Dishes for cooking in the microwave. What can you cook in the microwave quickly and deliciously?

The microwave brought simplicity and speed to kitchens. It makes it easier to heat up dishes, and it only takes a few minutes to stew meat or vegetable stew. Although cooking in the microwave is not difficult, it will require certain knowledge and tricks from the housewife. You will find them in our material.

What can a microwave oven do?

Most of us use the microwave to reheat dinners straight from the plate or make hot sandwiches. In the meantime, a good microwave can replace several kitchen appliances at once:

  • convection oven
  • grill
  • oven
  • even a steamer

It can act like an ordinary oven, or its functionality associated with microwaves can be used in conjunction with other functions.

Interesting ways to use a microwave

You can sterilize jars in it. And also disinfect kitchen sponges and cutting boards. Sponges should be soaked in water with lemon juice, and the boards should be rubbed with a slice of this citrus. In addition, you can dry mushrooms and crackers in the microwave, melt dough, heat spices and nuts to make it easier to peel them.

What do you need to know to cook in the microwave?

  • Microwaves penetrate food from different sides, but to a depth of no more than 2 cm. Therefore, for the microwave it is better to cut the pieces not too large.
  • If you fry/bake in the microwave mode, then place the largest pieces on the edge of the dish so that they receive more microwaves and are better baked.
  • When preparing soup, it is advisable to cover it with a lid, but be sure to allow steam to escape. If you put a glass tube into the liquid, it will boil less.
  • Those parts that are located at the edges of the plate receive more energy, and the middle receives less microwaves. Therefore, the food being prepared needs to be mixed; if you bake legs or wings, or any other similar pieces, they need to be swapped and turned over.
  • It is better to salt meat and fish at the very end of cooking, so they will retain their juiciness.
  • When preparing scrambled eggs, you need to take only very fresh eggs and prick the yolks with a toothpick. Then they won't spread.
  • The dough in the microwave cooks higher than in a conventional oven. Therefore, you will need a form with high sides, and you only need to fill it halfway.
  • To prevent baked goods from burning, you need to add more flour to the dough.
  • To prevent dishes from drying out when heating, they need to be covered with film or a special dome lid.

What are the dangers of microwave ovens?

The most popular stereotype about microwave ovens - they are a source of radiation - is fundamentally untrue,” the head of the laboratory of radiobiology and hygiene of non-ionizing radiation at the FMBC will assure AiF. Burnazyan FMBA of Russia, candidate of biological sciences Oleg Grigoriev.

What kind of cookware should I use for the microwave?

Microwave dishes must be transparent to microwaves, contain no metals, do not conduct electricity, and be heat-resistant.

Any utensils can be pre-tested for use in the microwave. To do this, you need to take an ordinary faceted glass (or any thick-walled glass glass, but without a pattern), pour water into it, place it in the test dish, and place the dish in the microwave. Turn on at maximum power for 1 minute. When you open the oven, the water in the glass should be hot, and the dish in which the glass was placed should not heat up. If it gets hot, it means it is not suitable for use in the microwave.

How to cook meat in the microwave?

When cooking meat in the microwave, be sure to cover it with a lid to maintain its juiciness and prevent it from drying out. Please note that meat at room temperature and with fat cooks faster than lean and cold meat. Salt and spices should only be added at the end. Poultry is perfect for cooking in the microwave - the meat turns out juicy, tender, in its own juices.

P The principle of cooking food using microwaves in a microwave oven is fundamentally different from traditional heating methods, such as on the stove, in the oven or on the grill. What are the advantages of cooking in a microwave oven? Firstly, this is a significant saving of time and energy. By directly affecting food, microwaves enable rapid defrosting, heating and cooking of food in less time than conventional methods. After all, when cooking on a stove, the heat reaches the food after heating the burner and dishes. Secondly, microwave cooking requires less water, fat and salt. Thus, such bath components as vitamins and minerals are preserved in the products as much as possible. In addition, microwaves are odorless and tasteless, so they do not affect the aroma and taste of food. Microwave dishes are usually tastier than conventionally prepared ones and do not require a lot of spices and seasonings. There are also no large amounts of harmful substances produced, so the microwave oven is ideal for preparing diet food.

An important feature of a microwave kitchen is the need to use special utensils. Such dishes are made from various materials and have different shapes. As a rule, it is not only convenient, but also beautiful: you can not only heat and cook various dishes in it, but also serve ready-made food on the table.
In the absence of special dishes, you can use ordinary ones made of ceramics, porcelain, glass or plastic. It must be remembered that metal utensils are not suitable for microwave ovens. In addition, some special tools are used in microwave cooking:

Aluminum foil as insulation - for covering thin, protruding parts of prepared products (parts of poultry legs, wings, protruding figured parts of flour products);
- paper napkins that allow moisture to evaporate, but at the same time prevent grease or moisture from splashing;
- paper bags and cardboard boxes;
- plastic bags that can withstand boiling and freezing temperatures (the metal clips of such bags must be removed), etc.

Paper packaging can be used at low temperatures for heating or quickly cooking food, as well as for products with a low fat, sugar and water content (the latter condition also applies to plastic containers). Food can be covered with plastic wrap during cooking. However, plastic bags, film and paper bags must be pierced to allow excess steam to escape.

To prepare different dishes, it is important to choose the right utensil shape. In deep dishes, food cooks longer than in shallow ones, and in round ones it cooks more evenly than in rectangular ones. In a dish with inclined walls, the outer part of the prepared dish may burn, and the middle will still be raw.

Many of the cooking techniques in a microwave oven are similar to those used when cooking conventionally, but there are also specific features. They help distribute microwave energy so that food cooks evenly, help reduce cooking time, and more.

Stirring food from the edge to the center of the pan - twice during cooking - helps to heat the food evenly and speeds up the penetration of microwaves into it.
. Large, dense pieces of meat or poultry are turned once halfway through cooking. This helps the meat cook evenly. If you fry the cutlets without covering, they also need to be turned over once. Pies, cakes, casseroles need to be rotated 180° at regular intervals. Most ovens are equipped with a rotating tray specifically for this purpose.
. In different places in the microwave oven chamber, products are heated differently, so it is better to place products in small portion forms in a circle at an equal distance from each other, and it is better to place “delicate things” - asparagus, broccoli, chicken wings - in the center to achieve best quality food.
. Aluminum foil is used to slow down the cooking process in areas of food that have dried out or are cooking too quickly. It should be placed in small pieces before placing food in the oven and removed after half the time required for cooking, or placed during cooking on those foods that need to be protected from further heating.
. It is extremely important to remember that food continues to cook for several minutes after it is removed from the oven. During this time, their internal temperature rises by 5-8 °C. Therefore, the dish must be removed without being completely cooked, and the roast, large vegetables, pies, etc. should be allowed to “cook.” This will allow you to get a tender, juicy or airy dish, avoiding the danger of drying it out. Over time, having gained some experience, you will be able to accurately determine the time required to prepare a wide variety of products without a recipe.
. The lid, which covers the prepared dish, holds back steam, maintains humidity, speeds up the cooking process, preserves the juiciness and tenderness of the food and prevents splashing. Glass lids or plastic caps with holes to allow steam to escape are ideal (be careful when removing the lid to avoid getting burned by the steam). Varying degrees of moisture in foods can be achieved by using paper towels or tracing paper.
Dishes cooked in the microwave do not have a crispy crust or golden brown appearance. Therefore, to make the food look more appetizing, there are special additives. They may be based on some kind of sauce, ghee or jelly. Liquid additives are used to lubricate the surface of pieces of meat and poultry carcasses; dry additives are used to sprinkle on casseroles and cakes. Dry mixes can consist of brown sugar, chopped or ground nuts, and powdered sugar. In addition, there are special dishes made of glass ceramics with a special coating on the outside of the bottom that absorbs microwave energy for frying in a microwave oven. The products are placed in a bowl, preheated for 5-6 minutes at maximum power, and placed in the oven. Under the influence of microwave energy, the dish is baked until cooked, and a golden brown crust is formed from contact with the heated surface. In order to fry the product on both sides, turn it over after half the cooking time. However, it should be remembered that such cookware gets very hot. Be careful!
. When cooking food in a microwave oven, you should take into account certain characteristics of the food, for example, size, shape, presence of moisture, initial temperature, density. Understanding how the nature of the food affects the cooking process will help you take advantage of the benefits of microwave cooking.
. Microwaves penetrate to a depth of 2-3 cm, so large parts of the product must be cut into equal pieces (5-6 cm in size) so that heating occurs evenly. If you are preparing a whole piece of irregular shape, then you should try to unfold it so that the thin parts are placed closer to the center.
. The greater the mass of products, the longer the cooking time. If the mass of food doubles, then the cooking time will increase by about 2 times. Thin and round pieces cook faster than thick and rectangular ones.
. It is not recommended to cook less than 200 g of food in the oven, but you should not overload the oven; it is better to cook in several stages. When cooking a very small amount of food (less than 200 g), for example, when drying herbs, it is necessary to place a glass of water in the oven to load. Sugar heats up faster than all other products and can quickly burn if it is not thoroughly mixed with other products and bulk products or dissolved before placing it in the oven. Vegetables, especially young and fresh ones, contain a lot of water, so moisture appears on their surface quite quickly, and they cook well; if there is not enough moisture, this can be corrected by adding a little water so that the food does not dry out. However, you should not add too much liquid; too much will slow down the cooking process.
. Dense food takes longer to cook than porous and airy food, so it needs to be cooked at medium power levels so that heating occurs more evenly, as it may turn out that the top of the dish will be already cooked, but the inside will remain raw.
. Products covered with skin, film, casing - tomatoes, potatoes, eggs, liver - must be pierced before cooking, since excess pressure is created inside the casing when internal moisture evaporates, the products burst, and pieces of food scatter throughout the chamber. Cooking eggs in their shells in the microwave is not recommended.
. The cooking time in a microwave oven depends on the volume, quantity and initial temperature of the food. For example, one potato will bake faster than four; a frozen product will take longer to heat up than the same product at room temperature, etc. It must be remembered that it is always better to undercook food than to overcook or dry it out. If a recipe specifies a minimum and maximum time, cook the dish for the minimum time, then check for doneness and, if necessary, keep it in the oven for a little longer. The readiness of food cooked in a microwave oven is usually determined using traditional methods.
. The finished baking easily lags behind the edges of the pan. The top crust should not be brown. Baking in a microwave oven turns out fluffier than in a regular oven. If you insert a knife into the middle of the pie between the edge and the center, it should be dry, which means the pie is ready.
. Meat and poultry dishes, after removing from the oven, are left for 10-15 minutes, after which they are checked for readiness with a fork: it goes in freely if the meat is ready.
. When cooked, the chicken leg will move easily at the joint, and the juice flowing from inside will be yellowish in color.
. The fish is removed from the oven when the middle is still slightly transparent; if you overexpose it, it will become dry and hard.
. Potatoes should be kept in the oven for about 5 minutes and the same time should be reached until cooked after
as he is taken out of the cell.
. Before cooking frozen food in the oven, it must be thawed to room temperature, otherwise it may turn out that the outside of the dish will already be ready, but ice will remain inside. However, this condition does not necessarily apply to frozen vegetables - they can be defrosted and cooked at the same time in full power mode.

One of the significant advantages of a microwave oven is the ability to quickly and easily defrost meat, fish, vegetables, desserts and other foods. Defrosting in a microwave (usually at low power settings) occurs in a matter of minutes compared to the same process under normal conditions. Process time depends on the shape, packaging, density, starting temperature, and total weight or volume of the frozen product.

It happens: you finally decided to eat properly at home and even got hungry in advance especially for this, but you forgot to pay for gas. Or, let’s say, you wanted to eat like a human at work, bypassing the machines with sandwiches and chips. In any case, it's time to wisely use the thing that usually served you to extract cholesterol from cheese by melting it and turn pizza from a piece of ice into a rubber product. It's good for more than just that. We found out how and what can be cooked in a microwave oven - also known as a microwave oven - so as not to suffer from remorse and stomach pain later.

The principle of operation of a microwave is as simple as a sausage in dough: a device called a magnetron converts electrical energy into an ultra-high-frequency electric field, which causes the molecules of water, fats and sugars contained in food to actively move. Mixing molecules increases the temperature of the material - the energy of electromagnetic radiation is converted into thermal energy.

Get ready to cook

In order not to waste food and end up ruining the meal for yourself and others, you need to know something about the principles of cooking in a microwave oven. Don’t rush to roll your eyes with the words “I’m hungry, and they’re back with their boring advice - there’s nothing complicated here!” Nothing complicated, but the cup is full of useful things.

1. When cooking in the microwave, take heat-resistant dishes that can withstand temperatures up to 300°C. It's better to have a transparent one so you can see what's going on in it. And round in shape - so that the ingredients heat up more evenly.

2. The depth of penetration of microwaves depends on the density of the product: for example, 300 g of products with a loose structure (porridge, mashed potatoes, minced meat) will warm up faster than the same 300 g of hard pieces of meat or potatoes. Actually, this is why predominantly complex dishes from small (or finely chopped) ingredients are prepared in a microwave oven.

3. Cooking time is directly proportional to the amount of ingredients that you are going to turn into food: if their mass doubles, then the session should last twice as long.

4. Cut vegetables and meat into identical small slices so that they are heated equally (mix everything from the edges to the center once per session). If the pieces still turn out different, place the larger pieces further away from the center of the container - the heat concentration is higher at the edges than in the middle.

5. If you want to bake the whole bird, tie the wings and legs to the carcass so that they do not overcook. To give the product an appetizing color, brush the chicken (or a large piece of meat, if you decide not to chop it) with soy sauce or mild mustard, sprinkle with paprika or a special microwave-safe coloring powder.

6. Cook the fish in a closed container with a hole in the lid. To avoid drying it out, set the power to 900 W and cook for 5–7 minutes. And do not heavily salt pieces of meat and fish before putting them in the microwave, so that the resulting dish does not turn out to be too dry.

7. Cereals and legumes need to be soaked in water long before cooking - at least 5–7 hours.

8. The last one is obvious, but someone should say it: food with a closed shell boils and explodes in the microwave. Don't even try to cook shelled eggs, canned food in jars, or food in airtight bags in this oven. For products with skin (such as potatoes or apples), pierce them several times with a toothpick.

Raving about harmful things

A popular myth says: Microwave radiation deforms and destroys the molecules of substances contained in foods, creating new compounds. They can provoke cancer, problems with the thyroid gland and stomach, and contribute to changes in blood composition.

The World Health Organization responded to this with the following verdict back in 2008: microwave radiation has no harmful effect on either humans or food. “If there are no harmful substances - nitrites, pesticides, dioxins, heavy metals, etc. - were not in the products, they simply cannot appear there during the cooking process, this is unscientific,” explains nutritionist Marianna Trifonova. “At the same time, vitamins and minerals are preserved quite well in products prepared in the microwave,” says gastroenterologist Diana Dicheva. - And it takes little time to prepare, and this contributes to better preservation of nutrients. In addition, the finished dish contains less burnt fat - unlike food cooked, for example, in a frying pan in oil.”
