Nevertheless, if for some reason you still decide to buy kvass, then try to find cask kvass, because you rarely find something really tasty and healthy in bottled analogues. Well, if you are “impatient” to drink kvass, but there is not a single barrel nearby, carefully read the label on the bottle, good kvass should contain nothing but malt, yeast, and rye flour. Malt, in turn, is a product obtained by germinating seeds of cereals, mainly barley and rye. The grains are soaked and germinated, chemical changes occur in them. When the seeds swell, they form carbonic acid and the diastase enzyme, which is able to dissolve and saccharify starch. In this case, maltose is obtained - a sugar that has the ability to ferment.

With further germination of seeds, these processes are intensified, a significant part of the starch goes into solution, forming glucose, sucrose, maltose and other soluble carbohydrates. Fatty oils and proteins contained in the grain also undergo changes and enter the solution in the form of carbonic acid, carbohydrates and amino acids, respectively. This explains the great nutritional value of kvass, its ability not only to quench thirst, but also to saturate the body.

Oxygen is needed to produce malt (in its presence, diastase is formed) and light is harmful, which destroys this enzyme. Therefore, malthouses are located in darkened rooms.

Malt is dissolved with water and wort is obtained, from which kvass is prepared. Wheat, rye, oat, barley flour is added in certain proportions, poured into a wooden tub and poured with boiling water. The resulting thick mass is stirred until a sweet taste appears in it. Then the mass is kept in a warm place for a day. At the end of the day, the mass is diluted with water, after 2-3 hours yeast is added there, sometimes fermented rye bread instead of yeast. Containers with kvass are placed in a cold room. Berries, honey, molasses, raisins, hops, mint, apples, pears can be added to kvass.

Two types of microorganisms are involved in the formation of kvass: alcohol fermentation fungus and lactic acid fermentation bacteria. The result of their interaction is the formation of alcohol and lactic acid. The kvass mixture is not boiled, the wort is kept at a low temperature for a long time, and therefore all conditions are created for the wort to soure, that is, for the development of lactic acid fermentation. It is under these conditions more vigorous and predominant, and even despite the addition of yeast, alcoholic fermentation in the must occurs only to a small extent. This explains the presence of a very small amount of alcohol in the drink. This feature of the kvass preparation technology must be maintained when obtaining any varieties of this drink, and there are many recipes for its preparation.

Kvass at home

At home, instead of wort, yeast, crackers and sugar are taken to make kvass.

For making bread kvass you should take: 1 rye bread, 200 g (1 glass) of sugar, 20 g of yeast, 2-3 tablespoons of raisins, 3 liters of water. Bread cut, dry in the oven. Put in a saucepan, pour boiling water (do not boil!). Be sure to let cool, strain through cheesecloth. Add sugar, yeast, mix and leave for 10 hours. Pour kvass into bottles, add raisins, close and place in the refrigerator. After 2 days, a refreshing drink is ready.

Honey kvass: 400 g of honey and the same amount of raisins, 1 lemon, 8-10 g of yeast, 1 tablespoon of rye flour are taken for 5 liters of water. In 4 liters of cooled boiled water, stir the yeast and flour, pour the raisins with this mixture. Add honey with lemon, cut into thin slices. After a day, add the remaining liter of boiled water. When the raisins and lemon rise to the surface of the water, drain the liquid and strain it. Then pour into bottles, put 2-3 raisins in each bottle. Put in a cool place. After 2-3 days, delicious and satisfying honey kvass is ready.

The effect of kvass on health

The useful properties of kvass stem from the raw materials for its production (malt, flour, yeast) and the technology of preparation.
