And since it is quite difficult to settle on one option, in this article we will present several step-by-step recipes for almond pie.

Simple Pie

The full name of this traditional pastry for the Spanish region of Galicia is Tarta de Santiago. There are different options for preparing this pie: from almond flour, a mixture with wheat, with the addition of butter, etc. Below is one of the simplest, but at the same time the most successful, according to many confectioners.

The recipe for the pie is as follows:

  1. Lightly beat 4 eggs with 200 g of granulated sugar using a regular whisk.
  2. Add a tablespoon of rum or brandy to the egg mixture.
  3. Separately mix almond flour (200 g), ground cinnamon (1/2 tsp) and lemon zest.
  4. Combine the egg mass with the dry mixture.
  5. Pour the batter into a mold with a diameter of 24-26 cm.
  6. Bake the pie in an oven preheated to 180° for about 30 minutes. You can check if it is ready with a skewer. Since there are no leavening agents added to the cake, you shouldn't expect it to rise much. It should remain flat and taste a little dry.

Classic Swedish almond cake

The step-by-step recipe for the following baking involves performing a certain order of actions:

  1. The base for this almond pie is shortcrust pastry. To prepare it, soft butter cut into cubes is whipped with sugar (50 g) into a creamy mass. Next, add 2 yolks and 200 g of flour mixed with a pinch of salt. The kneaded soft dough is placed in the refrigerator for half an hour.
  2. The chilled dough is rolled out into a circle 3 mm thick and laid out in a mold so that you can close the bottom and decorate the sides. The dough is pricked with a fork, after which the mold is again sent to the refrigerator for 30 minutes.
  3. For the almond filling, beat 125 g of butter with the same amount of powdered sugar. With the mixer still running, add 2 eggs one at a time.
  4. Using a silicone spatula, add 20 g of wheat flour with lemon zest to the resulting cream and add ground almonds in three additions, mixing the mixture thoroughly each time.
  5. Place the filling on the chilled shortcrust pastry and smooth it out.
  6. Cook the pie for 45 minutes at a temperature of 200°.

Almond apple cake

This pie with apple slices has a delicious nutty taste and aroma. It is easy to prepare, but is eaten instantly.

The step-by-step recipe for almond apple pie is as follows:

  1. Beat soft butter (100 g) with sugar (90 g).
  2. As soon as the mass becomes fluffy, add 3 eggs one at a time.
  3. Add wheat flour (150 g) and almond flour (50 g), baking powder (1 tsp) and almond extract (¼ tsp) to the creamy egg mass.
  4. Place the moderately thick dough into the mold.
  5. Peel and seed apples (2 pcs.), cut into thin slices and press them into the dough in a circle.

  1. Grind peeled and dried almonds (100 g) into flour.
  2. Combine the resulting almond mixture with wheat flour (100 g), sugar (60 g) and cold butter (100 g). Carefully chop the mass with a knife until it looks like bread crumbs.
  3. Add 1 egg and 30 ml of rum or other aromatic alcohol.
  4. Knead the dough and immediately distribute it into a mold with small sides. Prick with a fork, cool, then bake the crust in an oven preheated to 180° for 20 minutes.
  5. Soak 10 g of gelatin in 60 ml of water.
  6. Whip 35% fat cream (500 ml) into a fluffy mass.
  7. Pour slightly warmed gelatin into the cream in a gentle stream. Add powdered sugar (50 g) and beat again.
  8. Spread the filling over the cooled crust, let it harden in the refrigerator, then decorate the pie with strawberries and almonds.

Almond-chocolate pie with cherries

The delicate taste and amazing almond aroma of this pastry will definitely not leave anyone indifferent. At the same time, preparing the pie is very easy:

  1. Combine 240 g of flour (50% wheat and almond each), a teaspoon of baking powder, a pinch of salt and soda in a deep bowl.
  2. Beat 2 eggs with 80 g of sugar. Add sour cream (2 tbsp).
  3. Melt 100 g of high-quality dark chocolate in a water bath with butter (140 g).
  4. Combine the chocolate mixture with the egg mixture.
  5. Add flour mixture. Knead the dough.
  6. Add pitted cherries (400 g) and mix again.
  7. Place the dough in a paper-lined pan.
  8. Bake the cake for 40 minutes at 180°. Decorate cooled baked goods with chocolate icing and almond flakes.

Jamie Oliver's almond and plum pie

Almost any fruit and berries, such as raspberries, are perfect as a filling for such baked goods. Jamie Oliver suggests making plum pie. When completing the recipe, it is recommended to follow the following sequence of steps:

  1. Prepare shortbread dough from 180 g of butter, the same amount of flour, 100 g of powdered sugar, 2 yolks, vanilla, milk or water (2 tbsp.). Cool it, distribute it into the mold, and prick it with a fork. Cook the crust in the oven for 15 minutes. Cool.
  2. Grind peeled almonds (350 g) in a blender.
  3. Beat sugar (300 g) with butter (300 g) into a fluffy mass. Gradually add 3 eggs.
  4. Combine the almond mass with the creamy mixture.
  5. Spread 2/3 of the filling onto the cooled crust. Distribute the plum halves on top.
  6. Cover the fruit with the remaining cream and place the pan in the oven for 1 hour. Remove when the almond filling on top is golden and firm.

Recipe for a pie made from ready-made puff pastry

To prepare the following baking you will need only five ingredients: almonds, cream, powdered sugar, eggs and puff pastry. But this will make the second almond pie according to the recipe from Jamie Oliver no less tasty than the previous one:

  1. Preheat the oven to 220°.
  2. Grind blanched almonds (100 g) into a paste in a blender bowl. Add a tablespoon of cream, 75 g of powdered sugar and 1 egg. Beat the mixture well again.
  3. Roll out puff pastry (375 g) thinly between two sheets of parchment.
  4. Place one half of the dough on a baking sheet. Spread on top, 2 cm from the edge.
  5. Cover the filling with the second part of the dough. Pinch the edges and, if desired, decorate them figuratively with a fork or other method. Brush the top of the product with beaten egg and make small cuts.
  6. Bake the almond cake for 15 minutes.

Cooking features

Many recipes call for blanched almonds. At the same time, not everyone knows how to prepare it correctly. Meanwhile, you can blanch almonds as follows:

  1. Boil a small amount of water in a saucepan.
  2. Place the required amount of unpeeled almonds in the husk into it for exactly 1 minute.
  3. Place the nuts in a colander and rinse them under cold running water.
  4. Place the almonds on a towel and dry them. In this case, its peel should be slightly wrinkled.
  5. Using two fingers, carefully remove the skin from the nut.
  6. Place the almonds on a baking sheet and let them dry naturally.

Almonds intended for making flour can be dried in the oven for about 5 minutes.

Despite the fact that bitter almonds have a certain “bitterness,” confectioners have been using them in their products for a long time. The main role of such a product is no longer the taste quality, but the transfer of aroma, because it is the bitter version that is more intense.

Therefore, basically such almonds provide only their own note, and not a full-fledged taste. But sometimes, for a variety of taste sensations, it is added in large quantities and is the main ingredient.

Bitter almond pie

Ingredients:

  • Granulated sugar - 125 grams (for filling).
  • Granulated sugar - 125 grams (for dough).
  • Ground almonds - 400 grams.
  • Bitter almonds - 25 grams.
  • Wheat flour - 125 grams.
  • Powdered sugar - for sprinkling.
  • Lemon zest - from one lemon.
  • Chicken egg - 6 pieces (for filling).

The first step is to prepare the dough. To do this, you need a deep and wide container in order to conveniently mix the necessary products. In a wide bowl, beat one egg and mix it with the following ingredients: a tablespoon of water, cinnamon, sugar. Flour must be gradually added to the resulting mixture. Peel the bitter almonds and grind them into fine crumbs with a blender and add them to the mixture. The dough should be kneaded until it is homogeneous, then it will need to be rolled out into a circle.

Next, you need to prepare a baking dish; to do this, just grease it with butter, after which you can put in the pre-prepared dough. Now you can start filling. This will also require a deep container for more convenient work. In it you need to beat six eggs along with sugar, cinnamon, and the main ingredient of the pie - almonds. However, you shouldn’t waste it all; you can leave some small part for decoration.

The dough is placed in a baking dish and the filling is placed on top. After completing all the above processes, the cake can be baked in a preheated oven to a temperature of 160 degrees, approximately 30 minutes.

Belgian bitter almond pie

Ingredients:

  • Bitter almonds - 125 grams.
  • Butter - 125 grams.
  • Wheat flour - 75 grams.
  • Granulated sugar - 125 grams.
  • Vanilla sugar - 25 grams.
  • Chicken egg - 3 pieces.

The first step is to deal with the bitter almonds before making the dough. To do this, we need to fill the container in which it will be placed with boiling water. The almonds should be left in the water for approximately 10-15 minutes. After everything is ready, you need to take it out and put it on a baking sheet, then send it to dry. To do this, you need to prepare the oven, which should be at a temperature of 180 degrees. Bitter almonds are placed in it for approximately 15 minutes. After the nuts have cooled, they must be chopped into very small pieces using a kitchen knife.

Now you can start preparing the dough. The whites must be separated from the yolk and whipped into a thick foam. The butter is ground with sugar into a light fluffy mass. You need to beat it and gradually add almonds. Whipped whites must be gradually added to the creamy mixture and flour added little by little.

The dough is laid out in a pre-prepared baking dish, greased with vegetable oil. The cake is then placed in the oven and baked at 180 degrees for approximately 40 minutes, or until golden brown.

Almond bitters pie with chocolate

Ingredients:

  • Ground almonds (regular) - 300 grams.
  • Bitter almonds (processed) - 20 grams (used for a richer flavor).
  • Granulated sugar - 120 grams (for filling).
  • Granulated sugar - 120 grams (for dough).
  • Wheat flour - 125 grams.
  • Chicken egg - 1 piece (for dough).
  • Chicken egg - 5 pieces (for filling).
  • Powdered sugar - for sprinkling.
  • Chocolate - 50 grams.

First you need to take a convenient container for mixing products. In a container of your choice, beat one egg and mix it with cinnamon, sugar, a spoonful of water and flour. Now we add chocolate there, however, before that we need to melt it and mix everything until smooth.

The filling process begins by beating eggs along with sugar, cinnamon and regular ground almonds. Everything received is mixed in a deep container and laid out on the ready-made dough.

The cake must be baked at 180 degrees for 25 minutes. You can check the readiness of the pie using a skewer or a toothpick.

Carrot cake with almonds

Ingredients:

  • Carrots - 2 pieces.
  • Regular almonds - 300 grams.
  • Bitter almonds - 20 grams (for smell).
  • Granulated sugar - 200 grams.
  • Chicken egg - 4 pieces.
  • Wheat flour - 150 grams.
  • Lemon zest - 3 tablespoons.
  • Cinnamon - 1 pinch.
  • Cointreau - 1 tablespoon.
  • Baking powder - 10 grams.
  • Liqueur - 1 tablespoon.
  • Butter - for greasing the pan.

First you need to start preparing the dough. The egg is broken and the white is separated from the yolk. Beat the yolk with half the sugar, add flour, baking powder, lemon zest and one pinch of cinnamon to the mixture. After which liqueur and bitter almonds are poured in for a more pronounced aroma. The resulting mass must also be combined with coarsely grated carrots and regular almonds.

The resulting dough is poured into a pre-prepared baking dish, which should be greased with butter. Next, the pie can be sent to the oven, preheated to a temperature of 180 degrees for 45-50 minutes.

  • Bitter almonds (processed) - 10 grams.
  • Wheat flour - 350 grams.
  • Chicken egg (large) - 2 pieces.
  • Milk - 250 milliliters.
  • Granulated sugar - 120 grams.
  • Salt - 1 pinch.
  • Dry yeast - 1 teaspoon.
  • Butter - 200 grams.
  • Butter - 2 tablespoons (for filling).

First you need to pour 100 milliliters of milk into a container and heat it over low heat. Next, dilute the yeast in it. Add a teaspoon of sugar and one spoon of flour to the resulting liquid, mix everything thoroughly and leave until a cap forms.

Separate the eggs from the yolk and beat the yolks in a separate container with a whisk, pour the remaining milk into the resulting mass, also preheat it, add the dough and melted but slightly cooled butter.

Next, sifted flour is added along with salt and bitter processed almonds. The dough should be such that it does not stick to your hands. The prepared dough must be divided into four equal parts. After this, you can grind regular almonds and add sugar to it, and melt the remaining butter.

Each of the parts must be rolled out into a circle, greased with butter and sprinkled with almonds, except for the last one, it must be left as is. Its middle must be left untouched and the pie must be cut into eight equal parts. Each part must be rolled with a rolling pin, this way you will separate the parts from each other. A cut must be made in the middle of each segment. The lower part must be connected in such a way that it resembles a flower. The pie is placed in a pre-prepared pan and baked at 200 degrees for approximately 30-40 minutes, or until golden brown.

The recipe for this Spanish pie, which in Galicia is called tarta de almendra, and in Mallorca gato d’ametia, is probably hundreds of years old. Claudia Rodin, author of an impressive study of Spanish cuisine, is confident that the pie, like many ancient Spanish dishes, has Jewish roots.

After the invasion of the Berber tribes in the south of Spain in the 12th and 13th centuries, the Jews of Andalusia fled to the north of Spain, to Galicia, fleeing attempts by the conquerors to convert them to Islam. This is how a fairly large Jewish community arose in the Galician city of A Coruña.

As we now know, Galicia, which became a stronghold of Spanish Christians in their campaign against the Moors, turned out to be not the most reliable refuge for refugees. In the Galician city of Santiago de Compostela the relics of St. Jacob (Santiago in Spanish), which was considered a sign from heaven for organizing the reconquista. The Spaniards went into battle with the battle cry “For Santiago!”

As always, the first victims of the crusade against the Moors were the Jews. Now, from the once prosperous Jewish quarter of A Coruña, only a few attractions remain, which are carefully protected by modern Spanish authorities because they attract foreign tourists.

The recipes of the Galician Jews were destined to live a longer and happier life. Many of them have integrated into Spanish cuisine, so much so that Claudia Rodin was invited to local television to talk about how tarta comes from the Jewish Passover cake.

Ingredients:

  • 350 g almonds without peel;
  • 3 eggs, yolks and whites separately;
  • ¾ cup sugar;
  • zest of 1 lemon;
  • zest of 1 orange;
  • 2 drops almond extract;
  • powdered sugar for sprinkling.

1 cup - 240 ml

Grind almonds in a blender or meat grinder.

Using a mixer, beat the yolks with sugar until creamy. Add zest, extract and almonds. Mix well. You will get a very thick mass.

Beat the egg whites until stiff peaks form, add to the almond mixture and gently stir until smooth.

Grease a baking dish (20 cm in diameter) with butter and sprinkle with flour.

Pour in the dough, smooth it out and bake in the oven at 180C for about 30-35 minutes or until the middle of the cake springs back when pressed. Cool and sprinkle with powdered sugar.
