Preheat the oven to 175 degrees and line a baking sheet with several sheets of aluminum foil - this will make later cleaning easier. Trim excess fat from the ham, place it on a baking sheet, season with salt, cover tightly with foil and bake for 45 minutes.
Combine honey, mustard, sugar, butter and cardamom in a small saucepan. Cook over medium heat, stirring, until the butter is melted and the sugar is completely dissolved, about 3 minutes. Let cool to room temperature.
When the ham is ready, remove it from the oven, remove the foil and increase the temperature to 220 degrees. Using a sharp knife, make a diamond-shaped pattern over the entire surface of the meat. The size of the diamonds should be about 2.5-3 cm. Do not make cuts more than 6 mm in depth.

Cooking process:

  1. Pour 2-3 tablespoons of olive oil into a bowl, add sugar and pepper.
  2. Chop the nuts and add to the oil.
  3. Chop the ginger and squeeze the juice into the mixture using a garlic press.
  4. Slice the cheese and place in tartlets. Place the tartlets on a baking sheet covered with parchment.
  5. Pour 1 spoon of dressing from step 3 into each tartlet.
