Mix the meat with the sauce with your hands until the mass becomes uniform in color. We cover with a lid. In this form, the meat can stand in the refrigerator for at least 8 hours, but after an hour you can start frying it.


2. Deep fry meat in starch batter.

Starch batter on egg white is one of the main identification marks by which we immediately distinguish “Chinese food”. Although I suspect that you, like me, had no idea about this before. It is done quite simply. Egg white separated from the yolk is driven into a large bowl. Diluted with water. And then the starch is poured in. It mixes easily with a fork, and even easier with a whisk. There is no need to salt the batter - it will soak in sweet and sour sauce.



The most difficult thing for me personally in cooking meat in Chinese is always the moment of pouring a whole bottle of sunflower oil into a saucepan. I understand everything - oil costs three kopecks compared to the amounts that we used to pay for ready-made Chinese food, but so far the stereotype is stronger than me. It is convenient to deep-fry meat in the most ordinary Teflon pan. The heating is less than with conventional frying, so nothing will be done to the Teflon. When the oil is hot, spread the meat in batter in portions so that it turns out in one layer. Keep in mind that the meat immediately falls to the bottom and, if you use non-stick cookware, tends to stick to it. So you need to pry it with a slotted spoon and mix occasionally. Cooking time for one serving is 10 minutes.


And then the meat must be put either on a paper towel or in a sieve so that excess oil is drained.


3. Prepare sweet and sour sauce.

You need to mix until the pork is covered with starch, like a paste. The amount of starch is up to you. Leave the starched pork in the refrigerator for 30 minutes to 8 hours.

    2. Then, in a separate bowl, mix the ingredients for the sauce: soy sauce, sugar, vinegar.

    3. Heat up the pan (wok or cauldron), grease with oil, heat the oil. It should be hot, but not boiling.

    4.Put the pork pieces into the pan and fry in the oil until the starch turns golden brown.

    5. Transfer the fried pork to a colander, drain the remaining oil.

    1. Now put the pan back on the fire and drop oil into it. Roast vegetables.

    2. Add our sauce to the vegetables, stir. Bring everything to a boil.

    3. Add pork to the pan, mix, simmer for about three minutes.

Delicious pork in sweet and sour sauce is obtained from pork neck. We will need:

Pork neck (400 g)

Onion (one head)

Bulgarian pepper (red and green, 3 pieces)

Pineapple (fresh or canned, 50 g)

Shiitake mushrooms (can be found in dried form in any department of the supermarket where there is a stand with goods for making rolls)

Starch (50 g)

Sugar (100 g)

Soy sauce (50 ml)

Ketchup (150 ml)

Mirin (Japanese vinegar, 30 g. You can do without it)

Sushi vinegar (rice vinegar, 30 ml)

Vegetable oil (olive refined or sunflower, 60 ml)

First you need to make sweet and sour sauce. For best results, take a bowl and whisk together the sugars, ketchup, soy sauce, rice vinegar, and mirin (if available). Set the sauce aside - we'll need it soon.

Wash all the vegetables, peel the onion, cut into large pieces, half rings. Bulgarian pepper can be cut into cubes. Take colored peppers - yellow, green, red. This will add beauty to the final dish. Mushrooms and pineapple also cut into small cubes.

Pork also needs careful grinding. Cut it into small cubes, roll in dry or water-diluted starch.

Put the pork in a hot frying pan with olive oil poured into it. Cook everything until cooked through for 7 minutes.

Now add the chopped vegetables to the pan to the pork, make the fire stronger, fry the contents of the pan for 3 minutes. Add the sauce. Now you can reduce the heat and sweat the pork for 5 minutes so that the ingredients, aromas and tastes mix.

Serve pork in sweet and sour sauce in deep bowls. You can take rice as a side dish.

And here is another option for cooking classic pork in sweet and sour sauce.

We will need:

2 tablespoons corn or potato starch

400 ml vegetable oil

1/2 medium red and green bell peppers

1 carrot

1 chicken egg

Tablespoon of soy sauce

350 g pork tenderloin

Green onions (three stalks)

Rice wine (sake) or dry (dry) sherry - a tablespoon

- ½ orange

To create the sauce:

rice wine or dry sherry - 1 tbsp. l.

half an orange

For sauce:

teaspoon of water

150 ml chicken broth

Tablespoon of sugar

Tablespoon of soy sauce

teaspoon cornstarch

Tablespoon of tomato paste

Apple cider vinegar (1.5 tbsp)

    Finely chop the pork. Put all the pieces on a plate, add sherry or wine, soy sauce, mix. Let it brew for 20 minutes.

    Take an orange, peel it, peel the pulp from the films. Wash peppers, cut into squares, remove seeds. Peel the carrots and cut into cubes, wash the green onions, cut into small pieces.

    Now you need to "scald" the carrots in boiling water. Throw it in a saucepan for 4 minutes. Then fold it into a sieve or colander.

    Mix eggs with starch and beat until smooth.

    Remove pork from sauce. Lightly dry first. Then put in a mixture of starch and eggs. Pork should be completely coated with starch.

    Now heat the olive oil in a wok or cauldron. Transfer the pork pieces to a bowl and fry for 5 minutes over high heat, stirring occasionally. Leave to dry on kitchen paper towels.

    Combine the chicken broth, soy sauce, apple cider vinegar, ketchup, or tomato paste in a bowl. Transfer to a saucepan, put everything on fire. Wait for the mixture to boil. Add chopped vegetables to the mixture, stir.

    Pour the starch diluted with water into the mixture, bring everything to a boil. Turn down the heat, add meat and an orange.

    Mix everything. Warm up for 3 minutes.

The pork is now ready to be served. Do it hot. All! Pork in sweet and sour sauce is ready.

The recipe is simplified, without any sake, mirin or bamboo there, but I just love it. In my opinion, it is not very different from what is served in Chinese restaurants, they also save bamboo there, I suppose. :)))

  • Garlic - 3-4 cloves
  • Canned pineapple - 200 gr.
  • Corn starch - 10 gr.
  • Seasoning "5 peppers" - to taste
  • Sesame seeds - 5 gr.
  • Vegetable oil
  • Sweet and sour sauce - 100 ml.
  • Soy sauce - 50 ml.

Cooking:

1. Cut the bell pepper and onion into half rings, chili pepper into rings, and finely chop the garlic cloves. I almost forgot, pineapple - cubes!

3. We start frying with garlic and chili peppers, so that the oil then absorbs the pungency of one and the aroma of the other. As soon as they are fried until a crust appears, we select them with a slotted spoon, send them to a sieve so that the excess oil is glass.

4. The next step is to fry the pineapple, it will give up its sugar to the butter and the rest of the products, as it were, are caramelized due to it. After frying, we send it to the strainer.

5. Then we also fry the onion and bell pepper alternately, in the same way, that is, through a sieve, we send it to the rest of the vegetables.

6. Now we fry the meat in small portions so that it has time to grab a delicious crust.

7. After all our frying, pour out the oil, put the fried vegetables and meat in a clean pan, stirring, warm them up well.

8. Now for the fun part - adding the wine! We let it evaporate, while it will leave its aroma and taste in our dish.

Rice wine is added to the traditional recipe.

9. Then pour in soy sauce, also let it evaporate. We lay, waiting for their turn, tomatoes, let them stew for a couple of minutes.

10. And finally, pour in the previously prepared sauce, simmer for another ten minutes.

1. First, marinate the meat. To do this, cut the pork into small pieces, about two by two centimeters. Next, while stirring, add the components of the marinade and let it marinate at room temperature for half an hour.

2. Cut the onion, pepper into squares, and pineapple into cubes.

3. Let's make a gas station. Mix the ingredients of the sauce and mix thoroughly until smooth.

4. Separately dilute the starch with water.

5. Fry the meat in small portions in a large amount of oil. Fry for one to two minutes until light golden brown. Take it out with a slotted spoon to drain the oil. When all the pork is ready, drain the oil.

6. Pour a little fresh oil into the pan, about three tablespoons and heated, squeeze the garlic through the press. Add the onion and as soon as the onion becomes soft put the pepper to it.

7. After three minutes, pour in the prepared dressing, mix.
