Chicken pancakes with oatmeal and kefir.

Ingredients:

1 thawed chicken breast
1 egg
3 tbsp. l. oatmeal
salt, black pepper, paprika, curry (all to taste)
kefir - until the desired thickness of the mixture is obtained (like pancake dough)
1 onion
parsley and dill
some flour

NOTE.

According to your taste and your own imagination, you can also add finely chopped sweet red bell peppers, champignons, carrots, zucchini, etc. to create the desired flavor note.

Preparation

Cut the chicken breast into 1x1 cm cubes or a little smaller.
Finely chop the onion and herbs.
Add all other ingredients and mix thoroughly.
It is useful to then set the mixture aside for 3-5 minutes and stir again.
If the mass turns out to be too thick, dilute it with kefir; if it is runny, add a little flour.
The mixture should be medium thick, like pancake batter.

Heat a frying pan with vegetable oil, spoon out the resulting mixture in the form of small pancakes and fry over medium heat until a beautiful crispy crust is obtained, first on one side, then on the other.
These pancakes fry very quickly, and the crust turns out golden, rosy, and fragrant!
Ready-made hot pancakes can be served with tomatoes or other vegetables to taste.

FIGHTED ON KEFIR

Ingredients:

Eggs - 5 pcs.
- butter - 100 g
- kefir - 2 glasses
- flour - 1/2 cup
- salt - 1/2 tsp.
- grated cheese - 1 tbsp. l.

Preparation

Grind the egg yolks with butter and salt. Pour in the kefir and add the flour little by little, stirring continuously. Beat the egg whites with a mixer until foamy and mix into the dough.
Grease the mold with oil and pour the dough into it.
Bake the drachena in a well-heated oven.
When serving hot drachena, sprinkle with grated cheese.

Cabbage pancakes with kefir.

Ingredients:

300-400 grams of cabbage
200 milliliters of kefir
1 egg
1 onion
3-5 tbsp. tablespoons flour (to the desired dough consistency)
1-2 tbsp. spoons of vegetable oil into the dough
1/3 teaspoon baking powder
salt to taste
vegetable oil for frying

Preparation

Chop the cabbage as finely as possible, sprinkle with salt and actively mash with your hands until it becomes soft and releases juice.
Grate the onion into it on a coarse grater, add kefir, egg, flour and baking powder, mix well.
The dough should be like thick sour cream; add more flour if necessary.
Heat a little vegetable oil in a frying pan.
Fry the pancakes over medium heat until golden brown.
Place the finished pancakes on a paper towel.
Serve with sour cream.

These pancakes are delicious both hot and cold.

Chicken pancakes with cheese on kefir.

Ingredients:

2 medium-sized chicken fillets, cut into small cubes 1x1 cm or smaller
100 g hard cheese (any), cut into small cubes 1x1 cm
2 eggs
100 g kefir
100 g flour
3 sprigs each of parsley, dill and green onions
salt, spices to taste.

Preparation

Mix all the products.

Heat a frying pan with vegetable oil, pour the resulting mixture in the form of small, thin pancakes and fry over medium heat until beautifully crispy, first on one side, then on the other.

Place the finished pancakes on a plate, decorate with vegetables and serve hot.

Quick fried pies made from kefir and cottage cheese dough.

Ingredients for the dough:

250 g cottage cheese (not too wet)
1 tbsp. kefir
1 egg
1 tsp salt
1 tbsp. l. sugar without top
1 tsp. with a heap of baking powder
3 tbsp. flour

Preparation

Pour kefir into a cup, add baking powder, salt, sugar, egg, cottage cheese, mix everything thoroughly, add sifted flour and knead a soft, sticky dough (do not add excess flour! - immediately after kneading, this dough should be sticky and viscous, then it thickens as the extent of gluten swelling).

It is better to take cottage cheese for the dough that is not grainy. If the cottage cheese is grainy, first rub it through a sieve - the grains of cottage cheese in the dough will not disperse and the pies will turn out in brown fried pimples.

Cover the dough with a cup and leave for 20-30 minutes for the gluten to swell.

Make the filling according to your wishes and the availability of products (see fillings for pies). For example, stewed cabbage with a boiled egg and fresh dill; mashed potatoes with onions fried in butter or fresh green; green onions with butter and boiled egg.

Roll out the dough for pies on a table dusted with flour (if the dough sticks to the table, add more flour to the table) into a layer 0.5-0.7 cm thick.

Before frying, shake off excess flour from the pies so that it does not burn or smoke during frying, contaminating the oil.

Fry the pies in preheated vegetable oil, poured in a layer of 1 phalanx of the index finger. When frying, the pies should be immersed in oil to half their thickness.

Unlike pies made from yeast dough fried in oil, these pies are not at all greasy.
The dough is soft, the crust is thin and crispy.

2 cups kefir
0.5 tsp soda

Preparation

Heat kefir until warm (28-30 degrees C), add soda, stir, add salt, sugar and stir again, leave to stand for one minute.
Then gradually add flour, stirring constantly until the dough is as thick as homemade sour cream (the dough should be moderately thick).
Heat vegetable oil in a frying pan, pour a layer 0.5-1 cm thick, spoon out the dough, put minced meat on the dough, and a little more dough on the minced meat. Cover the minced meat with dough so that small holes remain. We do all this quickly.
Fry over medium heat on one side, then on the other until a beautiful golden color.
Serve hot.







Pancake-liver snack cake made with kefir.

Ingredients:

For the liver pancakes:

Grind 0.5 kg of liver in a meat grinder (can be finely chopped with a knife),
add 1 egg,
1/2 tsp. salt,
1 tbsp. l. with a pile of flour,
2 tbsp. l. kefir (or milk),
2 tbsp. l. vegetable oil.

Mix everything well and fry like regular pancakes.

For regular pancakes:

1 glass of kefir,
a glass of flour,
1/2 tsp. salt,
1 tbsp. l. Sahara,
1 egg,
4-5 tbsp. l. refined oil.

Mix everything so that there are no lumps, then add 1/2 cup of water.
- Bake the last two thicker pancakes; they will be used to decorate the top of the cake.

For the layer:

Grate carrots
finely chop the onion.

Fry everything, then add mayonnaise (or sour cream) and garlic.

Preparation

Cut out circles from the prepared pancakes using a saucer.
Grind the remaining edges of the liver pancakes with mayonnaise, they will also be used as a layer for our cake.
Alternate the pancakes and place the fillings between them.

We decorate the top of the snack cake with a shuttlecock made of two pancakes. To do this, cut out a circle in the middle of the pancake using a glass and cut the pancake on one side. Place the flounce on one half of the cake. We do the same with the second pancake.

We will make roses from the leftover pancakes. Fold the cut edge in half, grease with liver-mayonnaise mixture, twist the roses, and fasten with a wooden stick.
Decorate the cake with greens.

  • 1/2 tsp. salt for filling;
  • 1/2 tsp. black pepper;
  • 70 ml vegetable oil.
  1. Beat the egg with a fork. Add salt.

    A bright egg yolk will give the dough a nice color.

  2. Mix with kefir.

  4. Sift the flour.

  8. Prepare minced meat.

    If the minced meat is defrosted, then you need to drain the meat juice from it.

  9. Finely chop the onion and mix it with minced meat and spices.

    You will need a sharp knife to cut onions.

  10. Heat the oil in a frying pan and spoon out the round dough balls.

    The oil should heat up well, this helps to get a golden brown crust.

  11. Quickly, before the dough is completely cooked, place a flattened ball of minced meat on top of each flatbread. Immediately fill the surface of the white dough with dough, hiding the filling. Fry the pancakes on both sides under the lid. If the minced meat is chicken, then 10 minutes will be enough, but if the filling is pork, then it will take at least 20 minutes over low heat.

    Before serving, the belyashi can be dried from excess oil using paper towels.

The amount of flour depends on the fat content/thickness of kefir, the size of the eggs and other factors. We focus on consistency - the pancake dough should resemble thick sour cream.
  6. Add minced meat and finely chopped greens to the viscous mass.
  7. Stir, distributing the additives evenly.
  8. Let's start frying. Cover the frying pan with a thin layer of oil and heat it up. We spread about 1-1.5 tbsp. spoons of dough in the form of cakes.   • minced chicken, beef, pork, or mixed (not frozen) - 270 grams;
  • kefir - 1/4 liter;
  • large egg;
  • onions - 1 piece;
  • half a teaspoon of soda;
  • 2-3 cloves of garlic;
  • premium wheat flour (you can take any other flour, semolina, and even bran) - 100-130 grams;
  • a teaspoon of salt;
  • refined oil.

Preparation:

  1. In slightly heated kefir, “quench” the soda and stir. Leave for 5-7 minutes.
  2. Salt the egg and mix with a spoon.
  3. Place minced meat into the egg. Stir.
  4. Puree the peeled onions and garlic using a blender. Squeeze out excess juice.
  5. Thoroughly stir the onion-garlic puree into the kefir-meat mixture.
  6. Mix the sifted flour into the resulting mass until it becomes thick, like sour cream. Allow to “rest” at room temperature for 15-20 minutes.
  7. Heat a frying pan over high heat. Pour oil and let it warm up.
  8. Using a spoon, place the mixture in the form of small cakes. Fry over low heat for no more than 2-3 minutes on both sides until they are golden brown.
  9. Place the finished pancakes on paper towels for a few minutes. After this, serve while still warm with various sauces, for example, garlic, ketchup, adjika. Or you can just with sour cream.

Third option

The following recipe has several interpretations. The dough is the same, but the twisted meat fillings are made differently.

First we prepare the dough, for which you need:

  • about 3 cups flour;
  • kefir - 1/2 liter;
  • 2 chicken eggs;
  • baking soda - 1/2 teaspoon;
  • salt.
    1. First of all, heat the fermented milk product in a saucepan until warm.
    2. Lightly beat the eggs and a little salt and combine with kefir.
    3. Add the sifted flour in small portions, while simultaneously stirring the dough with a whisk, achieving the desired consistency, like thick sour cream.
    4. Lastly, add baking soda; it should be quenched with the help of lactic acid, which is in kefir. If kefir is not too sour, soda can be quenched with vinegar.

Now let's prepare the filling. Need to:

  • minced meat (from any meat) - 500-600 grams;
  • one onion;
  • clove of garlic - if desired;
  • salt and spices;
  • vegetable oil.

Preparing the first dish:

  1. Peel and chop the onion.
  2. Take coarse minced meat and add onion, salt and spices.
  3. Stir everything well.
  1. Place the prepared filling into the dough and mix gently.
  2. Spoon into a heated frying pan with oil.
  3. Turn the heat to low and fry, covering with a lid, on both sides. Turn over only once.

To make these pancakes fluffy, after mixing all the ingredients, it is better not to stir the dough, but only scoop it out when frying. Serve hot with sour cream.
