, he manufactures counterfeit products. However, the same manufacturer produces butter for TM "Ecomilk" (high-quality and safe), as well as for private label network "METRO Cash & Carry" (Fine Life). Butter Fine Life is recognized as high quality. This suggests that the METRO Cash & Carry retail chain monitors the quality of products under its private label.
  • At butter "That's what you need!" very high fat content. It corresponds to the "Traditional" oil - 82.7 ± 0.7%. It is a pity that the manufacturer has achieved this fat content by adding vegetable fats.
  • Reading the names of the products, the consumer may think that the famous oil from Bashkiria was included in the list of fakes, since among the names of the samples there are “Peasant from Bashkiria” and “Sulimovskoye “Bashkirskoe””. However, both of these oils are produced in the Chelyabinsk region. The first - Chelyab-maslo LLC, the second - IP Timoshkin V.M.

Important!

In turn, in the investigated oil is really Bashkir trademark "Belebeevskoye" violation was detected only by net weight. The actual net weight of this product is 20 grams lower than stated, that is, the manufacturer underweighted 10% of the oil. Otherwise, this oil has no flaws, although its final score was significantly reduced for deceiving the consumer by the mass of the product - it amounted to 4.4 points. By the way, according to the results of the tests, this is the only case of underweight.

To keep the oil from upsetting

Butter is a perishable product. And the use of spoiled butter can lead to intestinal disorders. That is why experts carefully examined the microbiological parameters of the oil.

According to test results:

  • Bacteria of the Escherichia coli group have been found in seven brands of butter: "Green Agro"(MO), "Irbit"(Sverdlovsk region), "Dairy plantStavropol» (Stavropol region), "Omsk quality mark"(Omsk region), "Very Important Cow"(Tatarstan), "Semyonishna"(Krasnoyarsk Territory) and "Creamy Morning"(Altai region). Previously, the presence of E. coli attracted attention and kefir "Dairy plant" Stavropol ".
  • Increased number of bacteria (QMAFAnM) found in products of four brands: "Green Agro"(MO), "Dairy plantStavropol» (Stavropol region), "Omsk quality mark"(Omsk region) and "Semyonishna"(Krasnoyarsk region).
  • Yeast and mold experts found in oil "Polar bear"(Rostov region).
  • Staphylococcus aureus and Listeria experts did not find in the studied oil.

It is worth mentioning that the listed violations can be associated not only with sanitary conditions at work, but also with violations of the storage, transportation and sale at the point of sale. However, all the studied goods were purchased only in those outlets where the temperature regime was strictly observed.

On the freshness of butter.

The quality of butter can also deteriorate during storage due to spoilage (oxidation) of the fat it contains. And it can start to deteriorate either due to problems with raw materials, or due to violations of the production technology of the product. Such deterioration can affect the taste and smell of the oil. And a wonderful creamy taste can become unpleasant: rancid or sour. The onset of oxidative deterioration can be detected by measuring the acidity value of the fatty phase.

According to the test results, experts found an increased acidity of the fatty phase only in branded butter "Semyonishna"(Krasnoyarsk region). However, the organoleptic characteristics of this product are normal. This fact did not affect the taste and smell in any way. At the same time, an increased number of bacteria and the presence of bacteria of the Escherichia coli group were also recorded in the product of this TM.

"Contains no preservatives." What if you check?

Also according to the test results:

  1. Dyes was not found in butter.
  2. But in the butter of four brands were found preservatives- traces of sorbic acid. Its presence suggests that manufacturers either artificially extended the shelf life of their products, or protected the oil from spoilage. Moreover, the amount of detected sorbic acid varied greatly:
    • "Love product"(Moscow region) - 228.8 (!) mg / kg.
    • "Oil Farm"(Chelyabinsk region) - 50.4 mg / kg.
    • "Pestravka"(Samara region) - 6.4 mg / kg. Note that the packaging of this product states: “100% natural milk cream. Made from natural, pasteurized cream derived from fresh cow's milk" and featured a tree icon with the phrase "Sustainable Product".
    • "Omsk quality mark"(Omsk region) - 1.7 mg / kg.

What about antibiotics?

In the fight against animal diseases, many farmers or producers themselves resort to antibiotics as a preventive or already curative means. If the veterinary program is not followed, antibiotics can pass into products of animal origin. Particularly in dairy. Roskachestvo experts have already encountered the presence of antibiotics in the study of cheese, cottage cheese, kefir and sour cream.

In general, the situation with antibiotics in butter is not aggravated. Among the 82 studied brands of butter with a fat content of 72.5%, only one violation was found. Penicillin in excess of the allowable amount has been detected in branded oil "Summer Meadow"(Orenburg region).

Trace amounts of the antibiotic streptomycin have been found in 42 brands, but none of these amounts exceed legal limits. In the oil of five brands, the presence of antibiotics of the tetracycline group was also recorded, four - amphenicols, three - penicillin, but - similarly - in quantities not exceeding the norms.

Since the amount of antibiotics in the butter of these brands does not exceed the norms established by the technical regulations, formally the manufacturers of these products will not be considered violators, but these products will not be able to qualify for the Russian Quality Mark.

Not in the fridge means out of shape

For whether butter retains its shape at room temperature or not, its heat resistance is responsible. On the one hand, butter with low heat resistance is easier to spread on a sandwich. On the other hand, it is believed that the ability of butter to keep its shape is one of the signs of its quality.

Talks about heat resistance Executive Secretary of the Dairy Union of Russia Larisa Abdullaeva

Heat resistance is more of a production characteristic. There is no such quality indicator in international standards for oil; this is a purely Russian tradition.

Thermal stability depends on the production methods, of which there are two: churning and transformation. Butter produced by the churning method (classic method) is harder, holds its shape better, but it will be worse spread on a sandwich. Oil produced by the conversion method (using more modern equipment) will be less heat resistant, softer and better spreadable.

The indicator of heat resistance is important first of all for the manufacturer, it helps him to control the release of the packaged product, which will retain its shape, will not look unpresentable, wrinkled during its storage and sale. But the quality of the product - its taste, smell; more important indicators of nutritional and energy value will also remain on top. Thus, it cannot be said that these products are bad. They are of high quality, but one must be prepared for the fact that a pack of oil will not always be ideal in terms of geometric shape: it may be slightly irregular in shape, slightly wrinkled after transportation and storage on a store shelf.

Also this score depends on other factors.: what milk is butter made from(the composition of milk varies slightly in different breeds of cows, depending on the feed that the cow eats), when was the oil produced(summer oil is less heat-resistant, it is softer than winter oil) and, of course, how oil is produced.

As the results of the study showed, there are no violations in thermal stability among butter with a fat content of 72.5%. However, the products of 40 brands did not meet the advanced requirements of the Roskachestvo standard.

It should be noted that the results of tests of butter with a fat content of 82.5%, published earlier by Roskachestvo, revealed 11 violators in this parameter. They violated the rights of consumers to reliable labeling, indicating GOST 32261-2013 in it, but in reality they did not comply with it.

According to Roskachestvo, the study of the category of butter 72.5% covered more than 70% of the entire market for this product.

Most of the oil sold in domestic stores meets all the requirements, and a quarter exceeds the current GOSTs in terms of quality and claims the State Quality Mark. However, it was not without falsification: experts calculated how much fake oil is on the market and what method of falsification is the most popular, and also found out if there is a direct relationship between the price of the product and its quality. Products with violations (of varying severity) in the category of butter as a whole occupy 25.59% of the market in physical terms. Products counterfeited with non-dairy fats occupy 13.56% of the market in volume terms.

During the purchase, 82 of the most popular brands of oil were purchased. The cost of 100 gr. oils at the time of purchase from 33.3 to 92.4 rubles.

Laboratory tests were carried out on 23 indicators of quality and safety. The oil was tested for compliance with mandatory requirements, including an extended group of antibiotics, microbiological indicators, including the presence of E. coli, yeast, mold, as well as for the actual fat content, compliance with the declared information on the label. An important vector of research is checking for falsification of dairy products with vegetable fats.

The results of the first all-Russian study of the quality of butter showed that 53 out of 82 products fully comply with the established requirements. Of these, 19 brands are recognized as high quality goods, as they exceed the requirements of the current GOSTs in terms of their indicators and can qualify for the State Quality Mark.

According to the results of the first all-Russian monitoring of the quality of dairy products, butter under the brands "Privolzhsky Dairy Plant" (Nizhny Novgorod Region), "Choice of the Hostess" (Samara Region), "Kungurskoe" (Perm Territory), "Nytvenskoe" (Perm Territory), Vemol (Perm Territory), Vyatushka (Kirov Region), Stozhok (R. Udmurtia), Krestyanskoye (Krasnodar Territory), Chaban (R. Kabardino-Balkaria), MILK (Kaliningrad Region) ), Côtes de France (Kaliningrad Region), Dairy Tale (Altai Territory), Every Day (Omsk Region), Fine Life (Moscow Region), Prostokvashino (Moscow), Vkusnoteevo (Voronezh Region ), "Kozelskoye Zhivoe" (Kaluga region), "House in the village" (Vladimir region), "Tommoloko" (Tomsk region).
The best oil is produced in Moscow and the Moscow region, Nizhny Novgorod, Samara, Kirov, Kaliningrad, Omsk, Kaluga, Tomsk, Voronezh and Vladimir regions, Perm, Krasnodar and Altai regions, the republics of Udmurtia and Kabardino-Balkaria.

According to the test results, the excess of microbiological indicators (including yeast, mold, total bacterial contamination, E. coli) was found by the laboratories of control and supervisory authorities in 8 out of 82 brands of butter. Such results could be the result of both the low quality of the feedstock, and the violation of the sanitary state of production or non-compliance with the storage conditions of products at any stage of the commodity distribution chain, and are a significant industry problem. E. coli bacteria were found in the oil "Green Agro" (Moscow region), "Irbitskoye" (Sverdlovsk region), "Dairy plant" Stavropol "" (Stavropol Territory), "Omsk quality mark" (Omsk region), "Very important cow "(Tatarstan), "Semenishna" (Krasnoyarsk Territory) and "Creamy Morning" (Altai Territory)). An increased number of bacteria (KMAFAnM) was recorded in the products of Green Agro (MO), Dairy Plant Stavropolsky (Stavropol Territory), Omsk Quality Mark (Omsk Region) and Semyonishna (Krasnoyarsk Territory). Yeast and molds were found in the oil "Polar Bear" (Rostov region).

It is important to note that during the study of pathogenic microorganisms, in particular, the bacteria Staphylococcus aureus and Listeria were not identified by the experts. The content of toxic elements: lead, cadmium, mercury, arsenic, iron and copper (in butter), pesticides, mycotoxins and melamine in any sample did not exceed the values normalized by technical regulations. Also, not a single sample was found with an excess of the standard values of radiological indicators: cesium-137 and strontium-90.

The central point of the study of the three departments was the check for falsification. By law, butter is made from cow's milk, cream or other milk products, that is, exclusively from milk fat. If the product contains vegetable fats, it does not have the right to be called butter - only spread.

All butter studied, according to the information on the packaging, had to be made from "pasteurized cream". However, vegetable fats were found in 10 out of 82 products (“Appetitno Krugly God” (Moscow Region), “Budennovskmolprodukt” (Stavropol Territory), “Volzhanochka” (Volgograd Region), “Peasant from Bashkiria” (Chelyabinsk Region), “Lav Product (Moscow Region), Seryshevsky (Amur Region), Sulimovskoye (Chelyabinsk Region), Sulimovskoe Bashkirskoye (Chelyabinsk Region), TD Smetanin (Moscow Region) and What You Need ( Moscow region)).

Another important component of the study was the testing of dairy products for the presence of antibiotics: the excess of antibacterial substances over the permitted level was found in the product "Summer Meadow" (Orenburg region). In the oil of five brands, the presence of antibiotics of the tetracycline group was also recorded, four - amphenicols, three - penicillin, but in quantities not exceeding the norms. The reasons are non-compliance with the requirements for raw materials or the impossibility of carrying out input control of milk with high-precision long-term methods for each incoming batch.

In addition, experts conducted a study of the fat content of the product - in "Peasant" butter, it should not be lower than 72.5%. If there is less fat, then the manufacturer either insufficiently controls the fat content of the incoming raw materials or decides to reduce the cost of the product by reducing the amount of fat and increasing the amount of moisture. Reduced fat content was found in nine out of 82 brands: Kuban Milkman (Krasnodar Territory), Health from Foothills (Krasnodar Territory), Pershinskoye (Tyumen Region), Budennovskmolprodukt (Stavropol Territory), Tyumenmoloko (Tyumenskaya Oblast), Yanta (Irkutsk Oblast), Karlov Dvor (Belgorod Oblast), Blagoveshchensky Dairy Plant (Amur Oblast), Slavmo (Republic of Karelia). The maximum deviation of the actual fat content from the declared one was 7%.

Verification of the compliance of the actual weight with the declared one gave encouraging results: underweight was found in only one product - the Belebeevskoye trademark (Republic of Bashkiria).

But the high price does not give such a guarantee: the test showed that the ideal product does not mean the most expensive one. Thus, the top 10 cheapest butter products included products of three brands with the highest score of 5.5 points (Privolzhsky Dairy Plant (Nizhny Novgorod Region), Vkusnoteevo (Voronezh Region), Every Day (Omsk Region At the same time, one of the most expensive studied oils - "Seryshevsky" - turned out to be falsified.

Notifications of test results and protocols have been sent to manufacturers and retailers, and most manufacturers have initiated corrective quality improvement measures, Roskachestvo said.

“Joint work on the execution of the Government's instructions allowed us to draw accurate and objective conclusions regarding the real situation on the market of the most popular dairy products, identify the main industry problems and outline ways to solve them. The storage conditions of products throughout the distribution chain require the closest attention. It is necessary to eliminate the identified gaps, including in terms of the imperfection of a number of methods. We are also confident that the result of the study will be the soonest whitewashing of the market from those who falsify dairy products with non-dairy fats,” said Maxim Protasov, head of Roskachestvo.

In the near future, Roskachestvo will also announce the results of completed studies of the most popular product categories among consumers, such as milk and cottage cheese.
