Round donuts from cottage cheese. Cottage cheese donuts recipe Cottage cheese donuts

These curd donuts haunted me for a long time. It just so happened that I never tried them as a child, no grandmother fed me with them (now I think: maybe ... because it's harmful?).
For the first time, I tried cottage cheese donuts at AUCHAN, and I completely fell in love. Delicious, light, cute koloboks seemed just wonderful, and even realizing that they were deep-fried, I said to myself: “I want it!”

Then there was the search for a recipe and several unsuccessful attempts, until I adjusted my own recipe in a practical way, with the correct, in my opinion, the consistency of the dough.

Yield: 20-23 donuts.

Ingredients

  • cottage cheese 400g
  • wheat flour 250g
  • chicken eggs 2
  • sugar 4 tablespoons
  • ground cinnamon 1 teaspoon
  • powdered sugar 100g (immediately with vanilla and cinnamon) for sprinkling
  • baking powder for the dough
  • vegetable oil 350 ml
  • salt 1 pinch

Cooking

Mix sugar and eggs by hand. Add cottage cheese and mix well again, achieving uniformity.

We sift the flour. We send the baking powder, salt to the same place as the flour, through the same sieve.

Knead the dough, you can use a spoon or spatula.

Pour flour directly onto the table, or, if available, onto a large board. We roll out thick long sausages, plaits from the dough. The consistency of the dough should be about the same as for lazy dumplings (seen in the photo). This will be the "material" from which we mold our koloboks.
I know that some people make donuts from a rather batter, taking it with a spoon and throwing it into the deep-fryer. A matter of taste, I didn’t like this consistency, and the shape turns out to be sloppy.

Cut the "sausage" into small pieces that can fit in a dessert spoon. (If you want even smaller, use a teahouse).

And now it's time for deep frying. If there is a deep fryer, then this will simplify the task, if not (I don’t have one, I am committed to a healthy diet and rarely cook “something like that”) - boil oil in a saucepan. While the oil is heating, we make “face control” for the cottage cheese donuts: are all the koloboks completely round koloboks? If not, round off, carefully shaping each with your hands. Then we also check the oil, it should hiss, boil and bubble when it comes into contact with the dough (we check with a piece).

We send the balls into the oil, where they will turn into real curd donuts. Only 5 minutes separate us from the result - that is how long it will take for the sides of the first donuts to turn golden.

While the first portion of donuts is deep-fried, prepare a paper towel or a few napkins where we put them to remove excess oil.

No, it's not ready yet. We also roll donuts in cinnamon powder or just sprinkle cinnamon on top.

Let's put it on a nice dish.

Now it's ready. Like? And the kids love it!!

This recipe will come in handy at times when you want something sweet for tea, but there is no time for making cakes and all sorts of frills. How to make cottage cheese donuts

  1. Mix the egg with sugar and beat with a whisk until light foam is obtained.
  2. Add homogeneous cottage cheese with a high percentage of fat content to the liquid mass, rub the mixture intensively with a fork.
  3. Combine flour with baking powder and gradually sift to the curd mass. Add a pinch of vanillin for a light aroma.
  4. Knead the dough for donuts by hand - it should turn out soft, plastic and slightly sticky. If the cottage cheese is too wet or a large egg is used, the flour rate will have to be increased. But in any case, it is not worth compressing the mass too much, otherwise the donuts can turn out to be “rough”.
  5. We form curd balls the size of a walnut or even a little less - when deep-fried, the donuts will increase noticeably. Periodically lubricate the palms with vegetable oil so that the sticky dough does not stick to the hands.
  6. Cooking deep fat: in a small thick-bottomed saucepan, heat 1.5-2 cups of refined sunflower oil. We lower the curd blanks into the hot liquid in several pieces. Cook over low heat, stirring frequently, until browned evenly.
  7. We take out hot curd donuts from the saucepan with a slotted spoon and put them on napkins so that excess oil is absorbed. Similarly, we prepare the following batches.
  8. Sprinkle freshly prepared curd donuts with powdered sugar through a fine sieve or pour over melted chocolate. In addition to dessert, you can make a simple cream by mixing sour cream with powdered sugar.

Curd donuts recipe with step by step photos are ready! Bon appetit!

Step 1: prepare the curd.

Before cooking donuts, we need to grind the cottage cheese so that there are no lumps in the dish. This can be done in two ways. First: put the component in a sieve and carefully knead with a tablespoon over a small bowl.

This is a rather tedious process, so I usually use the second method: I grind the cottage cheese in a blender bowl at high speed for 1–2 minutes. With the help of a tablespoon, we shift the prepared component into a small bowl and leave it aside for a while.

Step 2: prepare the egg and sugar mass.

Using a knife, break the egg shells, and pour the whites with yolks into the mixer bowl. Pour sugar here and beat everything thoroughly at medium speed until a homogeneous thick mass is formed. Attention: We try to mix the ingredients so that there is no granulated sugar at the bottom.

Step 3: prepare the flour.

Using a glass, pour the flour in small portions into a sieve and sift it over a medium bowl. This must be done in order for the donuts to be airy and very tender.

Step 4: prepare the dough.

Pour the egg-sugar mass into a small bowl with cottage cheese and mix everything thoroughly with a tablespoon.

After that, pour baking soda into a coffee cup or small bowl and pour a small amount of vinegar. Shake everything thoroughly with improvised equipment and so on until it stops hissing. This will allow us to avoid the taste of soda in the donuts.

Pour this mixture into a container with curd mass, add a pinch of salt and again mix everything well with a tablespoon.
Now we shift the mass into a bowl with sifted flour and knead the dough with clean hands. Attention: it should be a little sparse and slightly stick to your hands. Immediately after that, you can start cooking donuts.

Step 5: Form cottage cheese donuts.

Sprinkle the kitchen counter with a little flour and carefully spread the dough. With our hands we make a “sausage” out of it, rolling it on a flat surface. Important: if the dough still sticks to your hands, then the table can be sprinkled with flour.
Now, using a knife, cut the "sausage" into slices thick no more than 1 centimeter.

Dip them on both sides in flour and shape into a circle. Attention: you can use a rolling pin for this, but I usually knead the pieces into cakes with clean hands.

Press down the dough with a large glass, making a smooth edge of the donut. Then in the center we do the same with a bottle cap or a small glass (I usually use the second inventory) so that we get a beautiful pastry with a hole inside. Attention: Roll the remaining dough into balls. When all the donuts are formed, you can start cooking them.

Step 6: Prepare cottage cheese donuts.

Pour a large amount of vegetable oil into a dry cauldron so that the donuts can drown in it. We put the container on medium heat. When the contents of the cauldron are well warmed up (and this is approximately 3–5 minutes depending on the amount of oil), reduce the heat. Carefully put here a few pieces of cakes with holes and fry for 4–6 minutes. As soon as the donuts increase in size and are covered with a golden crust, we take them out with a slotted spoon and put them on a plate covered with kitchen paper towels. Let the paper soak up the excess grease. In the meantime, we will fry the next portion of baking.

At the end, leave the dish aside to cool to a warm state. Immediately after that, sprinkle donuts with icing sugar to taste and can be served at the dessert table.

Step 7: serve donuts from cottage cheese.

Put the finished cottage cheese donuts on a special flat dish and serve with tea or coffee. Believe me, the pastries are so delicious that in one minute nothing will remain on the plate. Help yourself!
Enjoy your meal!

How to make cottage cheese donuts

They are prepared from ordinary dough or yeast. The donut is traditionally shaped like a ball or ring. A classic product can be stuffed, sprinkled with sugar, covered with icing or chocolate.

Three basic rules will tell you how to make cottage cheese donuts so that they turn out perfect.

Donut dough

Dough for donuts with cottage cheese according to recipes of any complexity should be made from high-quality flour. It must be cleaned of debris and sifted through a fine sieve. The sifting procedure allows you to further enrich the flour with oxygen, which improves the quality of the finished product.

Donut curd

It is best to use homemade cottage cheese for donuts. This product must be fresh and sufficiently dry. Cottage cheese with excess moisture will “clog” the dough and the donut will not turn out magnificent. For a homogeneous composition of the dough, it is highly desirable to grind the cottage cheese, which will remove all the lumps.

frying

The total amount of oil should exceed the fried products by 3-4 times.
The optimum temperature for deep fat is 190 C. It should be constant throughout the cooking. The main thing is not to overheat it initially, but to warm it up well and evenly. If you fry donuts in insufficiently hot fat, they will absorb a lot of fat, which will make them tasteless.
The optimal frying time on each side is 3 minutes. Turning the donuts regularly will ensure they are evenly browned and golden.
The fryer used must be of high quality. Do not use old oil.
