How to store fresh lingonberries correctly

Before you save lingonberries for the winter without a refrigerator, you need to select ripe, but not overripe berries without damage, rinse them.

Then transfer the berries to a jar, fill with cool boiled water, send to cool.

Let stand for 3 days. After the water is drained, pour fresh, close the vessel with a lid.

If you pick up beautiful glass jars, you can place them right in the kitchen. The content looks so appetizing that it will become an organic addition to the interior.

Only collected or purchased lingonberries in their natural state, without pouring, are well preserved in the refrigerator. Select ripe whole berries, wash them, dry them. Transfer to a deep container, such as a cardboard box or a plastic container with a lid. Place in the refrigerator on the vegetable rack. There they can be stored for 2-3 months.

To keep fresh berries longer without pouring at room temperature, prepare several sheets of paper. Put a layer of prepared lingonberries on the first sheet, transfer to a cardboard container, then the next layer on a sheet of paper, etc. This way the berries can “hold out” for about a month. Prepare compotes, jelly, fruit drinks from soaked lingonberries, or simply refresh yourself with a bright red, divinely fragrant drink infused with wild berries.

You will need:

  • 5 kg cranberries
  • 2.5-2.8 liters of water
  • 500 g sugar (or half a kilo of honey)
  • a pinch of cinnamon or a couple of cloves (optional)
  • salt (on the edge of a knife).

How to do:

  1. Sort the berries, put in a colander, rinse.
  2. Transfer the fruits to three-liter jars (shoulder-deep).
  3. Next, bring the water to a boil, add sugar or add honey, flavor with cinnamon, cloves if desired.
  4. Cook until sugar or honey is completely dissolved in water. Cool down.
  5. Pour berries with syrup.
  6. We cover the necks of the jars with gauze, leave it in the room for a couple of days.
  7. We close the jars with nylon lids, place them in a cool place - you should ideally store soaked lingonberries in the cellar, but the refrigerator shelf will do just fine.

Canned in syrup

Lingonberries can be preserved, as. Make a simple (from sugar and water) and fruit filling.

In any case, sugar should be at least 70% of the amount of liquid.

What do you need:

  • 5 kilos of lingonberries;
  • 2 liters of water;
  • 1.5-1.8 kg of sugar;
  • glass of lemon juice.

  1. Boil water, add sugar to it.
  2. Stir. Boil until the sugar crystals dissolve, pour in the lemon juice.
  3. Strain and chill.
  4. Fill the jars with lingonberries, pour in the syrup.

Instead of water, you can use fruit syrup, which is prepared as follows: squeeze juice from lingonberries, add sugar (1: 1) and boil.

With sugar without heat treatment

Harvesting fresh lingonberries without adding sugar at home is possible if there is a freezer or oven. These technologies do an excellent job with the most important task: preserving the natural taste of fruits and their rich useful component.

Freeze

To freeze lingonberries, select the berries: they should be ripe.

Slightly unripe - also acceptable, but overripe, damaged or rotten mercilessly discard.

It is ideal to send only harvested or purchased fruits to the freezer.

In any case, hurry up, not giving the vitamins time to “self-destruct”.

Rinse the berries, dry on a paper towel.

Put the forest wealth in plastic bags or sealed containers and send the freezer.

Drying

Before processing, select ripe berries, discarding crushed, rotten ones. Wash the fruits and dry.

Spread on a baking sheet in one layer and place in the oven (+ 60°C). Stir them periodically.

Seal dry berries tightly and place in a dark, dry place. It is not worth keeping them for more than six months. It is better to brew vitamin tea more often and strengthen your health.

Lingonberries do not ripen on their own. You should not expect greenish berries to turn scarlet. Get only bright fruits.

When buying, make sure that the berry is harvested in an ecologically clean region. It is capable of intensively absorbing radiation.

- 2 kg of cranberries;

Instead of cinnamon and cloves for flavoring, chopped fragrant apples - antonovka or ranet - can be added to lingonberries.

Sort through the lingonberries, discarding damaged berries and debris. Rinse the berry in a few waters, put it in a colander and dry it, scattering it on a towel.

Prepare filling for cranberries. Pour water into a saucepan, add sugar, salt, cloves and cinnamon. Bring the mixture to a boil, reduce the heat and simmer until the sugar is completely dissolved. Put the lingonberries in a glass or enameled container - a saucepan, a jar or a bottle. Pour the prepared syrup over the berries and cover the container with a lid.

To cook lingonberry jam, prepared berries should be poured with boiling water for a couple of minutes. The jam from this becomes more tender and tasty. Then the lingonberries are thrown back on a sieve so that excess water is glassed, and poured into a basin for jam. Pour everything with boiling syrup prepared for 1 kg of berries - 1.2 kg of sugar and 3 cups of water. You can add 3-4 cloves at the end of cooking.

It would be nice to add fruits - for half a kilo of berries there are as many pears or apples. First, the fruits are peeled and core, then they are cut into slices. In sugar syrup, you must first boil a little pears or apples, and only then add lingonberries.

Cowberry jelly used to be made with honey - the same amount of honey for two glasses of juice. They now use sugar instead. Peeled lingonberries are poured into a cooking container and boiled in their own juice without adding water until the berries burst. Another way to prepare lingonberries for the winter is to make a soaked berry. This preparation is well suited to meat dishes, it can be added to cabbage salads, vinaigrettes.

If necessary, the berries are sorted by size, and then washed in the shower or in a bowl of water, dipping a half-filled colander into it. Raspberries, in order to remove the larvae of the raspberry bug, are immersed in a salt solution (20 g / 1 l) before washing. The sorted fruits are transferred to a shallow container or to an enameled basin for further processing.

How to sort berries with a dense skin?

And other berries, which have a less delicate texture, are sorted out using different methods. With a small harvest, the work is done manually (as is the case with juicy berries). In order to make it more convenient, the berries are poured in small portions into a flat tray (this makes it easier to remove debris and discard spoiled fruits).

This method does not justify itself with a large crop (the work takes a lot of time), so the process is often simplified. For this one raise the edge of the table by 30-40 cm. Barriers are organized on the sides of the tabletop (use planks or towels rolled up with a roller). At the bottom there is a container for collecting berries. Instead of a table, a tray is often used, closed with planks on three sides (the shape of this device resembles the letter P, the length of the sides is 1.5-2 m, and the height of the sides is about 15 cm). As in the case of the table, the top edge of the tray is raised. Fruits are poured in small portions onto the surface of the table or tray. Thanks to the slope, they roll down, and the debris remains on the surface (at least most of it). As the garbage accumulates, it is removed from the table.

Another method involves the use of a cold jet of air (a hair dryer is used). The berries laid out on an inclined plane are left for a while (so that excess moisture evaporates), and then the litter is blown off with a hair dryer.

If it is necessary to sort the berries by size, use sieves made of stainless steel or soft material (sheet rubber, plastic) with cells of the desired diameter (8-16 mm).

At the next stage, the fruits are immersed in cold water and gently mixed. This allows not only to wash the crop, but also to remove the remaining rubbish (twigs and leaves float to the surface, from where they can be easily removed). In case of severe contamination, the procedure will have to be repeated 2-3 times.

How to sort out wild berries?

When harvesting wild berries, you can sort them directly on the spot. You can organize an inclined plane with the help of poles and a piece of cellophane. It will not be possible to completely remove the garbage, but there will be much less work (upon arrival home, it is enough just to immerse the berries in a bucket of water and remove the emerging debris). The berries sorted in this way will have to be processed immediately.

How to sort out viburnum and rowan berries?
