Once upon a time, in my hometown, I worked as a waiter in the best restaurant in this place, and before I started working there, I had to memorize the entire menu, all the terms and fancy names of dishes and their components, unknown at that time. I still remember that Mozzarella is “unleavened cheese made from the milk of black buffaloes of the evening milking” :)

Of course, in Russia, ordinary cow’s milk is used in its production, but it also turns out delicious. By the way, I can tell you one super-budget analogue of Mozzarella, which also goes perfectly with tomatoes, just like the “original”. This is an ordinary unleavened Adyghe cheese! To be honest, lately I’ve only been using it; I prefer the crumbly consistency and milky taste.

So, wash the tomatoes and basil. Cut the tomatoes into circles 0.5 cm thick. Drain the brine from the Mozzarella, blot it with a napkin and cut into circles of exactly the same thickness. We take the plates and lay them in half, for example, overlapping mugs of tomatoes and cheese, alternating them with each other.

That's all 🙂 All that remains is to put basil leaves on top, drizzle with olive oil and balsamic vinegar, pepper and salt if desired (I don’t add salt).   1. Take 1 large tomato, cut it into half rings. Brush each tomato slice with olive oil and place on a baking sheet.
  2. Place cherry tomatoes on a baking sheet next to the regular tomato pieces. You will need 10-12 of them.
  3. Pour the sauce over the tomatoes on the baking sheet. It is very easy to prepare: mix 1/4 tbsp. olive oil with 1 tbsp. balsamic vinegar, juice squeezed from 2 cloves of garlic, 2 tbsp. sugar and salt to taste.

Cut the bell pepper into 4 parts, finely chop into thin long shavings. Very finely chop the hot pepper (without seeds), chop the white part of the leek into thin rings. Remove the sun-dried tomatoes from the oil, remove excess fat with a napkin, and cut into slices.

We peel the quail eggs and cut them into halves. We tear off the basil leaves and remove the tough branches (if desired, they can be added to the broth). Cut the mozzarella into cubes, tomatoes into small slices. Place all the ingredients in layers in one bowl.

In a ceramic bowl, combine olive oil, hot pepper and salt. Mix well and season the salad.

  • 15 Cherry tomatoes;
  • Baby mozzarella (cheese in miniature balls) - 250 grams;

  • A handful of pine nuts;
  • 15 black olives;

  • A bunch of lettuce leaves;
  • Large spoon of mustard;
  • 25 ml. lemon juice;
