Pour yeast and sugar into kefir. Mix well. Add 1 tbsp. l. rye bran, stir and set aside.
While the dough rises, we fry the onion without oil until golden brown. Let it cool down a bit and grind it. This can be done with a blender, or passed through a meat grinder.

in this recipe I use red turnip onion - I like it more in taste, but you can use regular onion.
Add in all dry ingredients and onion. Salt to taste.

I use soy isolate in the recipe. Whey or egg will need more, because. it does not give such density as soy isolate!
Mix well - it will turn out crumbs.
Add eggs and olive oil to the dough
Knead the dough with your hands. The dough is quite soft and not liquid.
Cover the dough with a clean kitchen towel and put it in a warm place for 30-40 minutes to proof. During this time, due to the isolate and gluten, the dough will thicken and rise slightly.
When the dough has risen, prepare a baking sheet - line it with parchment, silicone or Teflon mat.

If the finished dough is not thick enough, add a little isolate. The dough should be fluffy, airy and loose.

We divide the dough into equal parts, depending on the desired size of our Dukan buns. We form buns with wet hands and put them on a baking sheet - I got 6 buns, the size of a palm.

The distance between the buns should be at least 3 cm on each side (because they will increase during baking)
Lubricate each bun with yolk (optional), so that the buns acquire a golden color.
If you are not on Attack, you can sprinkle buns with sesame seeds, poppy seeds, flax seeds or chia seeds if you wish.
We bake our dukan buns at 200 C 35-40 minutes - depending on the size of the buns (T temperature indicated for stoves without convection)
Baking Tips:

- It is better to bake buns on the mode - top-bottom, at an average level. This way they will bake evenly.

-If your buns start to burn - reduce the temperature to 180, and put the baking sheet on the lower level.

-If your buns are not baked in any way, increase the temperature to 220 C and be sure to check the thermometer on your stove - for sure it shows the wrong temperature

Choosing this nutrition system, you can be sure that starvation and severe stress for the body are excluded, as evidenced by the numerous Ducan recipes. Baking is not an absolute exception, as is the case with the prevailing number of diets.

What is the Dukan Diet? This system was developed by Pierre Dukan, a leading nutritionist in France, whose popularity has increased significantly in the last decade. The main emphasis in this diet is on foods that contain large amounts of protein and carbohydrates, which can be found in fish, lean meat and eggs.

Such a bias towards protein products is quite understandable. Protein low-carbohydrate foods do not contain excess calories, but the positive qualities of such products can be attributed to a noticeable decrease in hunger. The diet itself is divided into 4 stages, referred to as:

  • attack;
  • alternation;
  • fastening;
  • stabilization.

The first phase is considered the most difficult, because it is it that is accompanied by basic prohibitions, stringent requirements that are recommended to be strictly followed. It is during this period that there is a rapid loss of a large amount of excess weight.

The second stage involves the addition of the recommended menu of the previous stage with other products. The third phase is necessary to stabilize the weight, which was corrected during the first two stages of the diet. But the fourth stage is most often chosen for normal nutrition for life.

The Dukan diet is suitable for absolutely everyone and gives a real chance to cope with excess weight, even for those people who cannot imagine their life without sweets. Delicious and dietary food can be easily prepared at home using certain ingredients. The guide should take Ducan's baking recipes, which today there are already quite a few.

If you really want to drink a cup of tea with something sweet, but there is no desire to spend a lot of time on cooking, Dukan baking in the microwave will come to the rescue. The following recipe is perfect for all stages of the diet, including the stage of aggression. To prepare the base, you should use:

  • skimmed milk powder - 20 g;
  • cocoa - 10 g;
  • oat bran - 2 tbsp. spoons;
  • wheat bran - 1 tbsp. spoon;
  • baking powder - ½ teaspoon;
  • zest - 1 teaspoon;
  • sugar substitute - 2 g;
  • skimmed milk - 4 tbsp. spoons.

All the listed components must be thoroughly mixed, and the resulting mass should be poured into special silicone molds, filling them in such a way that 1/3 of the part remains free. Forms must be placed in a microwave oven and baked for about an hour and a half at a power of 700W.

Without some popular and beloved dishes, it is almost impossible to imagine Ducan's recipes. Baking at any stage of the diet can be represented by the most common pancakes, which for many make up a full breakfast.

  • eggs - 3 pcs.;
  • 1% kefir - 200 ml;
  • water - 50 ml;
  • cornstarch - 3 tbsp. spoons;
  • chopped oat bran - 8 tbsp. spoons;
  • sweetener or special syrup - 5 tbsp. spoons;
  • vegetable oil - ½ teaspoon;
  • soda - 1 pinch.

All components should be thoroughly mixed. For these purposes, it is recommended to use a mixer, and place the container with the mixture for half an hour in a warm place. Pancakes should be cooked in a skillet. In this case, oil can be used, but you can do without it.

Most Dukan baking recipes involve the use of bran, but it is possible to make an equally delicious cake without this component. In this case, baking is prepared from:

  • cornstarch - 3 tbsp. spoons;
  • kefir - 2 tbsp. spoons;
  • skimmed milk powder - 3 tbsp. spoons;
  • eggs - 4 pcs.;
  • sugar substitute - 2 g;
  • baking powder - 2 tsp.

Beat the whites separately from the yolks, adding a little salt. All ingredients should be thoroughly mixed and poured into a mold. As a rule, it will take no more than half an hour to bake a biscuit.

A layer for biscuits should be prepared from low-fat cottage cheese, which in a volume of 200 g must be mixed with unsweetened low-fat yogurt.

Is it possible to imagine homemade cakes without buns? The Dukan diet allows for the use of such self-prepared sweets. In this case, Dukan baking is prepared from:

  • skimmed milk - 200 ml;
  • gluten - 60 g;
  • oat bran - 50 g;
  • psyllium - 2 tbsp. spoons;
  • eggs - 1 pc;
  • sweetener - 2 scoops;
  • salt - ½ teaspoon;
  • fresh yeast - 15 g.

The process of preparing the dough is quite simple. At the first stage, it is necessary to warm up a little milk and dissolve the indicated amount of yeast in it. After that, the resulting mixture must be thoroughly mixed with the rest of the components, and the container should be placed for 30 minutes in a warm place.

After the specified time, the dough should be thoroughly mixed using a mixer for this purpose. After these manipulations, the dough should be infused for another 30 minutes, after which several medium-sized balls should be formed from it. Such buns are baked for a quarter of an hour at an oven temperature of 170 degrees.

Whisk the egg whites with salt until stiff, beat the egg yolks separately with the baking powder. We connect the two masses and add aroma. We spread it on a silicone mat and in a preheated oven, up to 180 °, set for 7-10 minutes.

Fry the mushrooms with onions, add kk and stir until thickened. Put the finished mushrooms in the sauce on the cake and wrap the roll. Let cool and refrigerate for half an hour.

Then you can cut into pieces and put on a plate.

Mix in a container 2 tbsp oat bran, 2 tbsp. wheat bran, salt to taste and a couple of tablets of sahzam (crush) and 0.5 tsp. soda.
Separately, beat 2 eggs and 3-4 tbsp. kefir 0%.
Mix everything, transfer to a microwaveable container and bake for 5-7 minutes.

For 10 donuts:
Dough: 2 tbsp. l. with a slide KK, 3 tbsp. with a slide SOM, 5 proteins +1 yolk, 3 tbsp. milk, sakhzam to taste, (you can add lemon zest if desired).
Filling: 1 heaping tbsp SOM, 1.5 tsp. cocoa, sakhzam, aromik "Condensed milk", milk.
Beat the whites to peaks, add the yolk and beat too. Add dry ingredients, mix gently, add milk. Pour into silicone molds and bake in a preheated oven for 10-15 minutes, until golden brown.
For the filling, mix everything, add a little milk, stirring, so that it turns out to be thick like curd cream. We find a fold in the donut on the side, make a hole with a knife. With a pastry syringe, fill the center with the filling.

Dough: 2 eggs, 2 tbsp. cocoa free, 1 tbsp. L. KK, 3 tbsp. SOM, 1 tbsp. gluten, 1 tbsp. mix vegetable oils, sugar, milk, baking powder until liquid sour cream thickens. In a silicone mold at 180 C. After 10 minutes, reduce the temperature to 160 C and bake until a stick is dry. When ready, without removing from the mold, pierce very thickly with a toothpick in many places and
