5 secrets of a delicious dish. Why do you need semolina in a pie?

Semolina in a casserole is an optional ingredient, but preparing a dessert without this popular cereal in baking requires certain knowledge and skills from the cook.

  1. Pass the cottage cheese through a sieve or mix with a blender. This is necessary to ensure that the dish turns out tall and tender. If you want a loose cake-like mixture, simply mix all the ingredients together with a fork.
  2. Take cottage cheese with moderate or high fat content. This will make the dish more appetizing. If you only have a low-fat product on hand, add sour cream or butter (one tablespoon).
  3. Place the dish in a preheated oven. The surface of the raw dough, upon contact with high temperature, will immediately become covered with a crust and will burst with further heating. Place the casserole in the oven a couple of minutes after turning it on - this way the dish will heat up gradually and rise well.
  4. Do not use more eggs than called for in the recipe. Excess eggs will make the dish not so much nutritious as “rubbery” and dense. To make the dessert as airy as a soufflé, add the whipped whites to the dough separately from the yolks.
  5. Sift the flour. Thanks to oxygenated flour, the casserole will be soft and fluffy. This is immediately evident from the consistency of the curd mixture with flour at the cooking stage - it is very tender and resembles sour cream.

The presented dish is so easy and simple to prepare that you can make it for breakfast every day. It should also be noted that this casserole is especially useful for young children. After all, it consists of cottage cheese, which, as you know, contains a lot of calcium. Namely, this element is very often not enough to strengthen and grow the skeleton of a modern child.

So, cottage cheese casserole without flour and semolina includes the following components:

  • grainy country cottage cheese (if you are on a diet, you can buy low-fat) - about 500 g;
  • fresh chicken egg - 4 large pieces;
  • medium-sized granulated sugar - 7 large spoons (if you are on a diet, you can use a sweetener);
  • cooking fat - 35 g (for greasing the frying pan);
  • medium fat sour cream (20%) - 2 large heaped spoons;
  • starch (it is better to use potato starch) - 2 large heaped spoons;
  • vanillin in a bag - 1 small spoon;
  • seedless dark raisins - use as desired.

Preparing the base

Cooking with starch is no more difficult than that requiring the use of wheat flour. Before heat treatment of this delicacy, it is necessary to knead the viscous base well. To do this, you need to separate the egg whites from the yolks, and then beat the first component into a stable foam (until peaks form). As for the second ingredient, it should be added to the grainy village cottage cheese and mixed thoroughly. After this, you need to add granulated sugar to the milk mass and wait until it partially melts.

Having prepared the sweet curd base, you need to add strongly beaten egg whites, add vanillin, and add medium-fat sour cream.

After mixing all the products, you should get an airy and fluffy base. Until it settles, it should be subjected to heat treatment.

Using raisins

Preparing cottage cheese casserole does not require strict adherence to all recipe requirements. So, you can add not only the above ingredients to the base, but also any fillers. For example, we decided to use seedless dark raisins. But before placing it in the dough, dried fruits need to be thoroughly processed. To do this, you need to sort them out, rinse them with hot water, put them in a bowl and pour boiling water over them. After 20-30 minutes, the raisins should be discarded in a colander, rinsed well and drained of liquid by shaking vigorously over the sink.

After all the described steps, you can safely add the filler to the base and mix it thoroughly.

The process of shaping and baking in the oven

The cottage cheese casserole in the oven, the photo of which is presented in this article, is prepared quite quickly. But before you place this delicacy in a heated cabinet, it should be formed correctly. To do this, you need to grease a deep pan with cooking oil (you can use a cast iron frying pan), and then pour all the curd dough into it. Next, the filled dish must be placed in the oven and kept in it for 46-48 minutes. During this time, the curd casserole with starch will become very fluffy, soft and tasty.

Properly serving homemade delicacies to family members

After the sweet product has melted a little, forming a more liquid mass, you should pour it into the same container and after mixing the components, it is advisable to leave them aside for ¼ hour. This is quite enough for the semolina to swell.

After all the described steps, you need to add fine salt, medium-fat sour cream, as well as melted vanillin and baking powder to the base. As a result, you should get a mass that is not very thick, but not liquid either.

If you wish, you can add dark raisins to the finished dough. We described how it should be pre-treated in the previous recipe.

In addition to dried fruits, you can add candied fruits, citrus fruit zest, nuts, etc. to this casserole.

Form the delicacy and bake it in the oven

You can make cottage cheese casserole in both large dishes and small molds. But in any case, the selected dishes should be greased with cooking oil. Next, you need to pour all the dough into it and send it to a preheated oven. It is advisable to cook homemade cakes at a temperature of 205 degrees for 45-47 minutes. During this time, the curd product will become fluffy, soft and very tasty.

We present it correctly to guests

Now you know how to make a casserole with starch and using semolina. After the dessert is completely prepared, it must be cooled directly in the container in which it was baked. Next, the airy curd delicacy should be cut into pieces and presented to guests along with sweets such as honey, jam, syrup or preserves. In addition, it is recommended to serve hot black tea with the casserole.
