Ingredients

To prepare pork with lingonberry sauce you will need:

700 g pork pulp;

150 ml red wine;

3 tbsp. l. lingonberry sauce*;

1 tbsp. l. olive oil;

1 large onion;

2 large apples;

5 peas of allspice;

salt, ground black pepper, bay leaf, nutmeg - to taste.

* can be replaced with fresh lingonberries, cherries or currants - to taste.

Cooking steps

Pour this lingonberry marinade over the pork and leave it in the refrigerator for a day.

About an hour before baking, remove the meat from the refrigerator. Cut the apples into pieces, remove the core. Place the pork in a baking sleeve along with onions and marinade, add chopped apples, and tie the sleeve tightly. Place in an oven preheated to 200 degrees and bake for 30 minutes. Then reduce the temperature to 180 degrees and cook for another 1 hour.

Remove the finished pork from the sleeve, carefully drain the juice along with the apples and onions, remove the allspice and bay leaf.

On Friday in the middle of the day, I had to go to the shopping center on work errands, fortunately it is a couple of stops from work. Well, while I was driving, I decided to go straight to the hyper and look for something for dinner. A good piece of pork caught my eye (which, as the sign said, had never been frozen), so I took it. There’s been a bag of lingonberries in the freezer since the summer, but lingonberry sauce for meat is our everything!
Briefly speaking:

Pork neck– 1 kg (for 4 servings)
Cowberry- cup
Orange
Gin– 30 ml
Cane sugar– 2 tablespoons
Cinnamon
Carnation
Thyme
ChSMP

My meat had already been breathing at room temperature since lunch, so it didn’t have to sit additionally. I just cut it into 4 pieces, peppered it well on all sides and let it sit there for 5-10 minutes while the grill pan was heating up. Don’t forget to boil some more potatoes for garnish while cooking.

Compared to you, I am in a less advantageous position. I'm testing the recipe. I like him. But I won’t cook it for the next holiday. So uninteresting. Sometimes expectations are not met. For you - a warning or advice on how to improve the situation, for me - a spoiled mood... Regarding this recipe: such pork clearly does not deserve the title of “The main dish of the holiday table”. But still...

I needed: 1 kg of pork pulp (ham, absolutely no fat, as I like), 175 ml of dry red wine, 1 tbsp. l. honey, 15 g (1 tsp) ginger, a pinch of ground cinnamon, ground black and white pepper, salt, 250 g lingonberries, 1/4 cup sugar.

I pour 125 ml of wine into a bowl, add honey and spices. I stir thoroughly.

I salt the dried pork a little and fill it with the resulting mixture. I let it marinate. My piece lay in the refrigerator for a day, I turned it over several times.

I preheat the oven to 220 degrees. I place the meat on the grill. I put a baking tray under it. I bake for 10 minutes. So that the meat does not stick too much to the grate and it can then be easily washed, I cover the grate with a sheet of baking paper, on which I make cuts with a knife so that the juice flows into the pan.

After 10 minutes, I lower the temperature to 160 degrees. Cover the meat with foil and bake for another 2 hours. 10 minutes before cooking, remove the foil. Then I take it out of the oven, cover it with foil and let it brew for 10 minutes.

To make the sauce, the juice released during cooking of the meat should be poured into a saucepan, add 50 g of wine, evaporate more than half the volume over medium heat and add lingonberry puree and sugar. There was no meat juice. Or rather, everything that dripped onto the baking sheet was safely burnt to it) So I simply evaporated 50 g of wine and added most of the lingonberries with sugar, crushed in a blender to a puree.

Any final words? A ham, like a ham, is not a suitable dish for a holiday table. To cook it properly, you don’t need to bother with a wire rack and baking sheet. You should just bake it in the sleeve until done. Cut it in 10 minutes to get a golden brown crust. The juice formed during the process is drained from the sleeve and used to prepare the sauce. With this kind of baking (in the sleeve) you will get a lot of sauce, even if the pork is not fatty.

But it all started with the purchase of a banal piece of loin :-)

Another correct decision when cooking meat in one large piece, in my opinion, is to bake the pork not in a tray, but on a wire rack. This way, excess fat will drain into the pan, and the meat will cook evenly.
To avoid the hassle of washing the pan after cooking pork, we recommend covering it with foil, which you simply throw away later.
Pork in lingonberry glaze can be safely served at the holiday table - it’s tasty, beautiful and unusual. And, if it happens that the guests do not finish the whole piece, then the next day the meat can be thinly sliced ​​and placed on bread instead of sausage.

Pork recipe with lingonberries

Ingredients:

  • Pork loin - 2 kg;
  • Fresh lingonberries - 1 large handful;
  • Mustard - 1 tablespoon;;
  • Soy sauce - 2 tablespoons;
  • Honey - 1 tablespoon;
