I needed bread, and there was not enough wheat flour, but whole grain flour - a whole package, and therefore my Philips 9046 bread machine was involved in baking bread according to a new recipe.

There are no eggs and wheat flour in the recipe for bread for a bread machine made from whole grain flour, I verified all the proportions, because I relied on a previously untested recipe; I replaced milk in it with kefir, I followed the whole grain flour kolobok the way a good nanny watches a restless child. I touched it and worried whether the bread would succeed, because lately I have been haunted by failures with the sagging of the dome of the bread at the time of the start of baking.

I didn't even use program 8 "Whole Grain Bread", but used another one, namely 4 "French Bread". That is, I took a risk, but now you can safely use the proven recipe for whole grain bread for.

I chose kefir instead of milk, because I had kefir in stock, and if there was no kefir, but if there was whey, then I would definitely choose it. For all sour milk, and especially whey, has an excellent effect on the dough, and the dough made from whole grain or rye flour is completely capricious due to the low gluten content.

I don't have the brand of flour that I always use, I don't have the brand of yeast that I always use, so there are many factors that influence the success or failure of bread baking. I describe everything in detail so that you know what to expect from whole grain bread.

What you need for Whole Wheat Bread:

300 ml of kefir (I had 2.5% fat)

1 tsp salt

1 tbsp./l baking powder

1 table/l rast. oils

350 g whole wheat flour (I had the "French thing")

How to bake whole grain bread in a Philips 9046 bread machine

Measure out 300 ml of kefir, I didn’t heat it, I took it straight from the refrigerator, and the kefir was already more than 5 days old and was thus disposed of, but in fact found a second life, giving way to the young, that is, bread

Pour kefir into a bucket of a bread machine, then vegetable oil, add baking powder and salt-sugar:

Sift whole grain flour through a sieve or a special mug with a mesh. Pour out and yeast:

Insert the bucket where necessary and turn on mode 4 "French bread", choosing 750 g and a light crust, the time will be displayed 3.45.

The kneading will start right there, at first it may seem that the dough is tight, but with each turn of the spatula the dough will become more and more elastic, in the photo there is a bun of whole grain flour during the first kneading:

It is still quite sticky, but then its structure will change.

If you touch it, it will already be soft-hard, and your hands will actively get dirty in the dough, there is almost no gluten in the flour. But it will look smooth.

After kneading, there will be proofing, the last proofing will just allow the dough to be evenly distributed in the form. Baking starts earlier than 1 hour before the end of the program.

Ancient folk wisdom says: "Bread is the head of everything!" And indeed it is. Not a single most banal meal and not a single most luxurious feast can do without it. In a saucepan, heat the water to 37-40 degrees so that it is warm, but not hot, and dissolve honey in it. Then lay out all the ingredients as it is written in the instructions for your bread machine and select the main program + medium crust color + medium loaf size. Turn on the bread maker.

5-7 minutes after the start of kneading, look under the lid and check how the dough is formed. If it's runny, add some flour. If, on the contrary, the dough is hard, crumbles and falls apart, add a few tablespoons of water. When you like the look of the dough, close the lid of the bread maker and wait until the end of the program, then carefully remove the bread and leave to cool.

  • cilantro seeds (if you like it) - 1 teaspoon;
  • cumin - 1 teaspoon.

At the bottom of the capacity of the bread machine, you must first pour the yeast, then sift the wheat and rye flour on top. Then add salt, sugar, spices and butter, after that pour milk. It remains only to set the program for rye bread and wait for the end of baking. That's it - fragrant bread is ready!

If there is no yeast in the house

The recipe for yeast-free bread made from whole grain flour is very useful for those who are on a diet and take care of their figure. Such dietary bread is no more difficult to prepare than usual, except that the ingredients will require a little more than usual.

Products for yeast-free whole grain bread:

  • whole grain flour - 1 cup;
  • wheat flour - 1 cup;
  • oatmeal - 3/4 cup;
  • nuts, seeds or dried fruits;
  • kefir - 1.5 cups;
  • olive oil - 4 tablespoon;
  • bran, flax and sesame seeds - 3 tablespoons each;
  • honey - 1 tablespoon;
  • soda - 1 teaspoon;
  • salt - 1 teaspoon;
  • baking powder - 0.5 tablespoon.
  1. Toast the flaxseeds, sesame seeds, bran, seeds and nuts in a dry skillet until golden brown.
  2. Take a bowl and mix all dry ingredients except flour in it.
  3. In a separate container, mix oil, kefir and honey, transfer to a bowl with dry ingredients.
  4. Add flour and mix thoroughly.
  5. Since everything is already mixed, the bread machine must be set to the “baking” or “cake” mode so that no extra time is spent kneading.

An hour later, the bread will be ready! It remains only to give it time to cool - and you can serve it to the table!

A decade ago, people had no idea about home bread machines and baked bread in an ordinary oven. And our grandmothers and great-grandmothers found those times when an ordinary stone oven served as an oven. And the pastries turned out no worse, on the contrary - much tastier and better. It is necessary to bake our bread in an oven preheated to 180 degrees for 30-40 minutes until golden brown.

Any whole grain bread can be made tastier and more interesting in taste. For example, you can add sunflower or pumpkin seeds to it, or add sesame seeds, flax seeds, dried apricots, prunes, raisins or various nuts to the dough. Modern yeasts are thermophilic, i.e. high temperature resistant. Once in the body, they continue the fermentation process, which has detrimental effects on health.

At home, you can cook the sourdough yourself and bake healthy homemade bread based on it, there are many sourdough recipes.

If there is no time or desire to prepare a sourdough, then you can use ordinary baking powder or soda, the bread will also turn out to be tasty and healthier than any store-bought, prepared on the basis of yeast from refined flour of the highest grade.

Whole grain flour is a wholemeal flour (more about this flour -), in which all useful substances have been preserved. It was about bread made from this flour that they used to say: “Bread is the head of everything,” since in composition it was ideally suited to provide the body with all the useful substances it needs.

Modern flour of the highest grade is purified from the most valuable thing that is in the grain, and contains empty carbohydrates. It does not give the body anything for its healthy functioning and only fills the stomach with cheap calories, which then most often turn into excess weight.

How to bake bread at home

Ingredients :

  • milk - 1 glass,
  • honey - 1.5 tablespoons,
  • Hercules (oatmeal) - 1 cup
  • whole grain flour (wheat or rye) - about 2 cups,
  • 1-2 tbsp any fatty product: sour cream, butter, melted fat, vegetable oil,
  • salt - about 5 tsp,
  • baking powder - 2 tsp,
  • spices as desired.

Cooking:

1. Rub honey with butter until smooth, then pour in the milk and mix everything.

2. Add oatmeal and 1 cup flour, as well as salt and baking powder (you can use soda slaked with vinegar), mix. For spices, I added cardamom.

3. Now pour in the rest of the flour in parts until the dough becomes steep so that you can make round bread out of it with your hands.


I want to note that I usually add bran and flaxseed flour to baking: they improve the beneficial properties of the product and slightly reduce its calorie content. In this recipe, I added 2 tablespoons of these products. Especially such additives are useful if ordinary premium flour is used.

4. Put the bread on a baking sheet or in a mold (I have a silicone mat), sprinkle oatmeal on top for beauty, and put in the oven at 220C for about 30 minutes, checking the readiness with a wooden stick.


5. After the bread has completely cooled down, it is ready to eat.

Ingredients:

  • sugar - 1.5 teaspoons;
  • oil - 3 tbsp. vegetable spoons;
  • salt (large) - 1 teaspoon;
  • flour (whole grain) - 500 g;
  • yeast - 1.5 teaspoons dry;
  • water - 300 ml.

Cooking:

  1. Place on a plate. l. flour, salt. Pour in the yeast. Pour in sugar. Stir. The plate should be deep and dry.
  2. Heat water, but do not boil. She must be warm. Pour into a bowl. Mix. Cover with a towel. Set aside.
  3. The mass must rise. It will take about half an hour.
  4. When the mass has turned into a hat in a plate, add flour. It must be sifted before this process.
  5. Pour oil. Knead. Roll into a ball that does not stick to your hands.

Biga Ingredients:

  • hercules - 50 g;
  • kefir - 150 ml;
  • whole grain wheat flour - 50 g.

Cooking:

  1. Mix hercules with flour.
  2. Pour in kefir. Stir. Cover with a package. Move to cold.
  3. Get it the next day.

2 day

Ingredients for 2 bigs:

  • wheat flour - 250 g;
  • kefir - 300 ml;
  • whole grain wheat flour - 200 g.

Cooking:

  1. Mix two types of flour.
  2. Pour in kefir. Stir.
  3. Add bigu from last night. Stir.
  4. Leave on the table for half an hour.

Dough Ingredients:

  • sugar - 10 g;
  • pressed yeast - 4 g;
  • salt - 12 g coarse grinding;
  • sunflower oil - 10 ml.

Cooking:

  1. Pour sugar into the second biga. Salt. Break up the yeast. Stir.
  2. Dip your hands into the oil and knead the dough. This will take 20 minutes.
  3. Cover with foil. Leave for a couple of hours.
  4. Knead.
  5. After half an hour, knead again.
  6. Spin the ball. Let lie down for half an hour.
  7. Roll. Form a loaf. Place in a form.
  8. Cover with foil. Leave in the refrigerator.
  9. After a day, turn on the oven. Down put water in a bowl.
  10. When the temperature reaches 225 gr., place the mold in the oven.
  11. After nine minutes, switch to 190 gr.
  12. Bake for half an hour.
