Accordion meat can be prepared from any part of pork, the main thing is that there are no membranes or veins in it. For such a dish, loin or ham is perfect, and other ingredients include tomatoes and hard cheese.

Ingredients:

  • kilo of pork;
  • 220 g each of tomatoes and cheese;
  • a couple of cloves of garlic;
  • tsp mustard;
  • 25 g ghee.

Cooking method:

  1. Take a pork ham and make cuts on it.
  2. In a bowl, combine garlic, mustard, salt and pepper, passed through a press. Rub the prepared mixture onto the meat and marinate for an hour.
  3. We cut the tomatoes into slices, cheese into slices.
  4. In each cut we place one slice of vegetable and a slice of cheese. Place the meat on foil and place pieces of melted butter on top. We wrap the workpiece and place it in the oven for exactly one hour (temperature – 200 °C).
  5. Then we take out the meat, unwrap it, pour in the released juice and continue cooking uncovered for 20 minutes. But if you are not interested in the crust, then cover the almost finished “accordion” again with foil.

With added mushrooms

You can prepare “Accordion” meat from pork not only with tomatoes and cheese, but also with mushrooms. They go well with meat and add flavor to the dish. For the recipe we also take a kilo of pork tenderloin.

Ingredients:

  • three tomatoes;
  • 110 g cheese;
  • six champignons;
  • a little melted butter;
  • 35 ml each of soy seasoning, mustard and olive oil.

Cooking method:

  1. Using a kitchen knife, we turn a piece of pork into an “accordion”.
  2. We make a marinade from mustard, sauce and oil, let the meat soak for at least an hour.
  3. We cut the mushrooms into slices and fry them in melted butter, after salting them, for a couple of minutes.

Cooking method:

  1. To make the meat tender and aromatic, it needs to be marinated and it is better to keep the pork in the marinade all night.
  2. For a spicy composition, you need to mix mustard, sauce, chopped garlic and ginger. Make cuts on the pork and coat it thoroughly with the mixture.
  3. Cut the zucchini, peppers, carrots and tomatoes into circles, and the cheese into slices.
  4. Place the meat on foil and insert vegetable and cheese slices between the furs. If you have vegetables left over, you can simply lay them out in the free space.

How to make with soy sauce

  • 130 g cheese;
  • kilo of potatoes;

Cooking method:

  1. In a bowl, mix soy dressing, mustard and oil, season the marinade with salt and pepper.

Pork accordion meat with prunes

Meat and prunes are an excellent combination of flavors. Dried fruit gives the meat a special piquancy. We will bake the pork in foil, which will preserve most of the vitamins of both the meat itself and the dried plum.

Ingredients:

  • kilo of pork tenderloin;
  • 135 g prunes;
  • 170 g cheese;
  • two spoons of sour cream;
  • two tsp. mustard;
  • a little dill;
  • two cloves of garlic;
  • tsp any seasonings for meat.

Cooking method:

  1. Mix a spoonful of sour cream with mustard and any seasonings for preparing meat dishes.
  2. Cut the pork into accordion shapes and coat with sour cream marinade. Leave for half an hour.
  3. Soak dried fruits in water for ten minutes, then squeeze and cut into small pieces.

It is the marinade that brings the main individual “zest” to the meat accordion. And here you can experiment. Soy sauce, ready-made mustard, various types of peppers, lemon juice, olive oil, mayonnaise and many spices. Vary the combination and create your own marinade.

The desire to bake meat in the oven suddenly overtook me, so I cooked from what I had. And there were small pieces of pork with a bone on the side.   • Tomatoes – 2 pcs.

  • Soy sauce – 2-3 large spoons.

How to bake a meat accordion:

Select a firm, rectangular piece of meat. Make cross cuts without cutting all the way through.

Combine the marinade ingredients in a bowl, stir, salt and add a pinch of pepper.

Coat the piece of pork on all sides and leave to marinate for approximately 10-12 hours (ideally overnight). Don't forget to wrap it in film. I marinated it in the morning and baked it for dinner.

Cut the garlic cloves into slices, divide the tomato into slices, and cut the cheese into not too thick slices.

  7. Bake the accordion at 180°C for approximately 1.5 hours.
  8. About 15 minutes before the end, open the foil, brush the top with mustard and cook for another quarter of an hour, until browned.

Pork accordion - recipe in the oven with pineapple

A festive version of the dish, designed to win the hearts of guests at the festive table. An impressive-looking, flavorful piece of meat will evoke applause.

  • Meat – 1.5 kg.
  • Hard cheese – 200 gr.

To prepare the marinade, combine olive oil, soy sauce and mustard in a deep bowl.






Mix all ingredients.
Place pork on foil. Make sure the foil is very strong and the sheet is large and wide enough to completely enclose the entire piece of meat (fold the foil in two layers if necessary).
Pour a spoonful of marinade into each cut, and also grease all the side surfaces with it. Season with salt and pepper, you can add your favorite herbs.




Wrap the meat in foil and leave to marinate for 2 hours.




At this time, prepare additional ingredients - mushrooms, tomatoes and cheese.

Everyone has probably already tried such a festive and delicious dish. So appetizing, so beautiful that you seem to feel the fragrant aroma of soft, juicy meat. But somehow there was no reason to cook such a delicious dish. Here I have collected several filling options for this amazing holiday dish.





Ingredients:
pork - 1 kg
hard cheese - 300g
tomatoes - 3 pcs.
garlic - 3-4 cloves
dry rosemary
dry basil
pepper
salt
Preparation:
Wash and dry the pork, make cuts in a piece of meat (not reaching the end), about 1 cm thick.


Mix salt, dry rosemary and pepper.


Rub the prepared meat with a mixture of salt, dry rosemary and pepper. Leave to marinate for half an hour.


Cut the cheese into slices 4-5 mm thick.


Cut the tomatoes into slices, sprinkle with dry basil.


Place the meat on foil. Place cheese, tomatoes and garlic into the slits.


Tie the pork with a thread.


Wrap in foil, place on a baking sheet, bake at 180 degrees for an hour. At the end of baking, open the foil slightly to obtain a golden brown crust.

We make cuts as if you were cutting into chops, 1.5 - 2 cm, but do not cut all the way through.

I like it when the grains then burst and fall on the clove.

And mustard will add piquancy and juiciness to the meat.

In the original recipe, the pork is layered with tomato and cheese.

I figured since apples go well with pork, why not replace tomatoes with them.

The apples will share their acidity and juiciness with the meat.

I think quince would go great here, but...

My cheese was smoked, so with its help I decided to add a smoky flavor to the pork.

Remove the core from the apples and cut into thin slices just like cheese.

Now, place it between the pieces of pork, alternating cheese and apples.

We lay our “accordion” on several layers of foil.

Ingredients:

  • Meat - pork pulp (800g), the neck is best, it is more juicy and faster to cook
  • 2-3 medium tomatoes
  • Prunes - 10-15pcs
  • Garlic - 4-5 medium cloves
  • Mustard - regular hot and French
  • Salt, black pepper and other spices to taste
  • I also added 30-50ml red wine
Preparation:

We wash our pork in cold running water. We make cuts with an indentation of ~0.5 cm, so that it turns out to be a book. Mix pepper, salt and spices. Rub this mixture over our meat and all the book leaves. Mix hot and French mustard and rub the meat in the same way. Wash the prunes; if they are very hard and have pits, it is better to soak them in warm water for a while and then remove the pits. We stuff our book with prunes and garlic. You can also place tomato slices between some of the meat sheets. If you have red wine on hand, I think it would be a shame not to use it and pour a little over your meat.

We take out and unfold the foil, grease it with vegetable oil, put thickly chopped tomatoes on it, and our accordion book on top of the tomatoes. Tomatoes will give a lot of juice in which our meat will be cooked. We take more foil and close our meat tightly, try to close it as best as possible, otherwise the juice will spill out.



I didn’t have time to marinate, but it’s better to do it, especially if the meat is not fatty or juicy. Just take it and wrap it in foil, then put it in the refrigerator for 5 hours, preferably more but not more than 20.

If you have everything ready, then preheat the oven to 200 degrees and put our meat accordion with prunes there.

Cook for approximately 60-80 minutes. Then remove the foil on top and cook for another 20 minutes, this needs to be done to get a golden brown crust on top.


*Accordion with lemon and cheese

Cooking method:

Take a piece of pork shaped like a log. We cut it crosswise into pieces, but without cutting to the bottom edge, so that we get an “accordion”. Salt and pepper the meat.


Cut the onion into rings or half rings depending on the size of the onion and the thickness of the meat log. Cut the cheese and lemon into slices.


In each slot of the meat "accordion" we place an onion ring, a slice of lemon and a slice of cheese.


Squeeze the stuffed accordion, wrap it in foil and put it in the oven for 1.5-2 hours. We take it out, cut our “accordion” to the end and eat it. Bon appetit.

When the piece of pork is marinated, take it out of the bowl, insert the pear slices into the slits, tie the piece with twine so that it does not fall apart, place it on a sheet of foil and seal it hermetically. bake at 200 degrees for 1 hour.
Prepare the glaze mixture by combining sweet chili sauce, balsamic and curry. Next, remove the meat from the oven, open the foil and brush the entire piece with a brush.
Continue baking without foil for about 30-40 minutes, occasionally pouring the juice over the meat until golden brown. Serve immediately, cut into portions.

Baked accordion with prunes, cheese and pine nuts

Cooking time: 10 minutes + marinating 1 hour + baking about 1.5 hours



We will need:

700 - 800 gr. pork or turkey (tenderloin)

150 gr. semi-hard cheese (not Parmesan)

150 gr. prunes
handful of pine nuts
3-4 tbsp. soy sauce
salt to taste
allspice ground
foil
baking dish


Cooking:
1. In a piece of meat, make transverse cuts about 1-1.5 cm apart, slightly short of cutting to the end.
2. Salt to taste, sprinkle with ground allspice. Place in a deep bowl and fill with soy sauce. Leave to marinate for at least an hour.
3. Cut the cheese into thin slices, prunes - lengthwise into 2 halves.
4. Preheat the oven to 180 degrees. On a baking dish (I have a round pizza pan) place 2 pieces of foil crosswise to wrap the meat. Place the meat on foil.
5. Place cheese and prunes in each cut.

6. Sprinkle with pine nuts.
* Pine nuts can be replaced with walnuts.

7. Wrap in 2 layers of foil and place in the oven for about 1.5 hours. An hour after baking, open the foil slightly so that the meat browns on top.

    Cut tomatoes, onions and processed smoked cheese into slices.
    Wash the meat (loin or neck, or any other piece of pork with whole muscle) and cut crosswise into pieces about 1 cm thick, without cutting the pieces a little to the end. It will turn out like a “book”, where the pieces of meat are pages.


    Mix mayonnaise with mustard and crushed garlic, season the mixture well with salt and pepper.


    Lubricate the meat well with the mayonnaise-mustard mixture, including between the “pages”. Place a slice of tomato, onion and cheese into each cut of meat.


    Pour the remaining mayonnaise and mustard mixture on top.


    Wrap the accordion tightly in foil and place in the oven, preheated to 180 degrees.

    It is good to use tomatoes, cheese, mushrooms, prunes, walnuts as a filling, or you can do without them altogether. The result is tender and flavorful meat, baked in the oven in one piece. A recipe with a photo will tell you the correct steps.

    Accordion meat in the oven: step-by-step recipe

    Ingredients:

    • Meat (beef) - 1 kg;
    • Hard cheese - 150 g;
    • Tomatoes - 2 pcs.;
    • Tomato ketchup - 2 tbsp. l.;
    • Mayonnaise - 2 tbsp. l.;
    • Garlic 2 cloves;
    • Dill 1 bunch;
    • Salt, a mixture of ground peppers.

    How to cook accordion meat baked in foil in the oven

    Prepare everything you need. Select the meat so that it is an even piece of approximately the same thickness.

    Make the marinating mixture. To do this, place mayonnaise and ketchup in a bowl.

    Add chopped dill, garlic, salt and ground pepper.

    Mix. This is just one of the options; you can use any other marinade at your discretion. Mayonnaise, mustard, and even just a mixture of spices will do.

    Using a sharp knife, cut the meat into slices across the grain, without reaching the end. It is most convenient to do this if it is slightly frozen. This way the layers will be thinner and more accurate. If the meat is fresh, it would be better to place it in the freezer for 40-50 minutes.

    Generously coat with the prepared marinade, covering each cut.

    Leave in this form for up to a day, the longer the better. If the process lasts more than 3-4 hours, the meat should be put in the refrigerator.

    Prepare the filling. Cut the hard cheese into thin slices, and do the same with the tomatoes.

    Line a suitable sized cake pan (it’s convenient to use a rectangular one for a cake, so the piece will retain its shape) with several layers of foil. Place marinated meat. Place cheese and tomato into each cut.

    Wrap the edges of the foil tightly.

    Place in a preheated oven and bake at 180 degrees for 40-50 minutes, depending on the type and thickness of the meat. Pork and chicken require less time; beef should be cooked longer. A lot of meat juice will collect in the mold.

    Remove from liquid, sprinkle with grated cheese and return to oven for another 5 minutes.

    The accordion meat baked in the oven is ready.

    Serve immediately.
