  1. Mix the yeast with a few tablespoons of sugar and take the same number of spoons of flour. Mix all this with warm milk and let it stand for five minutes in a warm place.
  2. Pour the sifted flour into a blender or bowl. Add the remaining sugar, vanillin, salt to it and mix. Then add milk with yeast and mix.
  3. The dough has become a homogeneous consistency, it’s time to add sunflower oil to it. Place the dough, mixed again, into a bowl and let rise in a warm place for 40-60 minutes.
  4. While the dough is rising, let's make the filling for the buns. Absolutely any nuts are suitable for our recipe: peanuts, almonds or walnuts.
  5. Grind the roasted nuts (I used peanuts) in a blender until coarse crumbs.
  6. Add softened butter and sugar to them, which we set aside separately for the filling. Mix everything until smooth.
  7. Roll out the risen dough and divide it into three parts. Shape each piece of dough into a rectangle. We do this with our hands, lightly moistening them with sunflower oil.

  9. We twist each strip twice: on one side and on the other. Let the buns rest for 15 minutes.
  10. Place the buns on a baking sheet and place in the oven, preheated to 180 degrees, to bake.
  11. The buns turned golden brown. Test their readiness by piercing the dough with a toothpick. If they are baked, remove them from the oven.

How to make nut buns

Recipe for butter buns with walnuts step by step:

Dough:

  1. Sift flour into a large bowl.
  2. Dissolve the yeast in a cup with warm milk.
  3. Add granulated sugar and vanilla to milk and yeast. Mix well with a fork or whisk.
  4. Pour the resulting liquid into the bowl with flour. Stir a little.
  5. Add salt and soft butter to the contents.
  6. Knead the dough. It should turn out elastic, soft and homogeneous, without lumps.
  7. Cover the bowl with the dough with a towel and put it in a warm place.
  8. Let the dough stand for about 2 hours. The volume of product in the bowl should increase at least 2 times. During this time, the suitable dough is lowered several times, and on the third or fourth rise, they begin to sculpt the buns.

If you have a bread machine operating in the “Dough” mode, then yeast dough can be prepared in it. To do this, place the ingredients in the bread maker tray, select the appropriate mode and leave for 1.5 hours. After the specified period, the airy dough for delicious nut buns will be ready.

Nut filling:

  1. Heat the peeled walnuts in a frying pan. Cool. After roasting, nuts acquire better taste and aroma. Roasting is carried out at a temperature of +130…+140ºС.
  2. Grind the nuts with a blender or beater.

    Mash the yeast and mix with a small amount of slightly warm water to dissolve it.

    Pour the yeast and sour milk into the bread machine bowl. Add peanut butter to it.

    Now add the dry ingredients into the bowl: both types of flour, salt and sugar.

    Select the yeast dough kneading mode. This recipe used manual mode: 6 minutes for the first knead, 20 minutes for rest, 12 minutes for the second knead and 1 hour for fermenting the dough (Binatone BM-2068 bread maker).
    While the first batch is in progress, chop the peanuts.

    During the second kneading, add peanuts to the dough.

  10. Place them on a baking sheet and cover again with film. Leave it like this for 50 minutes.
  11. After the required time has passed, brush the surface of the workpieces with beaten yolk.
  12. Then put it in the oven, preheated to 200 degrees, for 7-10 minutes.
