Actually, not too much. There is an ancient Chinese manuscript of the III millennium BC. BC, which describes the recipe for fruit sherbet - "frozen sweets prepared using snow, ice, fruit, wine and honey were served at the emperor's table."

Also known is the ancient Greek recipe for cooking fried fish, written on the wall of an old jug. It dates from about the same time as the Chinese one.

Of course, it is worth mentioning the ancient Armenian recipe for a dish with meat, very similar to the well-known dumplings.

As for Russian sources, one of the first chronicles also contains a culinary recipe. This is the “Tale of Bygone Years” of the 10th century, where the recipe for oatmeal jelly is placed. True, this is not jelly in our modern sense, but rather pudding - having a thick consistency.

For those who have not read The Tale of Bygone Years, I will try to retell the main plot of the history of this very jelly pudding.

It was either in the 8th or 10th century. Not far from Kyiv was the city of Belgorod. It was he who was besieged by the Pecheneg tribes, who constantly fought with the Russians. Belgorod was well fortified, so the siege was long. Famine was about to begin among the defenders of the city.

The townspeople gathered on the square at the veche and began to offer their own solutions to the problem. One of the wisest old men offered to defeat the enemy by cunning. And this is what it should have been.

From the remaining stocks - and it turned out to be oatmeal and a little honey - the old man offered to prepare a dish. Women diluted the flour with water and prepared a "talker". They also sweetened the water with honey, and it turned out “full”. The men dug two deep wells. In one of the wells, the old man ordered to lower the tub with the "talker", and in the other - with the "full".

Having finished the preparations, the inhabitants called several Pecheneg warriors to the city.

When they arrived, the elder said to them: “Why destroy yourself? Is it possible to overcome us? If you stand ten years, what will you do to us, for we have food from the earth. If you don't believe me, then see with your own eyes.

With these words, the Pechenegs were brought to the wells. They scooped up a “talker” from the first well, and “full” from the second, mixed it and boiled it over a fire, ate it themselves and gave it to the Pechenegs to taste. And they gave them with them, sending them home, so that they would tell their princes about what they had seen. The princes of the Pechenegs ate an amazing dish and, deciding that further siege was pointless, left the city.

And here, in fact, is a modernized recipe for this very jelly pudding, which consists of two main parts - talkers and sated.

You will need: 2 cups of oatmeal (it is easy to prepare by grinding oatmeal), 2 tablespoons of honey, a pinch of vanilla, 8 cups of water (can be replaced with milk, unsweetened cocoa), salt and any spices to taste.

Pour oatmeal into a saucepan, pour warm water, stir well so that there are no lumps. This is the so-called "talker". You need to let it swell for 6-8 hours (you can leave it overnight). Filtration. After the fermentation process is completed, the mixture is filtered. For filtration, it is necessary to have a sump and a filter. An additional 5-liter glass jar can be used as a sump, and a colander with a hole diameter of 2 mm will serve as the best filter at home. The filter is placed above the sump and a suspension of oatmeal is passed through it.
OAT KISSEL (another recipe) - 2 cups of oatmeal, - 2 tablespoons of honey, - 8 cups of water, - salt to taste. A dense precipitate, constantly accumulating at the same time on the filter, is washed with small portions of running cold water, stirring it intensively from time to time. The volume of the washing liquid should be approximately 3 times greater than the volume of the initial suspension of oatmeal. The clot left on the filter after washing is not thrown away (waste-free technology), but given to dogs: for them, this is a real delicacy that they eat with great pleasure. Filtrate processing. The filtrate collected in the sump is left there for 16-18 hours, after which two layers are formed in the sump: the upper layer is liquid, the lower is a white loose precipitate. The top layer must be removed through a rubber tube, and the bottom layer is the oatmeal concentrate (it is subsequently used not only for making oatmeal jelly, but also for lactic acid fermentation, adding 2 tablespoons of this concentrate to the water suspension of oatmeal instead of kefir). Storage of oatmeal concentrate. The oat concentrate collected after filtration is transferred to glass jars of smaller capacity, closed with a lid and stored in a refrigerator. The longest storage time is 21 days. As needed, small portions of the concentrate are taken from the jar to make jelly.

Cooking oatmeal. Mix a few tablespoons of oat concentrate (each person chooses according to his taste: from 5 to 10 tablespoons) in two glasses of cold water, bring to a boil over low heat, stirring vigorously with a wooden spoon, then boil to the desired density (5 minutes is enough). At the end of cooking, add salt, any oil (butter, sunflower, olive, sea buckthorn), cool to a warm state. Eat for breakfast with black bread.
