Caesar with shrimp - recipe. Caesar salad with shrimp How to make Caesar salad with shrimp

Caesar with shrimp is a dish that is especially popular among gourmets. Exquisite seafood, crispy lettuce and fried croutons combine to create a mouth-watering appetizer. But the main “trick” of this dish is the sauce, which is used to season all the prepared ingredients. The classic salad dressing with shrimp contains components that help achieve the unique taste and consistency of the dish. What is the secret to making Caesar salad sauce? Let's try to figure it out.

Recipe for classic Caesar salad dressing with seafood

It would seem, why not just season the salad with olive oil? Both tasty and healthy. Perhaps this approach can be used when preparing other salads, but Caesar will not forgive this. This is truly a royal dish, and dressing plays an important role in it.

So, what should a recipe for Caesar salad sauce with shrimp contain:

  • garlic– hot and aromatic cloves of garlic perfectly combine the taste with boiled shrimp and add a spicy note to the dressing;
  • mustard– a small amount of mustard is required for aroma and spiciness;
  • yolks– mashed yolks are the basis of the sauce for shrimp, and boiling them is perhaps the most crucial moment in preparing the dressing. The recipe advises that it is better to undercook the yolks than to overcook them; the main thing is to keep track of time;
  • olive oil– necessary to create a uniform liquid consistency of the dressing;
  • Worcestershire sauce– it is based on sugar, vinegar and fish. Just a few drops of this ingredient will set an appetizing mood for the entire dish. Worcestershire sauce is not difficult to find in any modern supermarket.

Note! Properly prepared salad dressing enhances the flavor of each ingredient, bringing them together into one composition.

Caesar sauce: subtleties of preparation

Some components of the sauce will not cause difficulties, because they can be found in any refrigerator. But what if you can’t get everything you need for the sauce?

  • Olive oil in the dressing can be replaced with any odorless vegetable oil. If you use sunflower, then choose light, refined oil. Unrefined dark oil has a rich taste that can overwhelm all the other flavorful ingredients in the sauce.
  • Worcestershire sauce is replaced with silver fish - anchovies. For a serving of sauce you will need 2-3 pieces. in any version that you find on sale. Anchovies need to be ground with the rest of the ingredients using a blender.
  • Parmesan is one of the ingredients for Caesar salad dressing. This cheese is included in the classic sauce recipe. If necessary, it can be replaced by Italian Grana Padano cheese, as well as Dutch or Russian cheese (hard varieties).

Important!You can bypass the recipe and replace the ingredients of the sauce, but the taste will differ from the version suggested by the original recipe. If this point is not important for you, then feel free to use the ingredients that are available to you.

How to cook?

The dressing sauce is prepared immediately before preparing and serving the salad. The dressing cannot be stored for long periods of time, as it may begin to separate, which will affect the taste of the dish. Sweet and sour sauce is usually used for Caesar with shrimp, but the recipe allows you to use it in other variations of the salad.

Add fine shavings of grated Parmesan cheese to the mayonnaise. Add 3 anchovy fish fillets.

It is added to this sauce according to the number of yolks. And there are three of them, which means 3 anchovies.

Pour in Worcestershire sauce, half a teaspoon of lemon juice, add half of one clove of garlic and, on the tip of a knife, Dijon mustard. Blend all ingredients with an immersion blender.

Step 4. Pour vegetable oil onto a baking sheet, heat and fry the shrimp.

Step 5. Wash the head of lettuce well under running water and dry it. Tear the leaves with your hands and place them in a bowl. Pour in the prepared sauce and mix evenly. So that every piece of the sheet is lubricated with it.

Step 6. Shape the salad to serve. Take a flat plate. Place Romano leaves mixed with Caesar dressing into it. Scatter a handful of crackers on them. Distribute the fried shrimp over the surface.

As a finishing touch, scatter thin slices of Parmesan cheese over the surface of the dish. They can be cut with a knife, or even better, with a vegetable cutter.

How to prepare a salad with shrimp and quail eggs?

Quail eggs are not much different in chemical composition from chicken eggs. They contain a little more monounsaturated and saturated fats, B vitamins. But in chicken, vitamin D, omega acids and fluorine predominate.

Both types of eggs are equally healthy and there is not much difference in what you put in the salad. Small manufactured products look more aesthetically pleasing in dishes, being to some extent their decoration. Therefore, housewives often choose them. Especially if you are preparing a holiday dish.

Ingredients:

  • 200-300 g of fresh shrimp;
  • half a head of lettuce;
  • 10 -15 quail eggs;
  • 20 pcs. cherry tomatoes;
  • loaf of bread;

  • 2 cloves of garlic;
  • olive oil;

Preparation:

We clean the arthropods from the shell, add chopped garlic to them. Salt and pepper. Squeeze 2 teaspoons of juice from the lemon, add 1-2 tablespoons of olive oil. Mix. Let the arthropods marinate for a few minutes.

Cut white bread into cubes. Pour a little oil into the pan, squeeze out the garlic and fry it lightly so that the oil absorbs the garlic aroma. Add pieces of bread and fry until golden brown.

Next, fry the shrimp until golden brown and transfer them to a plate to cool.

Cut the lettuce leaves and place the pieces on a flat plate. We distribute arthropods on them. Place a large spoonful of sauce in the middle. We distribute halves of quail eggs and cherry tomatoes around it.

And finally, sprinkle with thinly sliced cheese slices.

Caesar salad with squid and shrimp

Great recipe! The dish turns out incredibly tasty and festive. Of course! After all, it contains 4 types of seafood. In addition to those indicated in the name, mussels and red fish are included. Their number, if desired, can be reduced to two. Often, we only add squid to shrimp. But I present the preparation technology and composition unchanged.

Ingredients:

  • 100 g shrimp;
  • 100 g squid;
  • 50 g mussels;
  • 50 g lightly salted red fish;
  • lettuce leaves;
  • crouton loaf;
  • 10 quail eggs;
  • 3 tomatoes;
  • 1 lime:
  • 150 g cheese;
  • 200 g Caesar sauce;

Preparation:

Break the loaf into small pieces and place in a bowl. Drizzle the pieces with flavored garlic oil. (To do this, squeeze the garlic into olive oil and leave for 15 minutes). Mix. Place in a hot oven. Fry the bread until golden. With this frying, you should get croutons: crispy on top and soft inside.

We remove the shell from frozen or fresh shrimp, add a little lemon juice, ground garlic, and salt. Stir and leave to marinate. Then fry in vegetable oil with garlic until golden brown on both sides.

We cut the squid, remove the notochord (cartilaginous formation) from the inside, and remove the skin. Boil in boiling water for 1-2 minutes.

Do not increase the cooking time! Long-term heat treatment makes the squid meat hard, like rubber.

Cut the clam into rings or strips.

Cut the red fish into large pieces and begin to assemble the dish. Place green lettuce leaves on the bottom. We arrange shrimp and squid in a chaotic order. We supplement them with chopped tomato slices and canned mussels. Place the quail egg halves. Draw a sauce network. Sprinkle with cheese shavings and fried croutons.

Add a second layer of leaves. Distribute pieces of red fish and tomatoes on top. Lubricate with sauce. Add cheese shavings and shrimp. Once again eggs, cheese. Decorate with basil leaves. For freshness and piquancy, lightly dust with lime zest. You can also sprinkle with juice.

The line of Caesar salads with shrimp is not so extensive, so you can gradually try them all and choose your favorite option. Seafood dishes should be included in your diet only because the proteins they contain are “akin” to human proteins and are very easily absorbed by the body.

Choose the recipe you like and delight yourself and your loved ones with healthy, low-calorie food. And in order not to forget how to cook, save the article on your social network page. See you again!

Caesar salad with shrimp is no less popular than the classic version with chicken. Below are several variations of preparing the dish, as well as recommendations for preparing individual components of the salad - croutons and sauce.

  • fresh lettuce leaves;
  • olive oil;
  • raw regular shrimp - standard packaging;
  • eggs;
  • black pepper;
  • cherry;
  • half a lemon;
  • a pair of garlic cloves;
  • Caesar sauce;
  • for boiling shrimp, a few sprigs of dill, 2-3 peas of allspice, bay leaf.

First, we prepare the shrimp: we clean the shell, head and insides, at this time we boil the broth with a bay leaf, several sprigs of dill, a couple of allspice peas. As soon as the broth boils, drop the shrimp into it and cook for 3-4 minutes after the water boils. Mix the prepared shrimp with a dressing of lemon juice, pressed garlic, oil and pepper, let them soak for a quarter of an hour.

Cut the salad into medium cubes or tear it by hand.

Boil the eggs until done. Clean and cut into quarters. If you use quail, it will be enough to divide them into halves.

We put greens and shrimp on a salad dish, decorate it with cherry halves and pieces of eggs. Place the sauce in the center.

Just a note. Regular shrimp are cooked for several minutes, king shrimp - up to 10-12 minutes, depending on size. Frozen food must first be thawed.

With the addition of crackers

Traditionally, Caesar salad, be it classic, with chicken or shrimp, is served with aromatic crispy croutons. They can be purchased at the store. Products that belong to the supermarket’s “own production” are suitable. Simple snack crackers will not add the desired flavor to the dish.

You can also make crackers at home:

  1. Cut the wheat loaf into cubes, heat a few drops of oil in a frying pan, squeeze out a garlic clove and fry the crackers until golden. There is no need to add a lot of oil during frying.
  2. Remove the crust from the wheat bread, cut into thick slices, divide into cubes, place on a baking sheet, lightly sprinkle with olive oil, sprinkle with a little Italian herbs and pepper, and place in the oven at 180 degrees. Depending on the brand and model, the oven may “fry” stronger or weaker, so you need to monitor the brownness of the crackers.

Just a note. Wheat bread is usually used, but if desired, it can be replaced with rye bread. To make homemade crackers, it is recommended to use yesterday's bread - the crumb becomes denser and easier to cut.

Calorie content of the finished dish

The general opinion about Caesar salad is that the dish is considered dietary. However, this is not entirely true, and its calorie content is quite high. Of course, vegetables have very low calorie content, and shrimp are not very high in calories. But many people forget about the sauce - they add butter, sour cream, and sometimes mayonnaise.

Recipe video

From this video you will learn how to prepare Caesar salad with shrimp using a very simple and easy recipe using available products. I recommend watching!

  • Experienced chefs advise not to cut the salad, but to tear it with your hands, since when cutting, contact with metal destroys vitamins. When manually chopping, pieces of leaves are obtained in different shapes, making the appearance of the dish more interesting.
  • Lettuce leaves have a neutral taste, so after placing them on a plate, I advise you to salt them a little and sprinkle with lemon juice.
  • To speed up the cooking process, boil the quail eggs in advance, dry the crackers, and peel and marinate the shrimp.
