You need to take a deep bowl and pour sifted wheat flour into it, add grated lemon zest, soda slaked with lemon juice, salt and mix all these ingredients well.

Place soft butter and granulated sugar in the bowl of a food processor in a warm place. Beat for about three to five minutes until fluffy and light. With the processor running, add all the eggs one at a time. Add high-fat yoghurt, freshly squeezed lemon juice, warm but not hot milk, vanilla into the resulting mixture and mix well. The dough for the cake is ready, now you need to prepare the form in which it will be baked. 100 grams of cottage cheese with any percentage of fat content; 40 grams of sugar; 2 pinches of lemon or lime zest and 10 milliliters of squeezed juice from the same fruit.

Let's start preparing the cupcakes:

  1. I keep the oil at room temperature to make it easier to work with in the future. When it has become soft, I grind it in a bowl with sugar.
  2. After that, I begin to break the eggs into it one at a time, beating everything thoroughly after each one.
  3. The next step is to pour in the yogurt and whisk again.
  4. I start kneading the yogurt-based dough only after adding the final ingredients: flour, baking powder, vanillin. I determine readiness by the degree of homogeneity and the absence of lumps.
  5. Using a water bath, melt the chocolate. I wait for it to cool and pour it into the dough.
  6. The cream is prepared by mixing cottage cheese with sugar, juice and grated zest.
  7. I either spray silicone molds with water in advance or coat the inside with oil.

Then you can fill them with test, but only using this algorithm:

  • mentally divide the mold into three equal horizontal parts,
  • We distribute the dough in layers, where 1 layer is dough, 2 is filling, 3 is dough again.

  1. Let's start by making the dough. To do this, I mix wheat flour with baking powder, sugar and chicken eggs in a bowl.
  2. I mix the carrots and yogurt separately, then combine the two resulting mixtures.
  3. The final touch is the addition of dried fruits. The dough should be thick.
  4. Before putting the dough into the molds, I coat them with oil from the inside. For easier removal, it is better to line it with baking paper.
  5. Important: Be sure to make sure that your equipment can prepare cupcakes. I set the multicooker to “baking” mode. If there is no such function, you can also bake using the “porridge” or “soup” program, constantly keeping it on the heater.
  6. Time – 60 minutes.

1. Since the dough prepares very quickly - you just need to mix the necessary ingredients, so we first turn on the oven at 190-200 degrees so that it has time to warm up.

2. Remove the butter from the refrigerator until it melts slightly and becomes soft.

3. Step 3 Ingredients:

  • butter – 100 g;
  • sugar – ¾ cup;

Cream the butter well with sugar. This can be done either with a spoon or with a mixer.

4. Step 4 Ingredients:

  • eggs – 2 pcs;
  • vanillin - on the tip of a knife;
  • drinking yogurt – 1 tbsp.

Beat eggs into the resulting mixture, add yogurt, and add vanillin. Mix the ingredients well.

To achieve a more delicate taste, use only yolks.

5. Step 5 Ingredients:

  • flour – 2 tbsp;
  • baking powder – 10 g.

Mix flour with baking powder. And add small portions to the mixture. The yogurt dough should have the consistency of thick sour cream.

6. You can make one large cupcake. To do this, the dough is laid out on a pre-greased form. I made muffins with yogurt in molds. Mine are metal. In order not to lubricate them with anything, I put paper molds in them. I put one tablespoon of dough into each mold, then placed one teaspoon of strawberry jam in the center and covered it with dough so that there was at least 3-5 mm left to the top of the mold. I got 12 cupcakes.

7. Place the yogurt cake in a preheated oven. Baking time will be 20-30 minutes. The baking should become uniform in color and acquire an “appetizing” dark golden color.

8. Once ready, yogurt baked goods should be left in the oven until completely cooled. Once the cupcakes have cooled completely, remove them and sprinkle the tops with powdered sugar.

How to beautifully decorate and serve a cupcake

Cupcakes can be decorated by filling the top with hot chocolate or chocolate icing or sweet syrup.

If the baked goods are intended for a holiday table, then you can top them with yogurt, decorate them with cinnamon and fresh strawberries or other berries.
