According to this recipe, we do not add any egg or butter to the dough, so as not to make it heavier. It should be light and airy.

Ingredients for the dough:

  • Water – 250 ml
  • Pressed yeast - 15 g (If you have dry yeast - 5 g.)
  • Salt - 1 teaspoon
  • Flour - 350-400 gr.
  • Sunflower oil

For filling:

  • Minced pork - 400 gr.
  • Onion - 2 pcs.
  • Salt, pepper to taste
  • Water - 2 tablespoons

First, let's prepare the dough for whites:

1. Pour a glass of warm water into a bowl, add sugar and dissolve the yeast there. Then pour 200 grams of flour there. Mix everything with a spoon.

2. Cover with a napkin or film and leave the dough for 10 minutes in a warm place.

3. After 10 minutes, the dough has become fluffy and you can continue kneading the dough. Season with salt and then add the sifted flour and stir.

4. First you can knead with a spatula, and then it will be more convenient with your hands. To prevent it from sticking to your hands, add one tablespoon of oil.

If your yeast base sticks to the table or your hands, apply a little vegetable oil to your hands or table.

6. Grease the bowl and dough with oil and cover with a napkin. Place in a warm place until it doubles in size for 20 minutes.

7. In the meantime, let's start with the filling. Add finely chopped onion, salt and pepper to the minced meat. Mix well. Then lift it with your hand and seem to throw it down into the bowl. Do this several times. So you fight him off. It doesn't have to be dry. In this case, add 1-2 tablespoons of water for juiciness.

If desired, you can add herbs and garlic. It's just the way you like it.

8. Take the dough out and mix it with your hands and put it back in a warm place. Then repeat after 20 minutes and remove again for one hour.

9. Roll it out into a sausage shape and divide it into several pieces for the whites.

10. Place the balls into flat cakes. Use your fingers to press the edges so that they are thinner than the middle. Then place the filling in the middle and press down with your fingers.

12. Let them rest for a while, about 20 minutes. These will be whites without a hole.

13. In order to get it with a hole, you first need to roll it out with a rolling pin, then place the minced meat in the middle. Fold the edges in a circle. Press down slightly and set aside to rest for 20 minutes.

14. Place parchment paper on a baking sheet and place our baked goods there. You can put a little butter in the hole to make them juicier. coat with yolk for shine and place in an oven preheated to 180 degrees.

15. After 20-25 minutes, soft and juicy whites are ready. They emit such an amazing aroma that you want to eat them right away.

Cooking fluffy belyashi with minced puff pastry

Here's an unusual recipe for you. You can buy the dough itself in the store or prepare it according to my recipes, which I described. Take it out of the refrigerator in advance to defrost for at least two hours. Any minced meat is suitable for the filling. This pastry is perfect for treating guests.

Ingredients:

  • Puff pastry - 500 gr.
  • Minced meat - 500 gr.
  • Onion - 1 pc.
  • Carrots - 1 pc.
  • Egg - 2 pcs. (one for lubrication)
  • Cheese - 150 gr.
  • Salt and pepper - to taste

Cooking method:

1. Finely chop the onion and grate the carrots on a medium grater. Fry them until soft.

2. Add fried vegetables with minced meat. Season with salt and pepper. Break one egg into it. Mix everything well.

3. Cut out round bases from the dough; you can use a wide soup mug or a tin can. Cut holes in the middle of half the circles; here you can use a small glass.

4. Place the minced meat on a solid circle in the middle and cover it with a circle with a hole on top. Gently seal the edges with your fingers or a fork.

5. Cut the cheese into small pieces and place a few pieces in the middle of each white. Cover a baking sheet with parchment paper, place the baked goods there and brush with egg yolk.

6. Preheat the oven to 180 degrees and bake them for 30 minutes.

This wonderful pastry is originally prepared in the oven or in the oven from yeast or yeast-free dough stuffed with fatty beef or lamb with onions, rice or potatoes.

Recipe for Tatar-style vak-belyash in the oven step by step

  1. To prepare the dough for whites, pour sifted flour into a bowl, add salt, soda and half-melted, softened butter. Stir well or knead with your fingers until the flour is completely mixed with the butter.

  2. Add a glass of kefir to the flour mixture and stir well, then pour in the remaining kefir and knead into a soft, elastic dough. Roll it into a ball, cover with cling film and refrigerate for half an hour.

  3. Meanwhile, start preparing the filling. Pass the meat through a meat grinder.

  4. Wash the potatoes, peel and chop into small cubes (as small as possible).

  5. Also cut the peeled onion into small cubes. Then mix all the filling ingredients in a separate bowl. Add milk (broth or water), salt and pepper, mix well.

  6. Remove the dough from the refrigerator and dust a clean counter with flour. Knead the dough a little with your hands. Divide it into four equal parts and roll out “sausages”. Cut the dough “sausages” with a knife into equal small pieces. Using a rolling pin, roll out the pieces of dough into flat cakes (8-10 cm in diameter).

  7. Place the filling in the middle of each tortilla. Lift the edges of the dough and pinch them together, thus making a small pouch. Leave a small hole in the center of the bag.

  8. Grease a baking tray with oil. Lay out the finished whites.

  9. In order to prepare lezon (egg-milk mixture, which is used to grease the whites so that they turn out beautiful and rosy), in a separate bowl, beat the egg with milk and a pinch of salt.

  10. Lubricate the whites with lemonade and place in the oven preheated to 180°C for 35-40 minutes. When a pleasant aroma spreads throughout your kitchen and the whites are browned, remove them from the oven. Allow to cool slightly and you are ready to serve. Belyashi is very good with broth, soup, vegetable salads or just a cup of aromatic tea.

  • Boiled, crumbly rice (buckwheat) is mixed with onions, finely chopped meat, pepper, salt and a little butter is added.
  • Place the filling in a dough bag (as in my recipe), only make a larger hole, the size of a five-kopeck coin.
  • Roll the dough into a ball and close the hole.
  • Bake in the oven for 15 minutes, remove the baking sheet from the oven, pour broth through the hole, cover the hole with dough balls and continue baking until done.

Very tasty belyashi are also made with filling without adding potatoes or rice, but simply with meat and onions. Instead of lezon, you can grease the belyashi with just a beaten egg or egg yolk.

  6. Mix chopped onion with minced meat, salt and pepper. The composition should be juicy. If it still turns out dry, add 40 milliliters of water.
  7. Stir the mixture and put it back in a warm place. After 20 minutes, repeat this procedure.
  8. Divide the dough into several pieces. Roll out each part into a flat cake and place a spoonful of filling in the center.
  9. Fold the edges of the dough in a circle. Thus, there should be a hole in the middle of the cake, into which you need to put a piece of butter.
  10. Preheat the oven to 180°C.
  11. Cover a baking sheet with baking paper and place the baked goods on it.
  12. Place the belyashi in the oven; in 20 minutes they will be ready.

If you want to make the whites from yeast dough more ruddy, brush them with yolk 10 minutes before the end of the process.

Cooking in Tatar style

Belyashi in Tatar style is perhaps the dish that represents the entire national cuisine. They can be prepared in different ways, but in any form they turn out very tasty.

Ingredients:

  • milk - 250 ml;
  • flour - 390 g;
  • granulated sugar - 2 tsp;
  • onion - 1 pc.;
  • egg - 1 pc.;
  • minced chicken and veal - 150 g each;
  • yeast - 1 tsp;
  • salt, cumin, pepper, oil - according to preference.

Cooking steps:

  1. In a bowl, combine milk, a glass of flour, yeast, salt and sugar. Stir the mixture well until the lumps disappear completely. If good quality ingredients are used, 15 minutes will be enough for the dough to become fluffy.
  2. When the mixture is ready, add the egg, flour and 3 tbsp. l. oils
  3. Knead the dough until it becomes elastic, put it in a warm place. We repeat this action 2 times.
  4. Place both types of minced meat and finely chopped onion in a bowl, add salt and spices.
  5. Divide the dough into several balls and stretch them into a flat cake with your hands. We spread the filling and secure the edges closer to the center.
  6. Fry the belyashi over medium heat for about 6 minutes.

You need to eat the pies while they are still warm - immediately after cooking.

Made from puff pastry

You can also use puff pastry for whites. Yes, this is not a traditional recipe, but the pies turn out no less tasty.

Ingredients:

  • dough - 0.5 kg;
  • minced meat - 0.3 kg;
  • onion - 1 pc.;
  • egg - 1 pc.;
  • salt, spices - to taste.

Preparation:

  1. Finely chop the onion, add it to the minced meat, salt and pepper.
  2. Beat the egg.
  3. Roll out the dough, cut out several rectangles measuring 10 by 20 centimeters.
  4. Place the minced meat on one half of the rectangle. Grease the free edges of the product with egg and connect both parts.
  5. Fry the pies on both sides until golden brown.

To ensure that the parts of the dough do not separate, it is not necessary to use an egg - it can be completely replaced by drinking water, which needs to be used to process the edges of the pastry.

Baked belyashi with kefir in the oven

Baked whites with meat are much healthier than fried ones.

To prepare delicious whites you will need the following products:

  • minced meat - 0.4 kg;
  • kefir - 250 ml;
  • onion - 110 g;
  • eggs - 2 pcs.;
  • flour - up to 700 g;
  • margarine - 0.1 kg;
  • soda - 1 tsp;
  • salt, spices - to taste.

Recipe:

  1. Grind the onion in a blender, add salt and spices. Move the onion to the minced meat.
  2. Beat the eggs and combine them with kefir.
  3. Mix the melted margarine with soda and salt, mix the mixture well.
  4. Sift the flour and add it to the kefir. Knead the dough, form small balls from it, and use a rolling pin to turn them into flat cakes.
  5. Place the filling in the center of each donut and seal the edges.
  6. We bake the whites for 20 minutes in an oven preheated to 180°C.

Using this recipe, you can also prepare the opening of belyashi, the filling of which will be visible in the center.

Belyashi from meat and potatoes is prepared from the following ingredients:

  • minced meat - 0.3 kg;
  • onion - 2 pcs.;

  • ready-made yeast dough;
  • salt, spices.

  1. Cut the breast into pieces.
  2. Grind the onion and chicken fillet in a food processor. Salt and pepper the resulting minced meat.
  3. Divide the dough into pieces, roll out the flat cakes, place the filling in the center of each layer, and pinch the edges of the products.

  • flour (wheat) - 1 kg;
  • milk - 400 ml;
  • egg - 2 pcs.;
  • fresh yeast - 40 gr.;
  • sugar - 2 tbsp. l.;
  • vegetable oil - 240 ml;
  • salt - 2 tsp.

Cooking process

Pour the milk into a container and place it on the stove over low heat for easy heating (this can also be done in the microwave). Put yeast and sugar there. Place in a warm place for 10-15 minutes until the so-called cap appears.

Meanwhile, sift the flour and add salt to it. Beat the eggs and combine with our yeast mixture. Pour in the flour and begin to knead the dough, gradually adding vegetable oil. After that, put it in a warm place for 1.5-2 hours. That’s it, now you can safely cook belyashi in the oven.

Yeast-free dough for whites

With this dough, our meat pies turn out very tasty and incredibly juicy. To prepare it we will need:

  • flour - 1 kg;
  • kefir - 1.5 tbsp;
  • margarine - 200 gr.;
  • eggs - 3 pcs.;
  • soda - 1 tsp;
  • salt - 1 tsp.

This dough for whites in the oven should not turn out very steep, otherwise we will not achieve the desired softness and juiciness. So, take the margarine out of the refrigerator, grate it on a fine grater and mix it with a glass of flour. In a separate container, beat the eggs, add salt, soda and kefir. Mix flour and margarine with our egg mixture. Next, we begin to knead the dough, gradually adding flour. It should be quite soft, but not liquid or hard. Place in a warm place to infuse. That's it, our dough is ready!

The second version of yeast dough for whites

This recipe will make your baked goods fluffy and delicious. To prepare we will need:

  • flour - 500 gr.;
  • warm water - 0.5 cups;
  • milk - 1 glass;
  • sugar - 1 tsp;
  • dry yeast - sachet (7g);
  • butter - 100 gr.;
  • egg (yolk for lubricating whites);
  • dill.

In order to cook belyashi with meat in the oven, first melt the yeast in warm water, stir and add sugar. Leave in a warm place for 15 minutes until a “cap” forms. Heat the milk in the microwave and pour it into pre-melted butter, add salt, add a mixture of yeast and water, and stir. Now let's start kneading the dough. It should lag behind your hands. After this, take a container, grease it with vegetable oil, put our dough there and leave it in a warm place for 1.5-2 hours.

Preparing the filling

Belyashi in the oven will turn out very tasty if the filling is prepared correctly. One of the main conditions is defrosting the minced meat. This should be done naturally. It is better to defrost the minced meat in advance.

Next, peel the onion, wash it under running water and chop it finely. If you don’t want to shed tears, you can grind our “tear-tear” vegetable through a meat grinder or grind it in a blender, but don’t forget to drain the juice, otherwise the filling will turn out to be too liquid. After this, add the onion to our defrosted minced meat, salt, pepper and mix. Finely chop the dill and throw it into our minced meat. Mix thoroughly again. That's it, the filling is ready!

Forming whites

After the dough has stood and the filling has been prepared, we can begin to form our future meat pies. To do this, generously sprinkle the kitchen table with flour and take out our dough. We cut off a small part from it and form a so-called sausage. It shouldn't turn out too thin. We cut our “white sausage” into small pieces. We form balls out of them with our hands. Take a rolling pin and use it to roll out flat cakes (the thickness should be at least 1 cm).

Spoon the filling onto each of them. We pinch the edges of the flatbread in a circle, collecting the dough. Leave a hole in the center of the cake (you don’t have to leave it). Turn on the oven and preheat it to 200 degrees. Grease a baking sheet with oil and place our belyashi (the recipe in the oven is practically no different from the recipe for fried belyashi) at a short distance from each other. Separate the egg yolk from the white. Beat the first one well and grease each pie with it.

Place in the oven for 40 minutes until browned. After this, take it out and let it cool under a towel for 20 minutes. That's all, our whites are ready! In the oven they turn out very tasty, juicy and aromatic. Bon appetit!

How to cook vac-belyashi in the oven?

This is a quite nutritious and tasty dish that will be a great addition to a cup of tea. Any housewife who knows how to handle dough at least a little can make wak-belyashi in the oven. So, for preparation we will need:

  • dough (options described above);
  • minced meat (preferably mixed - pork and beef) - 1 kg;
  • onions - 2 pcs.;
  • potatoes - 2 pcs.;
  • pepper;
  • salt.

So, while our dough is infusing in a warm place, let's prepare the filling. To do this, cut the potatoes into small cubes and chop the onion. Mix the ingredients with the minced meat, salt and pepper, add a little water to make the whites juicy.
