Components

  • instant semolina 1 tbsp;
  • dried apricots;
  • butter 1 tbsp. l.;
  • wheat flour 1 tbsp.;
  • vanillin;
  • baking powder 2 tsp;
  • a pinch of salt;

  • vegetable oil 80 ml;
  • milk 250 ml.

Cooking recipe

  1. Beat the eggs and sugar into a strong foam. Add refined, odorless sunflower oil to the eggs.
  2. Heat the milk to 40 degrees and add butter to it. Pour semolina into milk. If you have instant semolina, you don’t need to let it swell. If it’s regular, add warm milk and leave for an hour, covering the container with a lid.
  3. Add baking powder and salt to flour. Combine flour, milk with semolina and egg-butter mixture. Preheat the oven. Grease muffin tins.
  4. Pour the dough into the molds. Place half a dried apricot whole or cut into small cubes into each mold. Bake at 180 or 200 degrees for about 20 minutes.
  5. Allow the finished cupcakes to cool. Remove from pans and dust with powdered sugar or glaze.

Semolina carrot-tangerine cake

Components

  • semolina 1 cup;
  • sour milk or kefir 200 ml;
  • egg 1 pc.;
  • sugar 100 g;
  • butter 2 tbsp. l.;
  • wheat flour 160 g;
  • baking powder 10 g;
  • tangerines 2 pcs. (small);
  • carrots 1 pc.;
  • tangerine juice 2 tbsp. l.;
  • powdered sugar 4 tbsp. l.

Cooking recipe

  1. Soak the semolina in milk or kefir and leave for 1 hour, covering with a lid. Do not put it in the refrigerator.
  2. In a separate bowl, beat the egg with sugar and butter at room temperature.
  3. Add the egg-butter mixture and flour with baking powder to the swollen semolina.
  4. Grate the carrots on a fine grater. Peel the tangerines (you can take one small orange instead of two tangerines). Grind tangerines or peeled oranges in a blender. Add grated carrots and tangerines to the dough.
  5. Pour the dough into molds, bake in a hot oven at 180 degrees for about 20 minutes.
  6. Add a few tablespoons of tangerine juice to the powdered sugar to prepare the glaze. Drizzle frosting over finished cupcakes and sprinkle with orange zest.

Not so long ago, baked goods such as muffins and cupcakes became popular in our country. That is, essentially, small cupcakes with or without filling. And somehow our manna cakes, sour cream cakes and large diamond-shaped cupcakes faded into the background. But it all depends on the form in which the baked goods are served. For example, muffins and cupcakes are served portionwise in small paper cups; by the way, they are also baked directly into them. So why not try making manna using the same baking molds. After all, at its core, manna is the lightest version of a cupcake that is suitable for children and the elderly.

To prepare manna we will need:

  • — 160 gr. semolina;
  • — 130 gr. wheat flour;
  • 180 gr. granulated sugar;
  • 350 gr. kefir;
  • 0.5 tsp. soda;
  • 2 chicken eggs;
  • 40 gr. vegetable oil.

Pour kefir into a large container

Add a glass of semolina and granulated sugar to it.

Place two chicken eggs in a bowl. Mix everything well.

Add sifted flour in small portions. If you need to make semolina completely dietary, remove the flour from the recipe and add twice as much semolina.

At the end, add half a teaspoon of baking soda or a teaspoon of baking powder. There is no need to quench the soda, since the dough contains a fermented milk product.

You can take vegetable oil or pre-melted butter. You will need 2 tablespoons. Add the butter to the dough and knead well.
At this point we pause work for about 1 hour. You need to let the semolina swell and let the soda and kefir react.
Returning to work, first of all, turn on the oven and let it heat up to 150 degrees.

The finished dough must be poured into molds. In this case, a metal muffin tin is used. You can take silicone molds or, as mentioned earlier, special corrugated paper molds.


It is best to grease the inside of a metal mold with butter and sprinkle with semolina so that the cupcakes do not stick. This problem does not arise with silicone and paper molds.

It must be said that the simplest fermented milk product is most often used to make pies. That is why in most cases the cake is made with semolina and kefir.

The set of products in this case also changes slightly: for a glass of sugar you need to take 2 raw eggs, one and a half glasses of semolina and kefir, as well as half a pack (100 grams) of butter.

In this case, the process technology will be as follows:

  1. First, add a pinch of salt to kefir, then add semolina and leave for 30 minutes.
  2. Soften the butter slightly, and then grind it with sugar.
  3. Separately, beat the eggs into a fluffy foam.
  4. Combine them with the oil mixture.
  5. Place the semi-finished products in one bowl and knead into a slightly runny dough.
  6. Transfer it into a mold and put it in the oven for 50-60 minutes. It is better to set the temperature to 160 degrees.

If you want to make an unusual cake with semolina and kefir, you can place several pieces of the selected fruit on its surface a few minutes before the end of baking. For the standard version, just sprinkle it with powder.

Dietary product

It turns out that you don’t have to have eggs at home to make delicious muffins with semolina. There are a variety of recipes for this option.

For example, you can take the simplest composition: for 125 grams of butter or margarine, one glass of flour, sugar, semolina and kefir, as well as a teaspoon of soda (slaked with vinegar) and 100 grams of raisins.

The procedure in this case will be as follows:

  1. First, as usual, you need to pour semolina with kefir and leave it to soak for half an hour.

Culinary experts say that muffins made with semolina and kefir are the most beneficial option for experimentation. The prepared dough rises well and bakes. In addition, you can use all sorts of flavoring additives. Take chocolate, for example. To prepare this unusual delicacy you will need:

for two glasses of kefir (or sour milk), half a glass of sugar and semolina, 1 egg, 100 grams of margarine, 12 grams of soda, a glass of flour, a little vanillin and 50 grams of cocoa.

The cooking method in this case is slightly different:

  1. Dilute semolina in half the amount of kefir and leave for half a day (12 hours).
  2. After time, add sugar, egg and vanilla.
  3. Pour soda into the remaining kefir and leave for 30 minutes.
  4. Once it starts to bubble, add melted margarine and cocoa. Mix well.
  5. Combine both mixtures and add flour. The dough will turn out a nice chocolate color.
  6. Pour it into silicone molds and place in the oven for 20 minutes.
